Health food. Not something you see on here a lot, but it’s something that I eat nonetheless. Although I’d rather just tantalize your tastebuds with butter and sugar, I think it’s probably OK to throw a healthier option on here once in a while.
Not all the time. But sometimes.
These cookies actually are the 3-Minute breakfast cookie‘s baked cousin, but with just a few minor tweaks. Plus you can carry it around with you, whereas the 3-Minute cookie should really just be eaten immediately. And who couldn’t use more portable cookies in their life? Show me that person, and I still won’t believe you.
There are certainly even more changes you could make to make these vegan as well if you’d like: use butternut squash or pumpkin instead of yogurt, substitute flax eggs for eggs, etc. The mix-in options are endless, although mine just have chocolate chips since that’s what I had on hand. But you toss some walnuts, chocolate chips, dried cherries, etc in there you may never go back to traditional cookies again.
The best part about these is that it uses ingredients that I typically have on hand in my fridge, and it doesn’t take a lot of them. If you have a large baking sheet, you only have to bake one batch. They’re easy, they’re quick, and they’re delicious…what more could you ask for?
- 1 cup oats
- 2 eggss
- 4 Tbsp sugar
- 4 Tbsp cocoa powder
- 4 Tbsp peanut butter
- 4 Tbsp plain yogurt
- 1 tsp vanilla
- 1 tsp baking powder
- 1/2 cup chocolate chips or other mix-ins
Preheat oven to 350. Combine the eggs, yogurt, vanilla, sugar, and peanut butter. Add in the oats, cocoa powder, and baking powder. Mix until just combines. Fold in the min-ins. Drop by the tablespoon onto a greased baking sheet (I used a Silpat on mine). Bake for 10 minutes. Let cool completely before eating.
So, what does it taste like? It tastes like an oatmeal cookie and a chocolate/peanut butter no-bake cookie hooked up, and this is their love child. It’s soft, chocolatey, not overly sweet, and perfect for any cookie craving. Unless of course you just want the original buttery sugary traditional cookie. But don’t worry…if that’s what you want I’ll have that coming your way soon 🙂

definitely! you could sub carob powder, or just add some flour of some kind (obviously they wouldn’t be flourless then though) and spices!
