Double Chocolate M&M Cookie Bars

I wasn’t actually going to share this recipe today.  Then I tasted it.

I tasted it and life turned into a technicolor M&M dream and I knew then and there I had to share this with someone.  See, M&M cookies are never something that’s been a favorite of mine mainly because I don’t love M&Ms or other milk chocolate candies like them.  I mean, if worse comes to worse and I need some chocolate I’m not going to turn it down, but if I have the chance to be snotty about it and ask for a Chocolove Strong Dark 70% cocoa bar and savor it over the long haul?  I’m going that route!

I made these as a treat for our office after buying a bag of mini M&Ms for a separate project.  See, since I’m kind of a chocolate snob (sometimes) I didn’t really want to eat them plain, so I knew cooking with them would be the next best thing.  And since we all know that I like to do the lazy cookie thing I went with bars.  Cookie bars never let me down…and quite honestly, they never make the high-altitude baking a hardship either.  I can actually make a recipe the way that I want to make a recipe and they’ll turn out perfectly…in bar form.

 

So maybe it’s not just laziness!  Maybe I am subconsciously making these on purpose to insure a better product outcome!

 

Nope.  I’m still just lazy 🙂

DOUBLE CHOCOLATE M&M COOKIE BARS

  • 2 sticks butter, at room temperature
  • 1 cup brown sugar
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1 Tbsp vanilla
  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup mini M&Ms
  • 1 cup semi-sweet chocolate chips

Preheat oven to 350.  In a bowl cream together the sugars and butter until light and fluffy.  Add the eggs and vanilla and mix until well combined.  Sift together the flour, baking powder, and salt and add to the wet ingredients.  Mix until just comined.  Finally, add the M&Ms and chocolate chips and mix until evenly distributed.  Grease a 9×13 pan and press the dough evenly across the pan.  Bake at 350 for 20-25 minutes until golden brown and just set – it’s OK if you undercook a little for a more moist cookie at the end.  Let cool before cutting into squares (not something I did…oops!) and serve!

You know, the way I see it is that just like M&Ms laziness definitely has its place in my life.  And that place is waiting right in front of my oven for a second batch of these to pop out!

    OK Heather. I made the “cookies” last night and they turned out great. Plus, the recipe made 6+ dozen cookies. Yeah! 🙂 I sent 2 dozen each to my college kids and took 18 or so to my office and my co-workers scarfed them DOWN. 🙂

    I will say that I used my silicone mat on one pan and it worked fabulously. Unfortunately, I used an air bake cookie sheet for the other pan and the cookies “stuck” some. I would definitely stick with the silicone mat only. Just an FYI.

    Thanks again for sharing. BTW – I’m planning on sharing this recipe on my blog and will definitely put your url in my post.

    Trying them tonight as I want to get their care packages in the mail tomorrow. Thanks – I’ll let you know how the “cookies” turn out since I’m sure I’ll have to sample 1 or 2 before I package them up for the college kids. 🙂

    These look great but my boys prefer cookies over bars (go figure)…. you think this would be ok in cookie form vs bars?? I’m dying to try them??

      i definitely think it would work as a cookie recipe! i usually like to refrigerate dough for 30 minutes or so before baking, but i think you’d be fine using it that way!

    I’m pretty sure that pan would not last one day in my apartment!! I love love loveee M & Ms!! what a wonderful recipe!! and i bet they’d be great for any holiday, because you could change up the colors of the m & m’s (halloween colors, christmas colors, easter colors, fall colors, valentine’s day colors, etc.)
