Oh dear. Houston, we have a problem.
This “recipe” came in the midst of sheer panic over not having dessert last night. And yes, not having dessert most certainly calls for a state of sheer panic. Thank goodness that state changed within a matter of minutes due to the leftover ladyfingers, some white chocolate chips and a bag of forgotten yet fresh marshmallows.
The dessert gods were with me…and now they are with you. Go in peace and create something ridiculous that will cause your sweet tooth to glow with happiness. Hey, who cares that teeth can’t really glow…yours will!
A quick note on the above photo: Nate is extremely embarrassed. I might be disowned for the remainder of the day. But when I was a poor college kid and needed a little sweet snack in the middle of the day I would turn my stove on high, stick a couple of ‘mallows on a paring knife, and toast them. It became a regular roommate occurrance and kind of brings a tear of joy to my eyes. So there you go, my husband may shun me but I will never have the same satisfaction toasting marshmallows over a flame as I do over a burner. NEVER!
- 1/2 batch of homemade ladyfingers (you can also use store-bought or use traditional graham crackers)
- 1 cup white chocolate chips, melted over a double-boiler
- marshmallows (there’s no measurement here because I think that we can all gauge our marshmallow needs with total accuracy)
Take the ladyfingers (or whatever cookie you choose) and spread a thin layer of white chocolate on both sides. It’s best to NOT do what I did and let the chocolate cool and harden a little bit – the consistency will be more s’more-like and not quite so gooey. When the chocolate hardens, toast the marshmallows over a flame or a stove burner turned on high. Toast to desired toastiness and then smoosh between two of the chocolate-covered cookies. Eat to your heart’s content!
College – the age of burned muffins, Ramen for breakfast lunch and dinner, and toasting marshmallows over a stove burner. Those were the days!

Hey, you gotta do what you gotta do when you need something sweet. And you know what? When I was a little kid? My mom used to do the same thing in a pinch.
S’mores are among my top 5 favorite things ever. These are no exception.

The clean freak inside of me is cringing on what would happen if one of those marshmallows fell off and onto my black stove burners… 🙂

I’m really not sure how you expect me to have healthy things like oatmeal, fresh fruit, yogurt, etc. for breakfast when you post stuff like this first thing in the morning. Oh my do these look delicious…
