I feel like I should apologize for my hair in this video…so I’m sorry 🙂 Who’s ready for Christmas?! Well, besides the fact that you’re EXCITED for the big day, who’s actually ready? If you were to ask me you’d likely hear crickets chirping because I cannot seem to get my life in order these days. With to-do lists a mile long and a limited time to do them in, well, yeah…it’s going to be a Christmas miracle if it all gets done in time.
In the midst of all the things I’m also seeing more and more that I need a little extra help for the holidays when it comes to budgeting and creating comforting recipes that are fast. Thanks to Kraft we CAN get a little help with that through some fantastic coupons they have going on at Target. You could save up to $20 with these guys – I know we could all use the help this time of year!
In the video you’ll see my recipe for our favorite brewery nacho recipe, cultivated from years of living in Texas and a deep admiration for the brewery nachos of Colorado. They’re fabulous, and it’s key to layer them. You can certainly add or subtract ingredients to really make them your own, which is so fun when it comes to creating meals specifically for your family!
For the margarita I’m using some Capri Sun (crazy, right? Crazy good!) mixed with triple sec and tequila for a cocktail, or just orange juice and a little lemon or lime juice for a mocktail. You could always add some club soda for extra sparkle and fizz – I’m not saying I’ve tried, but I’ve totally tried it and it’s delicious both ways!
BREWERY-STYLE NACHOS
Makes 1 9×13-inch pan of nachos
- 1 large bag of restaurant style tortilla chips
- 1 cup Kraft All Natural Triple Cheddar Shredded Cheese
- 1 cup diced cooked chicken breast
- 1/2 cup black beans, rinsed and drained
- 1/2 cup chopped red onion
- 1/2 cup sliced pickled jalapenos
- sour cream, salsa, guacamole, etc for garnish
Preheat your oven to 350. Line a 9-13 pan with foil for easy cleanup. Lay a nice even layer of chips on the bottom of the pan. Sprinkle evenly with half of the cheese, half of the chicken, half of the beans, half of the onions, and half of the jalapenos. Build one more layer of chips, then the remaining cheese, chicken, beans, onion and jalapeno. Top with a little more cheese if desired. Bake at 350 for 15-20 minutes until the cheese is melty and the chips are slightly brown around the edges. Remove from the oven and serve with desired garnishes.
SURPRISE INGREDIENT MARGARITAS
- 3 pouches of Capri Sun, whichever flavor you like or have on hand
- 1/4 cup triple sec
- 2-3 shots of tequila of choice
- juice from half a lemon or lime
- optional: orange juice and/or club soda
This is another one that’s totally customizable depending on your needs and family preferences. If you don’t or can’t drink alcohol, just leave out the triple sec and tequila, but definitely add the juice and club soda. Basically just mix the ingredients all together, depending on if you’re wanting a cocktail or a mocktail, and serve over ice. Easy and refreshing!
