That's about all I can say about the sickness that knocked me on my behind these past couple of days. HOLY. MOLY. I really don't know if I've ever been that sick with the exception of mono in college. It all started last Tuesday afternoon/evening when I couldn't stop coughing and just felt overall icky. The next day I went to work for an hour and then had to go home, and the rest is history. I went to the doctor and found out it's the flu, but that there wasn't really anything I could take ... continue reading...
Guest Post: Sweet Potato Skins
Morning everyone! So you know how I told you I've been sick so much lately? Well yesterday the sickness reared it's very ugly head and rendered me practically incapable of anything but sleeping. Thankfully the beautiful and VERY fabulous Jessica of How Sweet It Is is stepping in to share one of her amazing recipes in honor of the Super Bowl this Sunday. Y'all enjoy! _________________________________________________ In honor of the big game this weekend, I wanted to share one of my favorite ... continue reading...
Milkshake for Breakfast
OK, I actually didn't have this for breakfast. Or maybe I had a little bit. Who really knows with me these days? I like to shake things up a bit, and what better way than consuming a ridiculous beverage in the morning? I started off inspired by Jessica's Healthy Frozen Hot Chocolate, but when I didn't have any of the ingredients (tends to happen when you don't go to the store for 2 weeks) I gave up and did it the old-fashioned way. This really isn't a recipe; it's a method. And it's a ... continue reading...

Deconstructed Apple Pie
I had big dreams last night of making a rustic apple tart to round out a stellar steak and potatoes dinner. BIG DREAMS. Heck, I even had the pie crust in the freezer and took it out with plenty of time to start thawing. I lovingly mixed the apples with sugar, cinnamon, a little flour, and lemon juice. I set it aside to let the mixture thicken up a little. I made sure that the pie crust would be pliable in order to roll it out. Visions of rustic apple tart slices and ... continue reading...
Baked Cherry Oatmeal Cups
I don't love oatmeal...we all know this. I tried, really I did, for so long to like it! Mixed with bananas, almond milk, gobs of nut butter and preserves. And that's all fine and good, but let's face it: not for me. I'm tired of pretending to be an oatmeal lover. I need to be me. I will admit that I actually do love oatmeal cookies, oatmeal cake (recipe to be posted soon!), and other forms of oatmeal in baking. So yesterday morning when nary a breakfast food was to be ... continue reading...
Brownie Batter Chocolate Chip Cookies
You guys might curse me or love me for this recipe, but you have to try it. Really...I mean, it's Friday after all! Who doesn't need a little brownie-turned-cookie lovin'?! You and these cookies can have your own special happy hour...I won't judge. There's really not much to say about these because I think the name of the recipe kind of does all the talking itself. You have brownie batter. You have chocolate chips. But oh wait! You just turned them into cookies! Now they're ... continue reading...
Why
Why would I have a random photo of a piece of peanut butter frosting with squwiggly candles in it? Well, I could sat because every day should be a celebration...that seems like a good explanation! But I suppose I should say the answer is another simple question: why WOULDN'T I have a random photo of a piece of peanut butter frosting with squwiggly candles in it? Seems simple enough to me :) Enjoy celebrating your Thursday! ... continue reading...
Honey Almond Butter
Thank you all so much for your well-wishes and thoughts on sick food yesterday! Some of you guys like some weird stuff...but hey, who am I to judge? If it makes you feel better then that's really all that matters :) Question: what's a girl to do when she wants some stinkin' nut butter but doesn't have any because she...ahem...ate it all? Make some of course! I think this is one of the easiest and most delicious nut butters I've ever had, and the great news is it only requires 3 ... continue reading...
I {heart} Tortola!
Our trip started early early early on Thursday, May 21 at the Denver International Airport. We first had to fly into Dallas (to meet up with Nate's dad Jack, Linda, and her son Brandon and his girlfriend Liz). From there we flew to Miami International (definitely NOT a favorite in the airport world), and from Miami we flew into St. Thomas. One of the best things about that airport was the shot of Guava Rum that we got as we walked outside. Our taxi driver, George Sebastian, picked us up and ... continue reading...
Is It Summer Yet?
I know I'm sick and everything, but I have to say that I am so looking forward to the spring/summertime! Just something about the sun staying up later coupled with warmer days, shorts, sandals, and hiking...totally lifts my spirits! Clearly :) ... continue reading...
Sick Food
Ugh. Being sick is for the birds, I tell ya. Yesterday I had to leave work after a half day because I was feeling so gross! I thought for sure after taking a night off from cooking and sleeping as much as possible I'd be up and running like normal, but it just wasn't so. I think the worst feeling in the entire world is being sick and hungry and not wanting to eat anything, so yesterday on the way home I made a 2-minute stop at the store to pick up some of the usual sick foods: I hate the ... continue reading...
