Yams & Sweet Potatoes

Morning y’all!  How’s your weekend going?  Mine’s been great, but I have T-minus 10 minutes to finish getting dressed and blog…yikes!  I’m loving our produce bowl right now, especially in the natural light:

Lunch yesterday before I got my hair done was a cauliflower sandwich.  Yes, you read that correctly!

It’s 4 inches of baguette cut in half and turned inside out for “grilling.”  I spread 1 tsp store-bought pesto on the crusts, then a sprinkling of mozzarella, then piled it high with cauliflower that I roasted a couple days ago.  Onto a medium heat skillet and weighted it down with a full tea pot 🙂  Voila!  ‘Twas delicious 🙂

After getting my hair done (sorry, no pictures of it!  but it turned out wonderful!) I head to the store to get some non-meat food for dinner at Jason & Stephanie’s.  You’ll never guess what I found!  SWEET POTATOES!!!  I decided to cook them the way Kath did the other night…

Check out the differences between the two here.  A yam is much more fibrous in texture, but a sweet potato tastes like a yam, but feels like a potato.  YUM!  Below is a yam on the left and a sweet potato on the right:

While my potatoes were baking I snacked on about 8 of these crackers:

And partook in the fabulous salad Stephanie made:

Mine had spinach, lettuce, carrots, range bell peppers, ranch, and pecorino romano cheese (OMG I love cheese):

And while everyone else ranted and raved about how wonderful the chili was (I still want that recipe Steph!), I had a can of Amy’s black bean soup:

Kinda made a mess in the microwave…OOPS!  Don’t worry, I cleaned it up 🙂

And then the potatoes were ready!  I was so excited and they did NOT disappoint!  Super creamy on the inside and crisp on the outside…sooooo good!  I would highly recommend the cooking method for really any potato!

Then Steph pulled out the big guns…a small Haagen Dazs Chocolate Peanut Butter ice cream!  I pretty much ate all of mine, and only shared a couple of bites with Nate.  Later I looked at the nutrition info on the back…YIKES…but I figured I didn’t really eat a whole lot that day and desserts are allowed.  Nothing is off limits!  I just enjoyed it and figured I’ll compensate for that on Sunday.

Sleeping was nice…I love sleep 🙂  Then this morning I made PB & J Oats with this:

I keep hearing about how it’s SOOOOOOOO good, so I figured I’ll try it.  Honestly, I prefer regular peanut butter more in my oats, but the flavor of the Justin’s was good!  The oats were yummy, although I’ll admit I put a little too much jam in them.  Live and learn, right?

So, Tasha the Clean Eating Mama was so lovely and gave me the Sunshine Award on her blog yesterday!

Thanks so much Tasha (aka Sunshine), that really made my day!  I’ll totally agree with her when she says that there are so many blogs that I read and every single one of them brightens my day, but since I can only choose a select few to pass this on to, here’s my list 🙂

    hey heather! i just started following your blog. i’m not a big fan of cooking, but i am a big fan of eating healthy…and i am a big fan of you!

    anyway, in august, i became a vegan. i read the book ‘skinny bitch’ and it changed my view of meat/milk products.

    anyway, here are some of my favorite vegan meals:
    1. baked potato with fake butter and fake bacon bits OR with amy’s vegan chili poured on top.

    2. amy’s soups (which you have already discovered) my favorite is the vegetable. i usually add a bit of salt.

    3. PB and J sandwhich

    4. chips and salsa (yes, i make this a meal). my fave chips are garden of eatin

    5. vegan pancakes. you can look up tons of recipes.

    6. risotto

    7. baked zuchini with ‘fake’ cheese and basil

    8. wheat spaghetti and sauce.

    and i think the rest are frozen vegan meals, but you like to cook, so that would be pointless! haha.

    anyway, i know you are a vegetarian for lent so i thought i would throw out some ideas.

    oh, and i’ve lost 15 pounds by just eating vegan. i am only 80% vegan. i am a vegetarian on the weekends and i will occasionally eat meat.

    now that i am pregnant, eating like this has helped me only gain the minimum amount of weight. i am 8 months and have only gained 20 pounds!

    Where did you buy the justin’s peanut butter at? I haven’t seen them in packets like that.. I think it would be a good thing for me to take on my training rides.

      I found it at Whole Foods on the PB aisle…they just had the little samples toward the end of the nut butter section!

    I love those Parmesan Herb Wheat Thins- yum! I’ll grab a bag when I know i’m going to have soup- great with Tomato Bisque!

    That is for sure one of the best ways to cook potatoes, so good. I love sweet potatoes any way though haha
