I don’t love oatmeal…we all know this. I tried, really I did, for so long to like it! Mixed with bananas, almond milk, gobs of nut butter and preserves. And that’s all fine and good, but let’s face it: not for me.
I’m tired of pretending to be an oatmeal lover. I need to be me.
I will admit that I actually do love oatmeal cookies, oatmeal cake (recipe to be posted soon!), and other forms of oatmeal in baking. So yesterday morning when nary a breakfast food was to be found in our house I decided to go for it. I was going to make baked oatmeal. And by golly, I would like it!
Since I have zero experience in baked oatmeal, I went with this recipe since it allowed for frozen fruit, the only kind I had on hand. I followed it to the letter with the exception of the butter.
Really guys, this is Heather! It really is! I didn’t have butter! No lie…
Anyway, I also didn’t add the prescribed fruit and chopped up some frozen cherries instead. The result was a moist yet crumbly little oatmeal muffin…and I think that we all know anything in muffin form means you can eat more. AND it’s oatmeal…totally good for you!
(recipe from Taste of Home and adapted for on-hand ingredients)
- 3 cups oats
- 1 cup packed brown sugar
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 2 eggs, lightly beaten
- 1 cup fat-free milk
- 1 tsp vanilla extract
- 1 1/3 cups chopped fresh or frozen cherries
Preheat oven to 350. In a bowl whisk together the wet ingredients. Add the dry and stir til mixed. Fold in the fruit (Note: if you’re using frozen cherries, keep them frozen so they don’t discolor the oatmeal too much). Spray a muffin tin with nonstick spray. Fill each cup 2/3 full. Bake at 350 for 15-20 minutes until golden brown and no longer wet from the egg mixture. Let cool slightly before attempting to remove from the tin. Please note that I did not use paper liners, although that would have been very helpful! I highly recommend using them if you have them on hand.

So am I now an oatmeal convert for life? Not likely, but I will DEFINITELY be making this recipe again. Nothin’ like having dessert for breakfast!

I’m totally with you–cannot stomach a bowl of oatmeal for breakfast (my husband eats it every day) but LOVE baked oatmeal. I make a big 9×13 now and then, generally with walnuts and craisins/dried cherries. I never considered using frozen fruit or baking it in muffin tins–you have such great ideas! Baked oatmeal is really fun to make when you have company for breakfast. Add drinks, fruit salad (or bacon, who am I kidding?), and milk to pour over the oatmeal if you wish, and you’re all set! You can also prep the oatmeal the night before and bake in the morning. Who knew I had so much to say about baked oatmeal?
i have always hated oatmeal too! that texture is gnarly as foo but these look yum in the tum. thanks.
