Whole Foods Fun

EEEEEK!!!  I only have a few minutes to post before we run out the door to go to Jason’s birthday extravaganza!  But first, lunch was awesome and veggie-filled today.  I had some leftover maple roasted sweet potatoes:

All served with a Boca burger on the side!

‘Twas delicious.  I was SO FULL from all that food, but a couple hours later it wore off 🙂  I was planning on walking today per the HPJ page, but it started raining/snowing and I decided to take a trip to Marshall’s (to look for curtains) and Whole Foods instead.  Turns out that was a good idea because this is what my windshield looked like after about 10 minutes!

Brrrrrrr…but not really.  When you live out here you kind of get used to the cold and it’s really not that bad.  I keep thinking that if this were Texas the whole state would be shut down 🙂  I miss that sometimes!  I didn’t see anything at Marshall’s, so I hit the road to Whole Foods.  TONS OF FUN! I was able to find quite a few goodies:

The bag on the right is unsweetened shredded coconut.  I’m going to try (at some point) to make coconut butter a la HEAB, so I thought this was the perfect opportunity to grab some.  I also got a bag of locally made Dylan’s Chia Granola:

And some posole for Jason for his birthday.  I know, it sounds lame, but he makes REALLY great posole, and he’s been talking about wanting to make all of his food from scratch (i.e. instead of using canned beans, using dry, etc).  So I got blue and white posole!

I brought some pumpkin yogurt from home and made a little parfait with that and some of the chia granola I just got.  Bunker wanted in on that action:

But I said heck no 🙂

SOOOOOO good, and so filling!  I figure the more filling foods I eat before going to the restaurant the less I’ll want to make unhealthy choices.  Even if the plates are small I still need to be mindful of what I’m eating!

In other news work today was super busy for me!  This is order entry season for our company and it’s just a lot of rushing around and getting stuff done.  The good news is it should be over after this weekend, and then my sister and her boyfriend are coming in town!  WOOHOO! I can’t wait to take them around the Boulder/Denver area 🙂

What sort of workout do you do when the weather’s nasty outside? I’d love any thoughts/comments on indoor workout that don’t take place in a gym (since we don’t belong to one).  I can’t wait to take pictures of the food tonight and show y’all in the morning!

    I usually like to use the stairs in my new apartment for cardio and weights as well as my pilates dvd, and my old school 80’s dance VHS that mommy gave me 🙂 lol I love looking a little ridiculous and having a good time at home

    My go-to indoor workout is a yoga dvd or podcast. It’s actually the only time that I can convince myself to cut back on the running and do one, so I kind of look forward to them!

    Whole Foods is awesome! Although I’m hoping we get a Trader Joe’s some day.

    YUM! That parfait looks delicious! Your lunch looks amazing too! I always workout inside. I do workouts with FitTv. I love doing interval training.

    Yum to that parfait. I’m really interested in that granola too! I haven’t seen it yet. YUM. Kenna is always all up in my food…get awaaaay!! 😉 I just do random things for indoor workouts. Cleaning works great, hehe. Ab workouts…yoga…weights..etc.

    The risotto looks A-mazing. I love risotto, especially when I make it at home because I can add all the things I like to it!

    I’m planning a trip to Whole Foods this weekend and I am really looking forward to it. I’m going to take my time and look at EVERYTHING!

    Ha-Ha! So true about Texas; I’m a born and raised Texas gal (just moved to CA last year). We are so not good with snow or sleet. Please, please post the Posole recipe when you guys make it. I had it for my first time in Mexico two years ago and fell in love. Would love to see how you make it.

    I rarely workout outdoors, so I do my normal gym routine. But it is hard to get moving when the weather is so yucky. I just remind myself how much better I will feel!

    Totally not lame that makes really great posole. Not lame at all.

    I’ve never seen Dylan’s granola, but it sounds like something I would love…toasted rolled oats and chia seeds all in one bag. Yes please. 🙂

    Can’t wait for you try the coconut butter…it would be great atop a yogurt parfait.
