This is likely my favorite scene out of one of my favorite movies EVAH:

[Side note:  this is apparently the second time I’ve named a post “We’re There” —> my apologies, but it’s Friday and I’m not renaming :)]

I mean seriously, how great is Dumb and Dumber?!  That was one of the first movies we watched when we moved up here, and WAY overquoted, “I thought the Rocky Mountains would be a little rockier than this!!!” all the time.  We also watched Cool Runnings, but that’s because we lived on Bannock Street.  You figure that one out 🙂

Lunch today was slice of leftover spaghetti pie atop a bed of splattered marinara:

The afternoon druuuuuuuuuuuuuuuuuuuuug by, and come lunch break time I was ready to GET OUT! and go read my Pioneer Woman Cooks book!

I love her. I want to be her.  Or be her best friend.  Or whatever, you know what I mean.  I thoroughly plan on making some of the recipes in the next couple of days!  The thing I really love is that she represents a woman who isn’t completely ruined by society’s expectations and the fact that she lives on a working cattle ranch almost makes her seem surreal in some way.  Anyway, PW is amazing, and I’m still so thankful Nate bought that book for me!

MARRIAGE REF FRIDAY WINNER

Ok, ok, I give up.  TWIZZLERS win and it appears I’ll be buying Nate some of his favorite candy.  Thanks a lot guys, can’t you read my mind and know what to pick so I can beat my husband at something?  😉  The final stats (including people on Twitter and in my office) are:

I still love doing Marriage Ref Fridays…it’s seriously a huge game for Nate and I!  We get excited for every vote in our favor 🙂

Today I visited LeeAnn for my knee, and I think we might have found a slight setback.  I’ve started to feel a little pain again, but it’s almost like the pain has moved.  She thinks it could be a torn meniscus, so I’m supposed to take it easy and not do any hard weight training for my legs until I see her again.  It’s just hard because on my walks I see so many people running and I just wish that I could do the same thing.  I see old pictures of myself with my old runner’s body, and I just wish I looked as strong as I did there.  I think muscles are beautiful (not super ripped, but STRONG), and I just don’t have the same shape as I used to.  I just keep telling myself, “soon enough…” and hoping that’s true!


On a completely unrelated note, the question of the day is EITHER what is your favorite thing about where you live?  OR, what are you doing this weekend? I love Colorado summers and obviously the mountains!  That makes it so hard for me to see snow here in May 🙁  Tomorrow we’re just RESTING as much as possible and then Sunday we have the usual church/lunch/nap/dinner routine 🙂  Can’t wait!

    HAHA! My friend and I quoted that line way too many times on our road trip from NY to San Diego. Even when it had no relevance at all except for the fact that it’s hilarious and we had nothing better to do while driving 10 hours a day. That John Denver was full of sh*t! 😉

    That is the only movie that my husband and I can watch again and again when they play it on tv. Which around here, they play it a lot. I’ve already seen it like 10 times too! I’m sorry to hear about your knee problems. I understand it must be hard to not be able to do the things that you used to do all the time. God teaches us patiences in so many ways, but in the long run, we benefit from it. I hope your knee will completely heal soon.

    my favorite thing about where i live (mozambique) is the beach! i live right on the beach and going for a run at sunrise is just wonderful.

    That spaghetti pie looks so good…splatters and all! We are hopefully going to get out of the house this weekend! My husband works from home and he is so overloaded. We both need a little fresh air! Have a great weekend!

    Fun questions! My favorite thing about living in Portland is being about 1-2 hours away from the beach, the mountains, the desert, farmland…wine tasting, hiking…we got it all!

    Tomorrow is my 55 mile bike ride in Reach the Beach!

    Hey doll!! This “pie” looks tasty!

    I am not sure what marriage ref is…..sigh….i am out of the loop with no cable! LOL! We decided that we need to stay focused and if I have cable I am on it all day loooonnggg….not good my friend!

    I miss it.

    I live in Vancouver! Full of mountains just like you! Today was nice a warm….ahhh I love it!

    I miss my runner’s body too, and the muscles that go along with it. I can’t WAIT to do weight training again!!!
    My favorite part about where I live is the beautiful weather. Yeah, it can be VERY humid and hot in the summer but spring and fall in the carolinas is breathtaking!

Working on my #avoquados y’all! This protein smo Working on my #avoquados y’all! This protein smoothie has 40 grams of protein, lots of green goodness and tastes like a pineapple-vanilla dream!

- 1 cup water
- 1 cup frozen pineapple
- 1 cup frozen kale or spinach
- 1 scoop vanilla protein
- 1 serving collagen peptides (I use 2 scoops of @bulletproof brand; some brands just have one big scoop)
- 1 scoop greens powder (I used @amazinggrass)

Blend and enjoy!
🥗 FAST FOOD! Real real: I hate when people are 🥗 FAST FOOD!

Real real: I hate when people are all, “you can cook food in the same time it takes to grab takeout.” That is not always true, and sometimes it’s just about not wanting to try. Effort is hard, amen?!

Today I’m thankful to have had the energy and want-to to cook something a little healthier and save a little money. That’s not always the case, but today it was and I’ll count it as a win!

In the bowl: 3/4 cup black beans, 1/4 cup corn, 2 big handfuls of spinach, and two eggs. Seasoned it all with salt, pepper, garlic and smoked paprika!

Any wins y’all feel like sharing today? Let’s hear it and celebrate!
Chocolate Peanut Butter Protein Oats! (AKA the thi Chocolate Peanut Butter Protein Oats! (AKA the thing I’ve been eating on repeat all week):

- 1/2 cup old fashioned rolled oats
- 1/2 cup water
- 1/2 cup milk of choice
- 2 tablespoons brewed coffee (optional)*
- 2 tablespoons powdered peanut butter
- 1 tablespoon cocoa powder
- 1 tablespoon ground flax seeds
- 1 serving unflavored collagen peptides
- Sweetener of choice
- 1 tablespoon chocolate chips

Heat the oats, water, milk and coffee in a small saucepan over medium heat. Cook until thickened to your liking (although keep in kind the flax seeds and cooling will thicken it even further). Remove from the heat and stir in the remaining ingredients except the chocolate chips; I like to use a whisk to make sure the collagen doesn’t clump. Pour in a bowl, sprinkle with the chocolate chips and enjoy!

*I love to add a little coffee to mine to help enhance the chocolate flavor, but you do you!
And sometimes this is what it means to “work fro And sometimes this is what it means to “work from home.” 😂
Mentioned this yesterday in the ol’ stories, but Mentioned this yesterday in the ol’ stories, but thought it was worth sharing here too. When it comes to how I plan out meals, I look for 3 things:

🥗Whole foods. Not like the store (that’s called Whole Paycheck, right?), but meaning foods that haven’t been minimally processed. Fresh veggies, lean protein sources, whole grains, etc. I do have a few processed things on hand (protein bars) just in case I’m in a place where I need something SUPER quick, but that’s it. 

🥗High fiber. There are so many reasons we should be getting in plenty of fiber (Google is your friend here guys), but if I’m being honest I just feel better when I’m getting plenty of it. Leaner, more regular, more satiated. The list goes on! Besides the obvious fresh produce, I also eat plenty of legumes, whole grains (rolled oats, farro, quinoa - even though it’s a seed), flax and chia seeds.

🥗Hit my protein goals. Again, an essential nutrient. I have composition goals, and for my muscles to recover from my hard workouts I have to make sure I’m getting in enough protein. For me this means chicken, fish, and the occasional beef or pork.

It’s Friday, which means a myriad of things:

1️⃣Weekend vibes! Think soccer games, yard work, church, family time. Love it!
2️⃣The end of my meal prep. Not gonna lie, I won’t make this stew again...although the couscous was a fun addition!
3️⃣Sleeping in. HALLELUJAH.
4️⃣A chance to set up next week to be a great one!

This little parfait is a mini jar filled with plain Greek yogurt and homemade strawberry chia jam 🍓. No sugar added and tastes like a cheesecake - I’ll take it! Jam recipe is in my “food” highlight - just sub any frozen fruit in the same amounts and voila!
