Peanut Butter, How I Love Thee

Good morning y’all!  Happy Friday!

I am SO excited it’s Friday…it has been a good week at work for the most part, but I just really can’t wait to sleep in and get my hair done by my friend Rebecca!  Breakfast this morning was yet another bowl of PB & J Oats:

In the mix (this is based off of several of Kath’s oatmeal recipes):

  • 1/3 cup oatmeal
  • 1/3 cup water
  • 1/3 cup milk (whatever kind you like)
  • 1 Tbsp chia seeds

Stir this all together and cook over medium-low heat, stirring frequently, for about 5-7 minutes (or til you reach the desired consistency).  Right before I take it off the heat I stir in 1/3-1/2 cup of canned pumpkin.  Then I stir in:

  • 1 tsp vanilla extract
  • 1 packet of Truvia
  • 1 Tbsp peanut butter
  • 1-2 Tbsp strawberry jam

The peanut butter makes it so creamy and rich, but there’s no guilt because it’s good for you!  This is a great breakfast that sticks with me for a long time, which I really need since I have a desk job.  At times all I want to do is sit at my desk and eat, but if I’m still full from the oats it won’t even cross my mind!

I LOVE this magazine!  So many great recipe ideas, and I love that they break down the nutrition stats as well.  I will definitely be enjoying this over the weekend 🙂

So, I’ve noticed some things since I haven’t been eating meat for 2 whole days:  I feel REALLY full when I’m eating, but end up going to be hungry (which is not necessarily a bad thing), my clothes are fitting looser, and my digestion has already started to improve.  It’s still really hard to come up with recipes though.  I haven’t taken the time to sit down and look at potential options, or really even go to the store for that matter, so I’m hoping that the menu improves with time!

It’s apparently going to snow all weekend in Colorado, so I’ll be working out indoors and hopefully cleaning out our office (I’m so excited about that…is that weird?)  What are your fabulous weekend plans?  Anyone doing anything amazing?  On another note, does anyone have really good/cheap/quick vegetarian recipes that aren’t salads?  I’m open for all suggestions!

    I just tried the PB and JAM OATS
    I was sitting looking for recipes on my computer and ran into this one, I was hungry already so after reading this one I said im going to go make it right now….. MMMMMMM!!!!! it was delicious I loved it a quick, healthy, perfect breakfast…. I let my daughter taste it, well she is in the kitchen now making her some…….LOL!!!!!!!

    You should try cooking with lentils – they have a smoky taste that is actually a little meaty. Cook up a big pot on the weekend and then pre-portion to-go containers or freeze it!

    I like to make asian wraps with a nut butter dipping sauce. Use lettuce(butter or romaine) as the wrap and add all the stuff you like as the filling. I cook up onions, tofu(diced small), and a little tamari. I add this to whatever is in my fridge like avocado, shredded carrots, asparagus, etc.. The dipping sauce is easy to make. A little nut butter with a little tamari, sweetner(if needed), water to thin, and microwave for a few seconds to melt. If your pressed with time, you can use all vegetables instead of preparing a “meat” filling. You can also use the nut butter sauce with pasta, stir-fry, or rice dishes.

    I have a vegetarian section in my recipes. It includes a delicious eggplant parm recipe. So Good. My weekend is quiet. I have to recover from a LOOONG week.

    Oh how I will never, ever tiring of peanut butter…it’s just the best!!! 🙂 I’m making eggplant parm tonight- that’s non-salad vegetarian!

    I have lots of recipes! Most of them are from cookbooks, so I don’t want to share them here, but I’ll send you an email this weekend. We eat 80%ish veggie, so we definitely have some favorite quick recipes.

    Pasta with veggies and veggie stir fries are always good. Look up Everyday Food, it’s a Martha Stewart magazine and they have their recipes on her website. Every issue has vegetarian options! And they are always really simple to make

    Oh man. I’m going to have to try PB and jelly oats. That looks great!

    Hmm I like the pasta and asparagus recipe I had the other night (just leave out the pancetta). I also have another that’s pasta with spinach, feta, and garbanzo beans. So good!

    Veggie stir fry is the best – loads of veggies & brown rice. For some protien you could add some nuts or beans. Cashews or peanuts are really good in stir fry : )

    I have been looking for a good magazine to subscribe to since all of my old subscriptions have run out – I will have to check out Eating Well. I was really interested in the Ellie Kreiger magazine but I don’t think that she has her own mag (I think she is just featured a lot in other ones), or at least I couldn’t find it. Do you know?

    I am headed to a new place called The Wine Loft with some girlfriends tonight – girl time rocks!

      I don’t know if Ellie has her own…she definitely has her own issue sometimes though in other magazines! Eating Well is great because it’s all about food, no workouts here, so every page is a great recipe!

    I’m telling you–refried beans is where its at. I tend to just mix things together–stir fried veggies, beans, avocado topped with hummus and hot sauce. YUM!!
