Dear Spring, Where Are You?

Morning everyone!  How’s everyone’s Saturday going so far?  I’ve been so happy to be able to sleep in and not have an agenda, other than getting my hair done!

Last night I did Level 1 and Level 3 of the 30-Day Shred, which left me super sweaty and feeling AWESOME.  I’m so glad that I worked out!  I felt strong and lean and just so much happier when I was done…thank you endorphins!  While I finished up my workout, Nate made dinner for us.  He made a couple of slices of baguette (so it was small) with roasted garlic and cheese:

I had 3 of them, and they were sooooooooo good!  Then he got a plain cheese pizza and we did our own toppings!  Mine was broccoli and cauliflower leftover from Thursday night, and it was amazing.  Perfectly filling and I didn’t feel bad eating it!  The shot’s not super clear, but Nate took it while I was talking on the phone and he had his plate in the other hand:

I had 1/4 cup of vanilla bean ice cream and strawberry jam for dessert:

And proceeded to watch the Olympics with my sweet husband for the rest of the night.  I know I said this before, but I am so glad that I worked out…it really made me feel a lot better about myself and allowed me to enjoy eating and spending time with my husband.  That’s enough reason for me to do it again right there!

This morning I made blueberry waffles based on this recipe.  I pureed a cup of fresh blueberries to add, used plain yogurt instead of butter and I just whisked the eggs in whole.  This made 8 large waffles, and we each had 2 with a little Earth Balance and a drizzle of maple syrup!

It was a great way to start a Saturday 🙂  Now Nate is off skiing for a few hours while I clean (don’t worry, I wanted it that way!) and get ready to go get my hair done!  I think I’ll be working out this afternoon or evening, maybe doing 30-Day Shred Levels 1 & 2.  I feel like doing them back to back is a great way to get a better workout if I’m not doing cardio.  Plus, I am strong enough at this point to do it, so why not?

In other news, it is cold and snowy yet again in Colorado.  Yes, I knew that when we moved here, but I gotta say:  I LOVE Colorado’s Spring/Summer/Fall sooo much more than winter.  There’s just so much to do and so many cool places to go during the other times of year!  I wish that it felt spring-y here as much as it sounds like in the other parts of the country!  I guess it’s good for a couple of things though:  cleaning the house thoroughly (I mean, what else are ya gonna do?) and brewing beer at home like we’ll be doing later this afternoon!

What are your favorite things to do when it’s snowy/rainy?  I used to love going to the mall and just getting OUT, but now I’ve turned into a lame old lady (all 26 years of me) and I like to stay at home and clean and watch movies 🙂

    I like going shopping, too but staying at home can be good as long as it isn’t for days on end.

    So glad the workouts felt good! I like being quiet and cozy at home. I think being an old married couple adds to that. (it also saves a ton of money)

    I love staying indoors and watching movies when it’s raining or snowing outside. It’s perfect. 🙂

    I’m so proud of you!!! It hit home when you said, “working out allowed me to enjoy eating and spending time with my husband”
    When I put off working out or am feeling like shit about myself I am such a miserable person and it really limits quality time with people I care about.
