Morning everyone! First off, I just want to say that my post last night was in NO WAY meant to discourage running at all, and I hope that it didn’t come off that way. I was simply explaining my choice in walking over running, and bringing it to attention that you don’t have to train for a marathon, half, 5K, etc to feel like you’re working out well. However, I do know that for a lot of people, competition is a huge motivating factor. All I really wanted to say was when it comes to working out, do what you love so that you can do it for a long time!
Onwards!!! Last night was yet another night that I didn’t really plan anything specific for dinner, so I improvised. I have been craving meatballs ever since I made them for Nate, and since I can’t eat meat for the next couple of weeks for Lent, I decided to improvise. Not without having a cocktail first!
Nothing a little rum punch can’t handle 🙂 I decided to make Italian beanballs in the food processor:
- 1 can cannellini beans, drained and rinsed well
- 1/4 of a medium onion
- 1/2 cup whole wheat breadcrumbs
- 2-3 cloves of garlic
- 1 handful of of spinach leaves
- 1/4 cup grated parmesan cheese
- 1 egg
- about 1 tsp of each of the following: dried basil, dried oregano, salt, pepper, red pepper flakes, dried fennel seeds – I tried to make them taste as close as possible to Italian sausage.
I just threw it all in the processor:
Gave it a whirl (because I’m too lazy to mash it by hand) and then dropped it in tablespoonfuls onto a baking sheet lined with a Silpat mat. Bake at 375 for 20 minutes, turning halfway through the cooking time. They came out nice and toasty brown!
For the rest of the dish I did a frozen bag of cheese tortellini and a frozen bag of asparagus stir fry (asparagus, red pepper, carrots, yellow squash) and boiled them together til the pasta was done. Top with marinara (not shown) and VOILA! Instant dinner! The beanballs were really REALLY good…crunchy on the outside and creamy on the inside. I would totally eat them plain by themselves…in fact, I might have, but I just can’t be sure… 🙂
Nate and I split the chocolate cake from Tuesday night (that huge chunk that’s missing? Yeah, that was part of Nate’s breakfast yesterday :))
I was still wanting something sweet while I made Jessica’s Cappuccino Brownies, so I fixed myself a cup of Country Peach Passion tea in a Christmas mug:
We watched 2 episodes of Law & Order: SVU because it’s JUST.THAT.GOOD and then hit the sack! I got up this morning a little later than intended and only had time to Whittle My Middle before showering and making my Green(ish) Monster:
- 1 cup nonfat milk, 1/4 cup nonfat plain yogurt, 1/4 cup oatmeal mixed together and soaked while I showered
- 2 cups fresh spinach
- 1/2 cup frozen blueberries
- 1 banana
I really REALLY enjoyed this one; Nate tried it and was NOT a fan. I don’t know why, but trust me: it’s good!

Tonight we’re meeting up with Jason & Stephanie for Stephanie’s birthday (woohoo!!!) and we’re hitting up happy hour at The Med, a REALLY AMAZING restaurant in Boulder! Last time I was there I had an amazing Blood Orange Bellini which was a.m.a.z.i.n.g, so I hope I can hit that again 🙂 Seriously though, check out the menu for happy hour! What would you pick?
Also, I gotta say: when I made up the title to this post I snickered to myself a bit. Yes, I’m 12 years old, but you gotta admit, it’s kind of funny! Do you ever find yourself doing something incredibly immature? What’s the most recent example?

I just made these and they were delicious! I didn’t have cannellini beans so I used chickpeas, and they still turned out well. With the food processor this recipe is super easy, too. It’s nice to have a tasty vegetarian replacement for meatballs.

Hehe…yup, I am definitely immature at times. Example: today we went out to lunch for a coworkers birthday. One of her gifts was a bottle of perfume in a box, and I sure giggled when one of my coworkers asked to “smell her box.”

I’d go for the calamari! Yum! I’m a calarmari addict… I could eat pounds of it. One of the few fried things that are just worth it 🙂
Hehe love your title… being immature is sometimes fun!!! I can’t remember anything specific exactly but many times at work kids (they are 5-7 year olds) will say something totally innocently, many times involving the word “balls,” (refering to the balls that we use in the gym)that could be taken in SUCH a bad way and my co-workers and I will just look at each other and giggle. Just can’t help it. Yes, we are immature and find simple ways to entertain ourselves 😀

I love that you made “bean”balls instead of meatballs. I am going to have to try that when I make meatballs for my husband. And I am immature when I don’t change the toilet paper or paper towel holder! 🙂
