The title’s divine inspiration obviously came from here 🙂  What a way to start a Wednesday morning, no?

Last night we made guacamole and pita chips!!!  I love guac, and the spiced pita chips are soooooo good.  We might’ve burned a few, but most of them were perfectly cooked.  Don’t worry, we didn’t eat this entire bowl 🙂

The mix was a little different this time around for the guac.  Thing is, we were set on making it, so we bought some not-quite-ripe avocados and then found it was too hard to smash them.  SO, into the food processor went:

  • 2 avocados
  • 1/3 cup salsa (we used 365 brand medium)
  • 1 tbsp garlic powder
  • 1 tsp black pepper
  • 2 Tbsp plain yogurt

Process til it’s at the consistency you want.  I normally make mine kinda chunky, but since the avocados weren’t ripe, I thought it would be better smooth so you didn’t bite into a hard chunk of it.  I added the yogurt because it just wasn’t creamy enough.  I didn’t really taste a difference, but Nate swore that it mellowed out the flavor of the salsa.  To each his own, but it was still really good and filled the craving for guac!

For dinner I made myself a maple roasted sweet potato and black bean (burger) quesadilla!!!

Yes, that’s a white flour tortilla.  There are some things that wheat just won’t work for, and this is one of those things!  We spread each tortilla with a little bit of Earth Balance, then layered:  tortilla, 1/8 cup shredded Monterey Jack cheese, caramelized onions, Spanish rice (we made it from a package), crumbled leftover black bean burger, maple roasted sweet potatoes, and another 1/8 cup of cheese, top with the second tortilla.  Cook over medium low heat, about 5 minutes per side, or until the tortilla is crispy and golden and the cheese is melted.  YUM!  Super filling and a great combo overall.

I finally got around to doing some laundry last night, but not before finishing Chopped on Food Network.  There was a guy on there who was just a complete tool, griping at the judges because he was the first to go.  Well, buddy, everything happens for a reason, and the reason you were cut is because your food sucked.  Such is life!  Sorry for the little rant there, but people who react like that are just.not.cool.  No one looks at people and admire them because they’re a whiney little baby.  I’m kind of scared to see what his children will turn out like with him as an example…just sayin’.

Anyway, laundry was great (I guess), but sleep was even better!  This morning I got up and did the leftover Whittle My Middle workout from the other day when my wrists were hurting.  I also did the 25 minute yoga session, which I’m going to elaborate on a little further down.  Another Green(ish) Monster:

I have lots of leftover potatoes from last night, which I’m excited to scarf down today!  Lunch should be a good one 🙂  AND I’m taking my lunch break later in the day so it’s not a replay of yesterday!  I just wanted to let y’all know, for accountability’s sake, I have been fat-talking all morning.  No particular reason why, and I don’t know what triggered it, but there it is.

I wanted to talk about my knee for a sec, and just give you guys an update.  Maybe some of you can help me figure out what’s going on!  So basically I’ve noticed that when I do yoga in the mornings, specifically leg-intensive yoga, my knee does not hurt on my walks in the afternoon.  Also, when I tie my shoes a little LOOSER the knee doesn’t hurt.  Leeann (my amazing chiropractor friend) said she thinks it might be a muscle imbalance.  I just always thought that my muscle imbalance (if I had any) would be an overly tight hip flexor complex and a really stretched-out hamstring since I’m sitting at a desk all day.  All that to say, I’m open for suggestions as to what you (or a healthcare professional friend of yours) might think the issue is!

Finally, we are going happy-hour hopping this evening for our friend Jason’s birthday!  First up is tapas at Via Toscana which I’m super excited about because I’ve never been there!  Expect some awesome pictures (hopefully)!  Then, we’re going to Baker Street Pub (again) to have beers and play pool and darts.  So fun!

    your quesadilla looks amazing. it reminds me of when i used to eat in san diego. You might have inspired me to do something very similar to this soon. 😉

    Oh I’d totally get the calamari or mussels. I love fried food. yum! If I’m being good. the olives or caprese. I love basil even more than fried food.

    I’m a fan of quesadillas for happy hour! At any time of the year… mmm… perfect to split with a crowd, too.

    And I usually pair it with beer- not as big of a fan of the ‘ritas as others.

    Your evening sounds like a blast! I’d have to say in warmer weather I like either beer or white wine with wings. Colder weather I like red wine and cheese and wings. 🙂 Fries are always good, too!

    Love the green(ish) monster! LOL, mine come out like that all the time! Just love blueberries and blackberries too much!

    My favorite HH drinks are:

    Margarita (I order it as: Clear tequila, splash triple sec, splash OJ, and juice from 4-5 lime wedges). MMMM…def my favorite!

    I also order wine/champagne quite a bit 🙂

    I’m so jealous of that guac because my tummy does not agree with avocados 🙁

    Also I love any drink with chips and salsa: beer, wine, anything, I freaking love chips what can I say. When I ate meat and drank beer (no beer now, again, stupid tummy!!) I also was a BIG fan of beer and wings and/or spinach and artichoke dip!!

    Ummm all those happy hour combos sound good, but I totally agree about the change with seasons. Can’t wait for summer!! On the Via menu, I’d go with something from the $3 list… all of that sounds delicious. Oh, or the spinach artichoke dip because that’s always good!
