If you’ve been following me on social media lately (namely Instagram stories) you’ve seen that on Monday I started an 80-day program that is fully focused on eating very clean and exercising well for 80 days. I’ve been waiting to start this for months now, and since the time is finally here I’ve been throwing a ton of energy into making sure that I have healthy options at the ready for every meal.
Let’s backtrack a bit, shall we? Last year was a great year and one where I feel like I finally got a healthy handle on how I want to fuel my body. Nate was a great leader in this area, and we both lost more weight than we ever have before. It was wonderful, and even though I just wanted a dang chocolate bar at times I can look back on it all with fondness for the learning curve that it was.
Enter Holiday season 2017. It wasn’t hard until the last two weeks or so of the year, but busy schedules and stress eating and abundance of all the sugary sweets began to take its toll. Within two weeks I looked as bloated and uncomfortable as I had felt in the beginning of the year, and was immediately looking for something that I could dive into to start feeling good again.
I learned some very valuable lessons last year in terms of being able to make the better choice even when it’s hard. I figured out that HEY! I can do hard things…like choose to not eat a bunch of junk food and drink a small glass of wine instead. One small choice at a time I started to feel better than I’ve ever felt before, and looked leaner than I have since I was in college. I knew I could do it all again…but how would I get there?
The good news is that there’s no shortage of good eating plans or ways to get back on track. From my 80-day regimen I’m currently doing to Whole30 to just making up your mind – it’s never too late to start making a better choice. The biggest thing you (and I) can do, though, is to plan for success.
When it comes to eating I know that I need to have options and things ready to go if I’m going to be able to commit to making steps in the right direction. Things like meal prep are huge helpers for me and really cut out all the excuses I could come up with. And at the center of that meal prep is having great options for lean protein. I love that I can stash a ton of Great Day Farms Hard Boiled Eggs (they’re in the deli section at Walmart) in my fridge and grab one for a snack or use as the perfect compliment to a salad or avocado toast. These are perfectly hard boiled eggs, already peeled, that taste amazing, and they’re ready to go when I’m ready to eat. Making a smarter choice really couldn’t be easier!

QUICK SOUTHWEST AVOCADO TOAST WITH HARD BOILED EGGS
Serves 1
Ingredients:
- 2 slices bread of choice
- 1 avocado
- 2 tablespoons corn salsa, store bought or homemade
- 2 Great Day Farms Hard Boiled Eggs
- salt, pepper, garlic powder, chili powder, paprika
Directions:
- Toast the bread as desired in a toaster oven or traditional toaster.
- While the bread is toasting mash up the avocado and sprinkle with salt, pepper, garlic powder and chili powder.
- When the bread is done toasting spread it evenly with desired amount of avocado mixture.
- Top each slice of toast with one tablespoon of corn salsa.
- Thinly slice the hard boiled eggs and layer on top of the corn salsa.
- Sprinkle with paprika.
- Enjoy.

I love it so far! I’m not following the eating plan because I have a history with disordered eating and just don’t want to go down that road. I am eating super clean, though, just on my own terms 🙂 And the workouts are great! HARD but so good!!!
