Well hello! How’s your weekend so far? Ours has been full of amazing food so far, and we have an exciting photography project tomorrow morning! Can’t wait 🙂
Let’s start off with this: it’s impossible to sleep in when you have 2 puppies in the house, much like I imagine having children will be like. Once it hits 6 or 6:30, they are up and at ’em, and are TOTALLY not into letting us sleep any longer! Just look at them! Awakened from their beastly slumber:
I love ’em anyway 🙂 Once we were up and going I decided to take Nate on a man date. We started off with one of his favorite breakfasts…FRENCH TOAST! I decided to make a strawberry-peach syrup to go on top. You start with 2 cups of chopped frozen strawberries (make sure you let them thaw for a few minutes first) and 1 cup of chopped frozen peaches:
Then add 2 cups of sugar and turn the heat on medium low. Stir the sugar and fruit together; there’s no need to add extra liquid because once the fruit melts it will have the perfect amount.
I don’t remember how long I simmered the syrup, but we have a candy thermometer and it was about 210 degrees when I pulled it off. Here’s my french toast before:
I’m drooling right now. HOLY HEAVEN this was good! I think I got it a little thicker than I meant to, but the great news is it can double as a jam too!
Can I have this everyday for breakfast, lunch, and dinner? Please and thank you!
For the rest of the man date we went to see Robin Hood at the movie theater by the mall…and both decided that we will no longer EVER go to a regular movie at night! Going in the mornings on weekends is $6 rather than $10, and it’s not nearly as crowded. When the movie was over we walked around the mall for a bit before deciding on lunch at…
Nate is a cookie monster, so we got a chocolate chip cookie to share:

I had a Wahoo Bowl with brown rice, black beans, cabbage, pico de gallo, and teriyaki fish:
And Nate had the same thing, but with steak instead of fish and white rice instead of brown:
‘Twas perfect! We each got the small size and it was the perfect amount of food. When we got home we had every intention of fully cleaning the house, but I fell asleep for, oh I don’t know, an hour. OOPS!
Dinner was a HUGE salad!
It had sauteed mushrooms and grilled chicken:
Grilled onions (OK, not really grilled…I cooked them on the cast iron skillet, which is my newest obsession):
It was such a huge amount of food though…what you’re looking at was JUST my portion. I ended up eating about half of the toppings and about 1/4 of the lettuce and I had to stop. SO GOOD though 🙂
Tonight was pretty rough for me. At the mall we stopped by Old Navy to check out their swimwear sale…and I think that saying I went swimsuit shopping will probably fill you in on what the issue is. I had to fight off fat talk all afternoon, but tonight it just all came crashing down and we had a tear-filled evening. Thank goodness I have an awesome husband who took me aside and really built up my confidence again…I’m much better now, but this journey is much harder than I thought.
If you’re going through/have already gone through a weight-loss journey of your own, what are the things you remind yourself of along the way? I tried looking at myself in the mirror and thinking about how cool my body is and how thankful I for what it can do, but when I tried to think of that my mind just went blank!

Hi! We just returned from breakfast. ‘tho I don’t want to date myself, I sure do miss the luncheonette at which I would meet business friends before work, usually over coffee and toast. I didn’t have to deal with plastic thingies which held the cream, plastic thingies that held the butter, plastic thingies which held the jellies, and paper thingies that held the sweetener. And there is no comparison when it comes to how the waitresses presented themselves: hair actually done, make-up on, name tags that were actually embellished, and they were supplied with uniforms. In preparing a table for the next customers, salt and pepper shakers were wiped down as well as the marmalade and grape jam jars and covered creamers. I remember when I ordered scrambled eggs they WERE scrambled while cooking so that they were “fluffy” – not flat when served.
One may call me excessive-compulsive regarding the above when I try to put all this rubbish someplace collectively and out of sight as best I can but I call myself longing for those breakfasts. Have a nice day!

MOST delicious day everrrrr!!! LOVE the HUGE salad….yummmms! and french toast…mmmmm! your man is so lucky to have you as his amazing girllllie! YOU are beautiful and I am so happy you have a sweetie to remind you of that…we all forget to give ourselves love and encouragement from time to time, never let a stupid swim suit and BAD dressing room light hurt your body image! girllll you will be rockin hot in a swim suit!

oh wow. Leisurely breakfasts are the best. And I have a Wahoos in my school campus, but never visited! How stupid of me! Note to self: hit up Wahoo’s next semester, asap!

I am really wanting your dinner salad right now! I believe that Old Navy has the WORST mirrors and lighting possible! I would probably tell myself, “it’s not me, it’s the lighting!” I recently noticed that the dressing rooms at Victorias Secret have really flattering lighting and mirrors. They must have done some research, because us women are a lot more likely to buy things when we look extra good in them. Have a great night!

I’ve been on a huge french toast kick lately, but I think I’ve been missing out on that fruit syrup. Sorry you had a bad time with the swimsuit shopping. I think every woman has similar experiences, whether they are generally happy with their bodies or not. Swim suits hide nothing. 🙁

Never forget that you are beautiful, God made you, and He loves you! That always helps me get past fat talk. You can also do like you mentioned and focus on your strengths. Or also consider the progress you have made and take pride in that. You’re a gorgeous woman Heather! I hope you are feeling better now. Dern the swimsuits!

Ugh, swimsuits. When I’m having issues with how I look I try to remember #1: the good changes that I have made, #2: what my body has allowed me to accomplish (running a marathon, cycling, hiking, etc.), and #3: that certain parts of my body are a certain way for a reason (ie: muscular thighs for running, broad shoulders for cycling, etc.).
I think most of us girls engage in negative self talk and while it doesn’t always work I do think it helps to think of the things listed above when the self-bashing starts. God created us differently for a reason and the one thing that ALWAYS helps is to remember that you were created by the one that is perfect. How cool is that?

Swimsuit shopping is no fun.. for any girl. Don’t beat yourself up! NO one is perfect in a bathing suit but that doesn’t mean you can’t rock it and look gorgeous! Because you ARE!

Wow, Heather, I am literally drooling over your French Toast! That second syrup pour photo is AMAZING! You should enter it in some kind of food photography contest or something. (I don’t even know if those exist, but if they do, I am totally serious!)
Swimsuit shopping is the worst. I don’t think it matters if you’re a thousand pounds overweight or if you’re a lingerie model, we all feel bad when we see ourselves half-naked, in nothing but strings and clingy spandex material, under harsh fluorescent dressing room lighting. It is a recipe for disaster, in my opinion. I blame the clothing industry. I happen to have a pretty full chest (which I am EXTREMELY self-conscious about), and I struggle so much to find a bathing suit that is supportive enough while not looking like it’s made for someone much older than I am. I feel like bathing suits could be SO much more comfortable and flattering, if the clothing industry would just get on board.

No matter what, I have always found swim suit shopping IN a store to be terrible. I always buy the suits or order them and bring them home to try them on. It’s never a good thing in a dressing room!
