Happy Friday!!! [insert Friday Dance here] :) How are you all doing this fine, foggy, Friday morning? I had another fantastic Green(ish) Monster today: This one was super frothy again! Fun with froth: This one was: 1 cup nonfat milk, 1/3 cup oats, 1/4 cup low fat plain yogurt - soaked for 20 minutes while i got ready 1/3 cup frozen blueberries 1/3 cup frozen strawberries 1 banana 2 cups fresh spinach 6 ice cubes All whirled together for about a minute to make sure it's not chunky ... continue reading...
Foodie Love at The Med
Hey guys! My stomach is so so SO happy with me right now! Which is definitely a far cry from what it was earlier today...let me explain. It started off really well with the most incredible cappuccino brownies EVVAAAAAAAAHHHHH: Yep, that's 2/3 of the pan, eaten, after an hour. Starting at 8am. You do the math. I had 2 and that's when my stomach told me to cut.it.out with the sugar. YIKES! Lunchtime was some leftovers from last night: Cheese tortellini with veggies & marinara (about ... continue reading...
Beanballs & Cocktails
Morning everyone! First off, I just want to say that my post last night was in NO WAY meant to discourage running at all, and I hope that it didn't come off that way. I was simply explaining my choice in walking over running, and bringing it to attention that you don't have to train for a marathon, half, 5K, etc to feel like you're working out well. However, I do know that for a lot of people, competition is a huge motivating factor. All I really wanted to say was when it comes to working ... continue reading...
Why I Walk
Hey there! Hump Day's almost over, and I don't know if I could be any more excited! I think I feel an after work cocktail calling my name :) Lunch was the same as yesterday: a wheat thin, 2 cups fresh spinach wilted, a Laughing Cow cheese (spread on both sides), and 2 Morningstar black bean burgers. This is such a great combo! I know I talk about it every day, but seriously it's face-rocking amazing. You gotta try it! The rest of the day just kind of flew by, and before I knew it my lunch ... continue reading...
Thank You
Good morning everyone! Thank you so much for all of your sweet comments from last night's post. Self-doubt is a scary thing, and I don't know why I beat myself up once in a while over these things. I do firmly believe that I am where I am for a reason, and I just need to make sure that I remember that! Once again, I'm so thankful for all of you, your sweet comments, and the blogs that expose your beautiful lives as well! Last night Nate did everything he could to cheer me up, and that alone ... continue reading...
Rut-tastic
Hello there! I hope all of y'alls Tuesdays are ROCKIN'! Honestly, mine has been not-so-happy, but that's a matter for another paragraph... First up: FUN WITH ORANGES!!! I just love the color orange...it's a shame UT has to have the best shade of orange for my skin tone as the primary school color! :) Either way, stacking oranges was a fun little experiment this morning, and the bright cheery orange mimicked the sunny day outside! Lunch was a black bean burger on a sanwich thin with about ... continue reading...
The BIG Recipe Post
Hey guys! So I was thinking the other day that I don't have nearly as many recipes up as I would like, and it dawned on me: I never carried any of the recipes over from The Joyful Kitchen! So, without further ado: Turkey and Roasted Butternut Squash Chili 1 lb. lean ground turkey 1 medium to large butternut squash, peeled, seeded, and cut into 1” cubes 2 Tbsp olive oil, divided 1 small to medium onion, chopped 2 15-oz. cans of Rotel (or store brand if you’re making it on the cheap) 1 28-oz. ... continue reading...
Burgers & Fries & Everything Nice
Good morning everyone! First off, let me say that it's supposed to be in the 50's all week this week in Colorado (AND SUNNY!) and I really could not be more excited! Last night on the way to Jason & Steph's house we spotted this sign in our neighborhood: We thought that was a really cool way to raise funds, and so we stopped and not only bought a loaf, but had the chance to meet a neighbor! Beverly is such a sweet woman, and I was so thankful we got to meet her :) The bread is whole ... continue reading...
Exciting Times
Exciting times are to be had this evening…but let’s start with the afternoon’s eats first! Lunch was the last of the Kroger store brand veggie lasagna with a handful of carrots (which I ate with almond butter): And, since I’m not feeling 100% today, I indulged in 3 of these clementines: And this random cookie thing I found in IT (all I know is it was 100 calories): Basically the afternoon just kind of drug on doing busy work, but thankfully I interrupted it with my walk (and final ... continue reading...
What Happened to February?
Happy Monday y'all! How was your weekend? Mine was great, but once again it was WAY too short! I seriously can't believe it's March at this point...January and February just FLEW by! For lunch yesterday we went to Panera Bread....one of my favorites! I got the Pick 2 combo with 1/2 of a Mediterranean Sandwich: And 1/2 of the Greek salad: These are sooooooooooo good! I love the salty/spicy aspect :) Then Nate got up to grab some coffee and just happened to come back with this bad boy: I ... continue reading...
Weekend Break for a Porter Gal
Morning everyone! How are you? I'm so glad I took a little tiny break from blogging yesterday...I just needed to enjoy the day with Nate at Winter Park and then relax when we got home. So let's start over, shall we? Lunch on Friday was a sandwich thin with a slice of provolone, some steamed spinach, marinara, and a Boca mushroom patty. On the side I had some carrots, and there may or may not have been a spoon of almond butter eaten with them :) During the afternoon we ended up leaving to ... continue reading...
Mountain Madness
Morning everyone! How are ya? We are headed off to the mountains for some mountain madness skiing (that's not code or anything, I just thought it sounded cool). First we stopped at Starbucks for some brefix! I got a huevos rancheros wrap with beans, eggs and cheese and a cup of coffee! I'm not sure what this post will look like since I'm not iPhone literate, but Nate and I are pretty stoked to ski and did a little photo shoot! Hope y'all have a fabulous Saturday! What's your favorite ... continue reading...
