Peanut Butter, How I Love Thee

Good morning y'all!  Happy Friday! I am SO excited it's Friday...it has been a good week at work for the most part, but I just really can't wait to sleep in and get my hair done by my friend Rebecca!  Breakfast this morning was yet another bowl of PB & J Oats: In the mix (this is based off of several of Kath's oatmeal recipes): 1/3 cup oatmeal 1/3 cup water 1/3 cup milk (whatever kind you like) 1 Tbsp chia seeds Stir this all together and cook over medium-low heat, stirring ... continue reading...

Stressed(ish)

Evening guys!  How are y'all today?  As a co-worker put it, it's Friday Eve...woohoooooo! We started this morning off with a delicious smoothie that Nate made.  This bad boy had 1 banana, 5 fresh strawberries, 1/4 cup fresh blueberries, 1/3 cup plain yogurt, 1/8 cup milk, and some splashes of juice.  It ended up being about 2 cups of smoothie and super yummy! At work I made some coffee with hot cocoa powder in it.  I wasn't really a huge fan of the mix today, but I wanted my caffeine, so I ... continue reading...

Happy Birthday Scissor!

HAPPY BIRTHDAY TO MY SISTER SALAH!!!!!! I love my sister so much...she has been such a HUGE blessing in my life in so many ways!  I remember we didn't always get along as well as we do now though.  We have a home video where she tells the world I wear a bra (I was 11 or 12 and SO embarrassed!), I've sent her to the ER for reasons that I won't discuss on this blog, and we both went (begrudgingly) to eachother's sporting events. But then something happened...either I stopped caring as much about ... continue reading...

Baby Cows

First things first, check out the amazing contest at Oh She Glows!  What's the best size for every woman? SIZE HEALTHY! Just because I think it's kind of funny/I really like baby things, I thought I'd share one of my joys on the way to work every morning!  Every morning and every afternoon we take US Highway 36 in and out of Boulder.  Every spring there are, on either side of the highway, "herds" of cattle that graze right next to the highway.  All in all, it's a very scenic view...BUT every ... continue reading...

Meatless Day #1 and a Fat Tuesday Night

Good morning guys!  I'm not going to title my posts like this every day of Lent, but this is a pretty big benchmark so I thought it was only appropriate! Last night I was feeling not good at all, and Nate had a ton of stuff to catch up on from being gone all weekend, so we ended up staying home most of the night.  However, we did go out for a big juicy burger one last time...call it our Fat Tuesday celebration!  What it comes down to is I just didn't feel like cooking, and we didn't have ... continue reading...

Tik Tok

This song is so stinking catchy, I've had it in my head since Saturday night when it came on at the Blogger Meet-Up!  I used to walk or run to music, but now I just sing songs in my head, and this is a GOOD one for that! Lunch today was a big mix of leftovers from the past couple of nights: I had baked chicken fingers, gnocchi with bacon and peas, and roasted pork loin.  YUM! I walked 4.5 mph for an hour, then snacked on a 100-calorie bag of popcorn.  I'm not a huge popcorn fan, but this is ... continue reading...

Mash, Wart, and Yeast

Morning!  Hope y'alls Tuesday is going well! Last night we rushed home for dinner and made Ellie Krieger's Chicken Fingers with Honey Mustard Dipping Sauce!  Why the Ellie Krieger kick recently?  Well, I happened to steal one of her older magazines from my sister (sorry Salah!) and there are a ton of recipes I want to make from there! These were SO good!  And the honey mustard sauce tasted just like the stuff from Chick-fil-A, only better!  We also made a quick fruit salad for a side with ... continue reading...

I Could Never Give Up…

Hey guys!  First of all, thank you SO MUCH for the encouraging comments you have all left me from this morning's post!  I am overwhelmed by y'alls kind words :)  I've said all along that this weight-loss journey isn't going to be easy, but I'm understanding more and more every day how difficult it will be from time to time.  So many years of disordered eating and thinking have really thrown me off, but I feel like I'm on the right track now.  Hopefully I get there sooner than later, because my ... continue reading...

I Love Me

Hey guys!  How's everyone today?  Sounds like everyone had a great Valentine's Day!  Other than not feeling great the first half, mine was pretty good! I lunched on some of my leftover bruschetta mixed with some whole-wheat shell pasta: And I polished off the remaining 3 of Ashley's doughballs!  They were SO good!  I really loved the peanut butter ones...yum :) While I was hard at work folding clothes, working on medical notes, and watching the Olympics, the puppers all passed out on our bed ... continue reading...

New Friends + Great Food = LOVE

Good morning everyone!  How are y'all doing?  I am not feeling so hot this morning (apparently neither was Jaspy), but last night was so much fun! First the before & afters of our guest bathroom (try not to be too impressed) There's obviously more to it than a toilet, but I didn't feel like switching lenses on my camera.  But you get the general idea! Lunch was a Lean Cuisine pizza...honestly I have no idea what kind it is, I was just hungry and at the store so I grabbed one.  It was ... continue reading...

Blogger Meet-Up Day

Good morning!  I'm so glad it's Saturday...really, really glad! I tried chia oats this morning! In the mix:  1/3 cup each of oats/water/milk, 1 Tbsp chia seeds, 1 packet Truvia, 1/3 cup pumpkin (stirred in at the end), 1 tsp vanilla, 1 Tbsp peanut butter, and 1 Tbsp strawberry jam (which kinda melted while I was taking the pictures...).  This was fantastic!  I don't know if you're supposed to be able to TASTE the chia seeds, but the texture was great.  I like peanut butter in my oats ... continue reading...

'Cause It's Friday Night

Happy Olympic Opening Ceremonies Night to all of you!  Hope y'all are enjoying it as much as I am :) This afternoon I had a 100-calorie bag of popcorn with pepper sprinkled all over it (heck yes!  my fave is fajita seasoning though...) in a new bowl from work.  I love it when I find a new plate/bowl/glass that I've never seen before up there! Lunch was a Flat Out wrap pizza with spinach, and provolone.  I also had turkey on the side (about 4 slices) and a big handful of carrots (which I later ... continue reading...
