Be sure to check out my guest post at Then Heather Said in her “More Than” series!!! HAPPY FRIDAY!!! Oh.my.gosh I am so glad it's the weekend! I know I wasn't at work yesterday, but turns out it's hard work letting a scared puppy out to painfully use the bathroom every 20 minutes. Being a fur-mom is hard! Yesterday in the midst of mentally planning dinner I made pecan pie bars for work treats: They're AMAZING, and I used this recipe, but made sure to double the pie part since I was making ... continue reading...
Back in Action
Hey guys! Be sure to check out my guest post at Then Heather Said in her "More Than" series!!! So Keira and I are back home and going outside every 20 minutes or so :( It totally kills me to see her not feeling great (she's been really pouty and sleepy all day) and I can only imagine what it's going to be like when we have sick kiddos! I'll spare the intimate details, but she's got a bladder infection. Good news is the vet thinks that's all it is, so we have 7 days worth of antibiotics that ... continue reading...
My Sick Baby
My little Keira is sick today...she has a pretty severe bladder infection, and so I will just have to blog about the eats a little later. For now, here are some pics of the baby girl! Please excuse my gross post-workout hair in this one! Me and the snuggle bug: Nate and Bunker are up at work and I'm letting Keira out every 5 seconds to pee...Wish us luck at the vet's in a few! ... continue reading...
A Half Eaten Day
Hey everyone! Thanks so much for the awesome responses to my HPJ post...I'm very excited to see where it takes me! Like I said, I don't really care if I end up fitting in my smaller pants (no sizes, remember?! :)) but I do want to continue to be my healthiest self! Today for lunch I was so excited to eat the Jazzberry Salad that I got for free at work yesterday! Spinach, red onions, strawberries, raspberries, roasted almonds, avocado, jalapenos, and berry dressing. Sounds amazing, right? ... continue reading...
Livin' in the HPJ
Good morning guys! How are y'all? I know I'm so glad it's Wednesday...means I'm just that much closer to Friday! Last night was so much fun at our community group! When we walked in we were instantly greeted by these amazing chocolate chewy cookies that Stephanie's mom made. Don't they look amazing?!?! And a HUGE bowl of grapes! I love grapes. I am actually really picky about my fruit, and these were totally up to standard: nice and juicy and crisp! When they pulled this tray of bread ... continue reading...
Good Idea or Bad Idea?
Hey guys! Hope your Tuesday's been a good one :) Thanks so much for all of your uplifting comments about what you want to see more of on the blog...you really know how to make a girl smile! I'll just keep doin' what I'm doin' :) Lunch today was another Hot Chile Grilled Cheese made in the toaster oven, and a super juicy tangelo! This was such a great lunch...I really can't get over how awesome this sandwich is! I think I said it before, but it's basically a deconstructed chile relleno, and ... continue reading...
Whatcha Want?
Good morning everyone! How are you now that it's not Monday anymore? I know I felt a lot better about life this morning... :) Last night's dinner was soooooooooooo good! I would very highly recommend this sandwich from Eating Well any time since it rocked my face! We served it (the Hot Chile Grilled Cheese, that is) with a bowl of fresh fruit salad - strawberries, blueberries, and orange. SO good and SO colorful! Here's the side view of the sandwich. It doesn't do it justice though...the ... continue reading...
Lunch of Champions!
Or so I think anyway :) I am SO happy with my lunch today; I really feel like I ate well and it filled me a LOT! What more can you ask for, right? Lunch was my yam from the other day, a honeycrisp apple, carrots and 1 Tbsp almond butter, and a naval orange. LOTS of orange in this one! Over my lunch break I walked to Whole Foods to get some stuff for dinner tonight, then walked to Target, and then back to the office. Not really a challenging workout, but it felt good to get out and walk! ... continue reading...
Is It Friday Yet?
Good morning y'all! I hope you guys had a fabulous Sunday :) I loved my weekend so much that I'm counting down the days til the next one! After breakfast yesterday we headed to church, where I was working with the kiddos (ages 3-5), playing games and reading stories. This is such a fun age group, but they seriously just wear.me.out. By the time we were done with church I was STARVING! All I really wanted to do was go grab a burger, but since I'm not eating meat until Easter, I had to plan ... continue reading...
Yams & Sweet Potatoes
Morning y'all! How's your weekend going? Mine's been great, but I have T-minus 10 minutes to finish getting dressed and blog...yikes! I'm loving our produce bowl right now, especially in the natural light: Lunch yesterday before I got my hair done was a cauliflower sandwich. Yes, you read that correctly! It's 4 inches of baguette cut in half and turned inside out for "grilling." I spread 1 tsp store-bought pesto on the crusts, then a sprinkling of mozzarella, then piled it high with ... continue reading...
Dear Spring, Where Are You?
Morning everyone! How's everyone's Saturday going so far? I've been so happy to be able to sleep in and not have an agenda, other than getting my hair done! Last night I did Level 1 and Level 3 of the 30-Day Shred, which left me super sweaty and feeling AWESOME. I'm so glad that I worked out! I felt strong and lean and just so much happier when I was done...thank you endorphins! While I finished up my workout, Nate made dinner for us. He made a couple of slices of baguette (so it was ... continue reading...
Friday Afternoon Blues
Hey there! How are y'alls Friday afternoons turning out? Some of you guys are already done for the week and off work...lucky! :) Mid-morning snack was a piece of the Coconut Pecan Cake I made for the office. I tried to make sure I got a smaller piece: It was really good...I left the pecan halves whole because I was too lazy to chop them, and I used 1/4 cup of light sour cream and 1.5 cups of nonfat milk instead of buttermilk, and I think it turned out great! Lunch was the last of the ... continue reading...
