When it comes to sandwiches I consider myself somewhat of a connoisseur. Professional. Expert.
The problem with sandwiches? I don’t actually like making my own. You see, sandwiches that meet the caliber of sandwich that I prefer are rather time intensive for – you know – a sandwich. In an ideal world I would work at home and have the ability to bake my own bread, slow-roast my own meat and veggies, and have the capability to grow heirloom lettuce and tomatoes in my backyard. I think it’s pretty obvious that’s not the case, and so I definitely need help where I can get it!
Enter Perdue Short Cuts. A couple weeks ago I was contacted by the company to give their chicken shortcuts a try, and I all but jumped at the chance! There are definitely days in my life where there’s hardly time to eat, let alone spend time cooking and preparing everything for a meal. The moment I found these in my grocery store I decided to make Chicken Cordon Bleu panini.
We’ll just say ’twas a genius idea!
CHICKEN CORDON BLEU PANANI (makes 4 sandwiches)
- 4 sandwich rolls
- 4 Laughing Cow triangles of Swiss Cheese
- 1 package Perdue Short Cuts Rotisserie or Grilled chicken
- 8 slices of ham
- 4 slices of Swiss cheese
- 4 Tbsp dijon mustard
- salt
Divide all sandwich rolls in half. Spread 1 Tbsp of dijon mustard on one side and 1 Laughing Cow cheese on the other. Sprinkle the cheese with pepper. Add 1/4 of the package of Perdue chicken on top of the cheese, then top with 2 slices of ham and 1 slice of Swiss cheese. Top with the other side of the bread. Brush with olive oil and sprinkle with salt; grill on a panini press for 3-4 minutes on each side til the middle is warmed through and the cheese is melted. Serve hot or at room temperature.

I found use these on salads and to put in sandwiches to make them more filling. This would be a great alternative since I can’t use lunch meat right now. I also follow you on twitter!

Oh I love that sandwich idea! I would probably make this sandwich or some other form of sandwich with them. Otherwise maybe a salad because I’m too lazy to grill up my own chicken a lot of times. I’m sure thats so shocking. Haha!

So those look amazing. I asked for a bread machine as an anniversary gift and LOVE it. It is kind of amazing to just dump in the ingredients and a little while later have fresh bread or make dough for dinner rolls (so good!!).
I think I would put the chicken in a salad…or in tacos…or probably just eat it with my fingers (too much?)
