Hey guys! How are y'all?! Hope your Friday is treatin' you right :) It's 60 whole degrees here in Colorado and I am just eating it up! Why don't I work outside again??? Lunch today was a pile of baby carrots (hurray for orange!) And the most amazing bagel sandwich! OK, maybe not the most amazing, but it's pretty stinking good! Whole wheat bagel, mustard, provolone, Boca burger: Seriously, I kept craving that sandwich all afternoon! I could probably live without the cheese, but ... continue reading...
Family Makes It Better
HURRAY FOR FRIDAY!!! I love the weekends, and I maintain that weekends in Colorado are second to none...the only thing that would make them better is a beach nearby :) So, when I last left y'all I was in a pretty down mood. My knee is still really sore, and I'm just tired of having these little physical setbacks. I'm planning on resting it (sorta) by walking slowly today and skiing tomorrow. That's rest, right? :) Anyway, I'll be honest: my biggest fear is that all of the hard work I've ... continue reading...
Another Reason to Snuggle
I'm not a fan of starting posts on an unhappy note, but today I just feel so frustrated that I really can't think about my food just yet. I just got back from my walk a little bit ago, and my knee hurts more than it's ever hurt before. I have NEVER, not in 13 years of volleyball, weightlifting, running, and activity in general, had pain like this before. And it's getting worse every time it happens, too. I guess the thing is I've always been fairly active, and I'm just not sure how I'm going ... continue reading...
Talking Dogs
Good morning everyone! First off, I feel the need to apologize for the bad lighting in some of the following pictures. It was a great night of food, but apparently eating good food out means bad lighting for pictures. Just sayin' is all :) SOOOOO, we ended up going to Via Toscana last night with Jason, Steph, Arlene (Steph's mom), Robbie, and Stef, and it was AMAZING!!! The Med is a great place too, but this place had even better deals without the hassle of dealing with traffic in downtown ... continue reading...
Whole Foods Fun
EEEEEK!!! I only have a few minutes to post before we run out the door to go to Jason's birthday extravaganza! But first, lunch was awesome and veggie-filled today. I had some leftover maple roasted sweet potatoes: Leftover risotto: All served with a Boca burger on the side! 'Twas delicious. I was SO FULL from all that food, but a couple hours later it wore off :) I was planning on walking today per the HPJ page, but it started raining/snowing and I decided to take a trip to Marshall's ... continue reading...
Mole Mole Mole
The title's divine inspiration obviously came from here :) What a way to start a Wednesday morning, no? Last night we made guacamole and pita chips!!! I love guac, and the spiced pita chips are soooooo good. We might've burned a few, but most of them were perfectly cooked. Don't worry, we didn't eat this entire bowl :) The mix was a little different this time around for the guac. Thing is, we were set on making it, so we bought some not-quite-ripe avocados and then found it was too hard ... continue reading...
Longest Tuesday Ever
And people wonder why I take my lunch break at 3. My reason, dear friends, is that it makes the work day go by infinitely faster! I decided to take my walk at 11:30 today because there's a storm with rain and potential snow blowing in right now, and I wanted to take advantage of the gorgeous sunny weather beforehand. The walk was great! I hadn't planned on doing that, so I snacked on a tiny chocolate chip cookie while I headed out: Yes, you read that correctly. I ate a chocolate chip ... continue reading...
Easy Risotto & A Pep Talk
Happy Tuesday morning everyone! I hope y'all are having a good one so far :) Last night's dinner was a real winner in my book! I had 2/3 of a maple-roasted sweet potato and some brown rice risotto with asparagus and peas: I also added a little goat cheese on the sweet potato. It's so yummy and creamy, and the tang from the cheese mixes perfectly with the sweetness from the potato! Maple-Roasted Sweet Potatoes 1 whole sweet potato (aka yam), peeled and diced into 1/2 inch cubes 1 tsp ... continue reading...
I Heart Color
Afternoon y'all! How's it hangin'? So this morning I became ravenously hungry, which isn't something that normally happens when I have oats in some form or fashion for breakfast...weird, I know. I walked to the kitchen to grab some more water, and lo and behold! On the table sat a smorgasbord of snacky foods! I opted for a serving (10 sticks) of these whole wheat honey pretzel sticks: I'm not normally a pretzel kinda gal, but these have a really good sweetness to them that mixed really ... continue reading...
Happy Women's Day!
Let's start off with something awesome! Check out this post by Katy about International Women's Day...I was having an iffy Monday morning til I read this! Now I just want to give myself a pat on the back and move to Italy :) Yesterday was another great day for the most part! After church we hit up Baker Street Pub for their lunch special! I was pretty excited about getting a great deal on lunch. I ordered the soup and salad combo and got the Baked Potato Soup (which I had to pick the bacon ... continue reading...
Bright Sunshiney Day
Good morning! How is y'alls weekend? I know mine has been fantastic so far: yesterday felt like an amazing Spring day! It was in the upper 50s, sunny, and just overall beautiful outside :) Nate and I slept in for the first time in a while, and then he took me on a Starbucks date :) We got some coffee & split an apple fritter: And I got the Huevos Rancheros wrap again: We had a great time! That is, until a million hyperactive children ran in...actually, the worst part wasn't the kids ... continue reading...
FoodLove
All I have to say is T----> G---> I---> F! This was a good but long Friday for me, and it's SO NICE to have a break! I was pretty excited about lunch today because I knew I'd be trying a new Amy's soup! But first I had some clementines and fun with the camera: Doesn't Summer Corn & Vegetable soup sound amazing? I know I'll probably be looking to buy just about anything that has the word "summer" in it...I'm just sayin'! I ended up making a provolone grilled cheese in the ... continue reading...
