Long before I appreciated beer and wine, right before I learned that I could stomach tequila again after a particularly horrific episode, and immediately before I figured out that vodka is good in just about anything, there was rum. Cheap rum. Dirty cheap rum. Although that first statement makes me sound like an alcoholic, trust me that I'm not. I never actually drank (except, of course, that horrific tequila incident) until after I got married, at which point cheap rum is what we were able ... continue reading...
It’s a Dog’s Life
Our dogs and my parents' dog have it rough. No one to bark at, no one to play with, no one to snuggle every 15 seconds. I feel kind of bad for them. Kind of... ... continue reading...
Homemade Ice Cream
There are a lot of things I miss about Texas: our family, the culture, the people, the Tex-Mex and actual authentic Mexican food. The ridiculous shopping and the fact that you don't have to turn into a side street just to get into any parking lot. But there's one thing that I've been missing a lot more than usual lately: Blue Bell ice cream. No doubt there are other good ice creams out there, but if you're from Texas you know what a gem this stuff is. It's creamy, it's sweet, they have the ... continue reading...

Vegan Carrot Cake
Vegan baking. Something I knew nothing about until I started blogging, and it has remained a mystery to me ever since. I mean, let's be serious. I had a veeeeeeeery difficult time last year giving up meat for Lent. I did it, but I was not at all excited about it. Cutting out animal products in general? No thanks. But vegan cooking and baking is something that I feel like I should master. It's a puzzle that I just have to figure out! The hardest part about this for me was the ... continue reading...

Letters to Our Baby
When I was pregnant I wrote letters to our baby on a weekly basis. On BabyCenter they send out a weekly newsletter comparing the size of the growing baby to different types of fruits or seeds, just to give an idea of the actual size rather than using the metric system. Yesterday we had our post-surgery check-up at the doctor's office, and although the verdict was good (I'm as healthy as can be, can start exercising again, etc) it brought about a LOT of real emotions again about our loss. I've ... continue reading...
Peanut Butter Snickers Cookie Bars
Have you entered the $50 iHerb giveaway yet? Click here! I have a lot of good qualities, I swear. I am compassionate, loving, and happy. I only curse when it's funny. I have never said the F word (frankfurter?). I try to treat people the way I'd like to be treated. But one quality that's beginning to stand out as a personal favorite is my laziness. Yes, you read that right: I like being lazy. Here's the thing you need to understand with the laziness-loving: it applies to baking ... continue reading...
The Ultimate Strawberry Lemonade
The Ultimate Strawberry Lemonade is made in a blender, and will become one of the most addictive strawberry drinks you'll ever try! One of the first times I ever realized that - HEY! I can cook for myself! - was when I first learned to make lemonade. I magically found the refrigerated lemon juice at our house and followed the directions to make my own lemonade. I stirred and stirred and stirred again until that sugar was finally dissolved. Speaking of which, what gives sugar?! Why aren't ... continue reading...
Lent 2011
I did not grow up Catholic, but I've always felt that there's an importance of participating in Lent. It's a season to practice preparation for Easter (or in some cases the holy week) through prayer, fasting, giving, and self denial. In the past I always participated in Lent through fasting and self-denial of foods that I loved but deemed "bad" because of current health trends or just wanting to take a break from them to lose weight. Not quite what Lent is about, but I can say that it taught ... continue reading...
Butternut Squash & Leek Lasagna
Have you entered the $50 iHerb giveaway yet? Click here! When it comes to lasagna I feel like I should be the master. I've tried it so many ways, attempted making it in so many ways, and I love eating it. But honestly? Nothing compares to my mom's old-fashioned lasagna that I can't seem to recreate for the life of me. That being said, this is a fabulous and healthy take on lasagna that, until I can finagle my mom's recipe from her, will probably be a staple in our house from now on. I ... continue reading...
