Remember That One Time…?

Remember that one time when the weather was perfect and it felt like there was no temperature?  Oh yeah, that was today!  I love days like there where the wind is still and the temperature is just right, and you don’t think it’s hot or cold or too windy or too sunny.  Just right 🙂

Lunch today was 1/3 cup of the leftover mac & cheese from dinner last night:

And a small low & slow sweet potato with Stubb’s BBQ sauce for dipping:

I ate all but a couple of rounds because I was full!  I also took a picture of this guy that I got on our trip last year through the US & British Virgin Islands:

Seriously, Duffy’s Love Shack was face-rocking awesome, and they give you all sorts of free toys!  I keep this up as a reminder of how relaxed I was on that trip and hoping that it rolls into everyday life 🙂

A few weeks ago I received some blueberry SoyJoy bars from Foodbuzz’s Tastemaker Program to try out.  I was so excited because I’d never had one and had heard mixed reviews!

Y’all, the flavor of these is SPOT ON, but I wasn’t the biggest fan of the texture, and found it a little too crumbly and dry.  The nutritional stats were OK, but I also felt like the bar was a little small to have as many calories as it had.  If you’re a fan of the texture (this is assuming you’ve tried SoyJoy bars before), you’ll love this because the blueberry flavor was perfect!

In other snacking news, there were some fabulous Lindt chocolates by the printer today!

What you see is merely a shell that’s covering the rich, tangy, creamy, dark chocolate filling inside.  HOLY OHMIGOSH DELICIOUS!

In case you’re new, or in case I haven’t drilled it in hard enough, I adore dark chocolate.  This made me close my eyes in sheer pleasure.  Guess that just goes to show that you should never underestimate the astounding flavor of a printer snack!

Tonight’s random question comes from my sweet and absolutely hilarious husband!  Finish this sentence:  Remember that one time in High School…? His answer?  “Me and the boys went camping in my buddies’ back yard. We felt like we were at the lake because his pool had turned green and tree branches were all over the place in it. We even had a campfire and peed outside.”  Hahaha, how adorable is that?  Here’s mine:  “Remember that time in high school when we were all so afraid of running outside on the track for volleyball practice that the entire volleyball team developed IBS almost instantaneously?”  That might be too much info, but hey, you guys have to know where I came from, right? 😉

    Ok I can’t believe you use Stubb’s BBQ sauce! My husband and I are obsessed with the stuff! I seriously put it on everything lol. So freakin’ good!

    Remember that one time in high school when we had a huge food fight out in the culdesac? And then weren’t able to get it all cleaned up. Oops! LOL

    Blech!! SoyJoy bars are yucky. Dark Chocolate…oh yeah, I’m all over that!! Remember that one time in High School when my parents when out and I had some friends over and we drank the whole bottle of Amaretto and refilled it with watered down iced tea and apple juice? Good times!! 😉

    SoyJoy bars are too expensive for what you get—dried oatmeal tasting fruitiness. I prefer a lara bar any day. Just reading dark chocolate is making me crave it!

    here is one tha tinvolves you….Remember that time in High School when you took Kelsey and I to Midnight with you and we were on our way to the brisket place dt and Kelsey and I did the “special smile” (aka the one you do just in case there is something in your teeth) and you looked back and n 5 seconds all three of us were pretty much just cracking up on the ground.

    Remember that time in High School when Kelsey and I decided to go to Wal Mart and buy a massive cake, animal crackers, funfetti frosting, cookies, oreos, sodas, candy…just everything sweet in sight (and yes, this was all just for the 2 of us that night)…and then went back to her house and watched an entire season of Golden Girls. 🙂

    HA, I grew up in STT and worked at Duffy’s all through college so I was super excited to see a pic of an “attitude adjuster!” So glad you enjoyed your time in the islands!

    I guess my island upbringing also informs my answer to your question – Remember that one time in HS when we cut photography class and drove to the bar down the street to take Jager shots! Gooooood times 😀

    Remember that time in high school when the boy I had the BIGGEST crush on walked by and my friend yelled, “Hey, Lindsay has something to tell you…” and I was left standing there. I was a freshman and it was traumatic. Haha.

    I do not like the texture of those SoyJoy bars at all…like you said, too dry and crumbly. Bleck.

    Remember that one time in high school when we were running sprints at field hockey practice, and our crazy coach unleashed her deranged dog on us to make us run faster? Yeah, not so fun!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
