Good morning everyone!  How are you now that it’s not Monday anymore?  I know I felt a lot better about life this morning… 🙂

Last night’s dinner was soooooooooooo good!  I would very highly recommend this sandwich from Eating Well any time since it rocked my face!

We served it (the Hot Chile Grilled Cheese, that is) with a bowl of fresh fruit salad – strawberries, blueberries, and orange.  SO good and SO colorful!

Here’s the side view of the sandwich.  It doesn’t do it justice though…the only thing I would change is a TAD more salt (because that’s how I roll).  Also, if you are married to guy like Nate or Mr. How Sweet who really just wants meat, grill a chicken breast, and butterfly it and add it.  Nate enjoyed his as well!

Right after dinner I hit up the grocery store for some much needed shopping.  I went with a full-blown list this time, and it was a quick and relatively short trip…hurray!  And I got to talk to my parents which is always a huge plus 🙂  I love them 🙂  While I was there I found this tea, which sounded fabulous:

Honestly, this was the perfect dessert…and no sugar/sweetener needed!  I had my peach tea in a Waikiki Beach Starbucks mug…I think I’m ready for summer!  I made something awesome last night…but I can’t share it yet since it’s a surprise for someone else!  Can’t wait to share tonight!  We finished up the night with some snuggling and went to sleep around 11, which is actually really good for us!  GO SLEEP!

I got up this morning a little sore, so I did 30 minutes of yoga instead of 30-Day Shred.  Hopefully I can do the shred tonight before community group!  Breakfast was a breakfast cookie…I haven’t had one in so long!

This one was really good…I don’t know what I did differently, but there was almost a hard shell on the outside and the inside was super gooey and yummy.  Whatever it was I’m glad it happened!  We got to work early today, and I had a mug of my favorite tea with a fabulous message on the paper:

I think this was a cool message to share with everyone today, no?  Wisdom is an invaluable tool, and the good news is we all have some.  I’m so thankful for the wisdom that you all share on here every day!

My question today is super important to me.  One of my biggest reasons for having this blog is to continue to facilitate community and interaction among the people who read this blog.  The question is:  what would you like to see more of on here?  Pictures, nutritional info, product reviews, recipes…you name it!  I want to make sure that I’m giving back to the community that’s given so much to me! 🙂

    I know it has been said already, but take the blog wherever YOU want it go. One of the most appealing aspects to your blog is how honest you are, in such a graceful & kind manner. You are real and I think many of us relate to so many of the things you write and feel. To me that is one of the most important things one can do to give back to the supportive community.

    I think your blog is great. Recipes are always good. What you are already doing is fantastic.

    The blog question is a good question… I have the same question in mind and honestly have no answer as I am still figuring out what it is that I want to get out of the blogs.

    I gotta agree with the ones who said “what do YOU want”!? I like tons of blogs for all different reasons, but it’s obvious when people really love blogging and put time and effort into it (oops, I’ve been slacking here lately). I read some for simple everyday meal ideas, others for crazy & interesting recipes, some for entertainment, some because I like their humor/personality and I think we would be friends in real life (is that creepy?), etc. I like reading yours 😀 keep it up!

    Hey Heather! My advice for the blog is…stick to your instinct. Don’t change it for anyone but yourself. So….my question is…what direction do YOU want to take the blog in!? 😉 You’re giving back to the community just by being honest and being yourself! Keep at it girl

    With so many food blogs today, I love to see a more personal side to any blog – pictures of life, people, yourself… only if you feel comfortable. I know there are some that keep a pretty tight seal, but I always love to see and read more about the author! =)

    I think you should post/write about what’s in your heart, girl. I remember wanting to ask a similar question on my blog at the beginning because I wanted it to grow faster. My hubby convinced me not to. He said it needs to be what I want it to be, since I love it so much. If you are true to yourself, the community will grow! 🙂

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!
And sometimes this is what it means to “work fro And sometimes this is what it means to “work from home.” 😂
Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.

It’s Friday, which means a myriad of things:

1️⃣Weekend vibes! Think soccer games, yard work, church, family time. Love it!
2️⃣The end of my meal prep. Not gonna lie, I won’t make this stew again...although the couscous was a fun addition!
3️⃣Sleeping in. HALLELUJAH.
4️⃣A chance to set up next week to be a great one!
