Morning everyone!  Happy Tuesday 🙂  How about that basketball game last night?!  I was going for Butler…but don’t ‘boo’ me yet!  I don’t have anything against Duke at all – it’s a great school! – I just always go for the underdogs (or whatever team Nate is cheering against :)).  It was definitely a nail-biter up to the end though!  Dinner last night was a quickly thrown-together meal:  Veggie Fried (brown) Rice!

It’s a packet of fried rice seasoning mix, a large bag of carrots and sugarsnap peas, half of a package of frozen edamame, 3 cups of cooked brown rice, 2 eggs, and 2 teaspoons of low-sodium soy sauce.  It was super simple and delicious, and we didn’t even miss meat (especially since we had so much earlier in the day!)  I did a hardcore arm workout while the rice was cooking, and when it was done I just threw it all together!

I hit up the grocery store last night for some much-needed food for this week, and I must say that grocery shopping always ALWAYS makes me excited about what I’m going to cook!  One of the things I got was some granola to much on in my yogurt:

I really like Nature’s Path cereal, so I thought I’d get the granola and try it out in a bowl of yogurt this morning!  Here we have 1 cup of low fat plain yogurt (I need to finish it up before I dig into my Oikos!) with a sliced banana, 1/3 cup of the granola, and a tablespoon of Bonne Maman Cherry Preserves:

It tastes like cheesecake!  I know I could do cheesecake for breakfast, oh, THE REST OF MY LIFE! I love when I find a new breakfast treat because (as I’m sure you all can see) I tend to get in breakfast ruts quite frequently.  What about you?  Do you change it up every day or stick with something tried and true?

I know I haven’t mentioned it much (if at all) on here, but I have a pen pal!  Her name is Jackie, and she’s lived in France for almost a year (she’s American).  It’s quite a funny story actually…we have both dated the same guy at different times, became Facebook friends, and then she was so sweet and contacted me right before she moved to Europe!  We both determined that despite the circumstances of how we knew one another that we would very likely be really good friends if we ever lived in close proximity, so at her suggestion we started writing eachother letters the old-fashioned way – you know, through snail mail?  🙂  I’ve loved getting letters from her though and being able to write her letters as well.  Last night I got the last physical letter from her (she’s moving back to attend Emory for grad school), and this box of French chocolate!!!

It’s OK, you can drool 🙂  The letter said that Nate and I have to promise to share it together, so I won’t eat any until we can both sit down and enjoy a piece.  It’s going to be pretty hard though!  I do love chocolate, and I can tell this is going to be amazing 🙂  Having Jackie as my pen pal has been such a blessing over this past year; when times have been hard and all I want is to just go to sleep and wake up happy again – THOSE times are when I find a letter from her in the mail and her sweet, encouraging words never fail to lift me up!  If you ever have a chance to have a pen pal, I would very highly recommend it.  There’s something therapeutic in hand-writing a letter and mailing it, and everyone loves getting letters in the mail!  Even if it’s someone across the country or in the next state over, I would encourage you to try it!

Have you ever had a pen pal?  How long did you (or have you) kept in touch? When I was in elementary school I had a pen pal in Germany named Ringo, but that only lasted about 6 months or so!  Even though Jackie is moving back, we’re still planning on keeping in touch via email (just while she’s moving around) and then hopefully by handwritten letters again once she has a more permanent address 🙂

    I just found your blog from Edible Perspective 🙂
    I have had a penpal since I was 8 (I’m now 23!)…I don’t know if you ever read American Girl magazine but they had a penpal program way back when & Jen & I have been to each others weddings & now she’s having a baby & I’ll be at the shower, crazy, right?!

    I don’t think I have ever had a pen pal…I do have a good friend that I met through the internet and now we talk online and on the phone a lot.

    I am saving the fried rice recipe. It looks GOOD!

    I have to be honest and say I really wanted Duke to lose… I wanted Butler to win…

    I love getting letters in the mail… I had a pen pal when I was in high school I met a girl named Gelareh (oddly enough cause my name even in Iran is not that commen) so we wrote each other but we somehow lost connection.

    That is so sweet that you have had a pen pal for all this time! I have an email pen pal that I met when I was pregnant the first time (her son and Gigi had the same due date) and we are still friends…as are our kids. I believe people are put in our lives by chance…yet for a reason!

    I had pen pals when I was younger…I would love to have one now! I think it is so cool to actually hand write letters these days!

    I eat the same thing (Green Monster) for breakfast everyday. I love different breakfast foods but I feel like the monster give me so much energy and a blast of vitamins and minerals first thing that its hard to beat or pass up.

    I think we had pen pals when we were younger but I don’t really remember haha. I think I heard mommy telling Chad something about us doing something like that….idk?

    I had a pen pal from the age of 11 until our 20’s when we started being email buddies instead. I LOVED getting mail!

    That’s so fun that you have a penpal! I LOVE getting hand written notes in the mail. It’s definitely one of my favorite things. I actually try to send my cousins and best friends cards and notes every so often. I definitely don’t get as many back as I send, but I still love to send them!
