All I have to say is T—-> G—> I—> F!  This was a good but long Friday for me, and it’s SO NICE to have a break!

I was pretty excited about lunch today because I knew I’d be trying a new Amy’s soup!  But first I had some clementines and fun with the camera:

Doesn’t Summer Corn & Vegetable soup sound amazing?  I know I’ll probably be looking to buy just about anything that has the word “summer” in it…I’m just sayin’!  I ended up making a provolone grilled cheese in the toaster oven to go with it:

Basically it’s 2 slices of whole wheat bread, 1 tsp of Italian salad dressing spread on each side, and 2 slices of lowfat provolone cheese.  MEEEEEEEEEEELTY!  This was a great soup & sandwich combo:

The soup was nice and sweet from the corn with a little kick from some peppers in there too!  Verrrrrrrrrrrrry tasty 🙂

Like I said, the rest of the afternoon went by pretty slowly until my lunch break walk, which I was SO excited about.  Funny thing is I was wearing shorts and a T-shirt…and it was only 40 degrees!  I didn’t expect that because the last time I’d gone outside it was WAY warmer!  I decided I’d warm up as I went, so I just stuck with it.  About 5 minutes in my knee was acting up again, so I tried stretching out my hamstrings and calves to help alleviate that.  It worked a little bit, but I have a feeling that the pain comes from trying to walk too fast and striking the ground harder than I normally do.  I still finished the walk, but my mood definitely took a hit from the knee issues flaring up again!  Tonight I’ll have to finish up the arm workout on the HPJ page; I feel like I haven’t really done any strength training in a while, and I miss it!

We finished work and ended up going to Costco for dinner.  Yes, you read that correctly.  BUT we remembered it was Friday, which typically means pizza for dinner, and Costco’s got some cheap slices!  I got a slice of cheese and Nate got a slice of pepperoni, then we split a slice of supreme (he took the meat off of my half).  No pictures – sorry – but tonight was just one of those nights where I felt like sitting down and enjoying dinner sans camera!  Besides, I’m sure you all know what a slice of greasy pizza looks like, right? 🙂

I’m going to see Dear John tonight with some of my awesome friends while Nate plays poker with the guys!

I’ve heard mixed feelings about this movie, so I’m really not sure what to think, but it’s going to be so fun to do a Friday night movie with the girls!

While I was walking today I was thinking about why I love blogging so much.  I’ve mentioned before that a LOT of it has to do with the amazing community of bloggers, which still stands true, but another part of the equation is that I just LOVE food!  Not just the fact that it tastes good, but it has the ability to evoke emotion, create memories, bring BACK memories, and our lives are so built around it that it’s nearly impossible for me to remember something that isn’t tied to food.  It sustains us, but it does even more than that: it stimulates emotions.  It is part of the core of who we are.  It’s a challenge to cook and prepare, and it’s one of the ways I share my love FOR others WITH others.  I don’t really know of any other medium to do that!

What do you love about food?  Is there any particular kind of food that brings back any specific memories? I know I have too many to name, but like I said before, I have so many memories that involve food that I don’t know if I have any that don’t!

OR, if you don’t feel like going into detail on that…

What are you doing this weekend? I need good ideas for fun weekend activities! 🙂

    I completely agree about food… it’s not JUST that it tastes good. It’s the entire experience!!! It has the ability to bring people together 😀

    Looove grilled cheese and the soup sounds great! Amy’s rocks!

    I love your spin on the grilled cheese 🙂 And I have never seen that Amy’s soup before! Is it a new flavor? You’re right–it does sound delicious.

    I love food for much the same reasons you do–the ability for it to bring people together 🙂

    So glad someone else likes Costco pizza 😀 It is CRAZY cheap!
    And I think food absolutely brings people together like nothing else. I remember my best friend had a death in the family, and literally my first thought was “I must make banana bread!”. Food, especially good food, is a gift to ourselves and to others. It’s pleasure and nourishment and what could be more important than that?!

    I have great food memories from childhood! I can remember every summer going to beach with my family and the adults would always make pina coladas and they would make the kids virgin ones. It was so fun and to this day I can’t drink or see a pina colada without thinking about my summer beach trips and how “adult” I thought I was drinking that white fruity drink!! 🙂

    Grilled cheese and soup has to be pretty close to perfection on a cold day. I have a lot of good memories of my grandma’s chocolate cake and mac and cheese. Once I got older, I had her show me how to make them and it was so much fun to cook with her 🙂

    I totally agree that eating is an EXPERIENCE. I am not the kind of person to eat on the run; I’d much rather sit down to a nice meal and truly enjoy my food. I think eating is one of life’s greatest pleasures!

    Having said that, it’s definitely been a struggle for me to get to this place. It makes me sad to think of all of the years I saw food as the enemy – either something to be avoided as much as possible, or as a means of soothing uncomfortable emotions. My issues with eating totally robbed me of the joy of food.

    So glad I’ve made peace with those issues and can experience all of the joy that food and cooking have to offer! 🙂

    I love food. I have had a rocky relationship with it but I do love it. I rarely eat any of the foods I was raised on because I didn’t have the healthiest childhood but sometimes the things I make feel reminiscent of it.

    I have always had a love hate relationship with food. For years I looked at food as the enemy, thinking that it was making me gain weight. Well it was but I was not making the right choices.
    Now I embrace food and LOVE IT! It feeds my body, fueling it for life and all of my living.

    I really want to try Amy’s Organic soup, lots of bloggers talk/picture/eat it & i’m really jealous i cant get it here in Australia.

    Food always brings back memories for me. pizza reminds me of my trip to NYC, mexican reminds me of an old friend of mine. I love how powerful food is.

    I do love grilled cheese. My favorite grilled cheese is with with Tallegio cheese (a fruity dessert cheese), Tyrolean ham and sun dried cherries. You can get it at a lodge near one of the ski resorts in UT. It is simply the best!!

    Hope you have a fun girls night. The movie looks sweet.

    Man, I have so many good food memories. I can’t eat a peanut butter sandwich without thinking of my summers spent biking across the country, or potato soup without thinking of sitting on the floor and peeling potatoes with my dad during a Packer’s game…

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
