I think we all know where this is going :) But first, FOOD! Lunch today came in 2 parts. The first was the leftover salad toppings from Saturday's amazing rainbow salad! It was a TON of carrots, a slice of grilled red onion, 2 pieces of yellow squash, and about 1 oz of grilled chicken. Part two of lunch was the last (for a while anyway) of the Bob's Red Mill Vegi Soup: I still have 3 servings left, but they're in the freezer for when I need a quick meal! I feel really refreshed today for ... continue reading...
Balloon Festival
Good morning! Can y'all believe it's Monday again? I thought Friday just ended and I was on my way home for a margarita...? Oh, how the time flies! Yesterday was a busy but really fun day! We started off with our photo project for the weekend...the Erie Hot Air Balloon Festival! Since I'm trying to get more involved in our photography business, it was high time I sat down for a more formal editing training session with Nate. These are the result of that session! The crazy ... continue reading...
Foodie Weekend
Well hello! How's your weekend so far? Ours has been full of amazing food so far, and we have an exciting photography project tomorrow morning! Can't wait :) Let's start off with this: it's impossible to sleep in when you have 2 puppies in the house, much like I imagine having children will be like. Once it hits 6 or 6:30, they are up and at 'em, and are TOTALLY not into letting us sleep any longer! Just look at them! Awakened from their beastly slumber: I love 'em anyway :) Once we were ... continue reading...
We're THERE!
This is likely my favorite scene out of one of my favorite movies EVAH: [Side note: this is apparently the second time I've named a post "We're There" ---> my apologies, but it's Friday and I'm not renaming :)] I mean seriously, how great is Dumb and Dumber?! That was one of the first movies we watched when we moved up here, and WAY overquoted, "I thought the Rocky Mountains would be a little rockier than this!!!" all the time. We also watched Cool Runnings, but that's because we lived ... continue reading...
Conflict
Howdy! ;) Today is - you guessed it - Marriage Ref Friday, and today we have an amazingly silly conflict that my husband and I have all.the.time! But first, let me catch you up on some of my eats from Wednesday and Thursday night. Wednesday night we made honey mustard chicken and roasted veggie and couscous wraps. Bunker made sure we didn't get out of line: And the honey mustard was fabulous! Nate actually mixed that up: 2.5 Tbsp olive oil mayo (you could use any sub you like!) 1/4 cup ... continue reading...
Typical
Hey guys! So glad you liked the post from this morning about our trip to California...it was definitely a blast and we'd love to go back sometime soon! Today was your typical Thursday... I had a typical, random lunch (1/3 of a burger and roasted veggies, carrots, and flame-grilled potatoes in the cup): Read through my typical blogs... Drank the typical 3 Liters of water... Took my typical lunchtime walk... Watched Keira as she performed her typical shenanigans... And am now dreaming of ... continue reading...
If You're Going to San Francisco…
...be sure to wear some flowers in your hair! Every time we would travel to Northern California (which was a lot!) my daddy would sing that song to us. I love it! Y'all, today is already a weird day. I FORGOT MY CAMERA and don't have any photos to edit!!! I feel completely naked without it, and so I thought I'd share a little about a fun trip that Nate and I took back in the summer of 2007. We went to visit my sister when she lived in California, and ended up going into San Francisco for a ... continue reading...
I Just Haven't Met You Yet
Halfway through the week (boom!), halfway through the week (cha!) I'm so glad we're halfway through I even made a little song for ya :) Lunch today was basically the exact same thing as yesterday: some Bob's Red Mill Vegi Soup... A handful of carrots, and a slice of wheat bread with turkey, provolone, and bbq sauce: I just wanted to give a quick recap of the eats so I can move on to the meat of this post! Anyone know this song? It's definitely been stuck in my head all day, and as I ... continue reading...
About Joy Part I
Today I'm going to start off with a little something different. I've been wanting, for a while now, to write about how joy manifests itself in my life, and how food has had a huge play in that. Today is basically just going to be an introduction of the topics to come, and I'm hoping to cover one topic per week. In no way is this meant to tell you how to have joy; in fact, I believe that you're the only one who knows how to truly do that. However, I do want and need to share more of my heart ... continue reading...
April Showers Bring May Snow
***For those of you who wanted to try coconut oil, if you go to Tropical Traditions' website and use the User ID 6021698, you'll receive a free copy of their Virgin Coconut Oil book! Killer deal, right?!*** Today has been a totally ordinary day. Oh, except for the fact that there are several feet of snow in the forcast in, I don't know, the next couple of hours. No big deal! That's normal, right? I guess that's what I get for packing up almost 2 years ago (what? how long ago? when? who am ... continue reading...
Coconutty
Hello hello! How are y'all this fine Tuesday marnin'? :) Last night's dinner was so SO good! I tried Christie's Dijon Baked Cod recipe and paired it with some roasted broccoli slaw (drizzle 1 tsp olive oil, 2 tsp red wine or balsamic vinegar, salt and pepper, and roast at 400 for 10 minutes) and some plain couscous flavored with garlic, red pepper flakes, and 1/2 Tbsp of real butter: The dijon baked cod was fabulous! I didn't have any lemons or parsley, but it was amazing anyway. The recipe ... continue reading...
Remember That One Time…?
Remember that one time when the weather was perfect and it felt like there was no temperature? Oh yeah, that was today! I love days like there where the wind is still and the temperature is just right, and you don't think it's hot or cold or too windy or too sunny. Just right :) Lunch today was 1/3 cup of the leftover mac & cheese from dinner last night: And a small low & slow sweet potato with Stubb's BBQ sauce for dipping: I ate all but a couple of rounds because I was full! I ... continue reading...
