Well dear friends, Monday is here and Wes and I are on the road again, this time heading home to Little Rock from Austin. A trip that should really only take about 7 hours or so will likely be close to 10, but that’s just part of the sweet life of toddlers. The good news is that Chickfila playgrounds are our best friend, hence the additional hours in the car, as is Starbucks coffee. YES PLEASE.
Today’s smoothie is super basic and super yummy, and I made it all from things in my parents’ freezer. I think one of the coolest things this smoothie experiment has taught me is to be creative with basic ingredients. You don’t have to have a recipe with a title a billion miles long with add-ins and crumbles and sauces galore. Sure, those things are good, but at my core I love simplicity – I crave simplicity.
Yesterday I was sitting on my parents’ porch drinking coffee and watching a hummingbird flit around, breathing in the humid morning air. I flipped to my notepad on my phone to make a list of things to do before heading back to Arkansas and ended up reading all of the random notes I’ve made in that section of my phone over the past year. Things about struggles and freedom, notes with grand ideas and pretty fantastic recipe ideas, and thoughts about life and what I really want to see happen with this short, precious, wild gift of being a soul that inhabits a body. There was one particular vision that I’m still unpacking that completely solidified my yearning to keep life simple and keep life beautiful; honestly it was a vision that I feel was a divine revelation for me, one that showed what my heart wants before I ever knew that my heart wanted it.
And the only way to see that vision through is to declutter and make this sweet little life as filled with light and simple beauty as possible. And bare feet. Always.
So today I give you this smoothie – simple ingredients, good flavor, and a healthy way to start the day. If my mom’s vegetable drawer had contained spinach I so would have put some in here, and I even think it would be good with kale, but do what you want. I still love ya 😉
ON THE GO SMOOTHIE
- 1/2 cup almond milk
- 1/2 cup orange juice
- 1/2 cup frozen blueberries
- 1/2 frozen ripe banana
- 1/4 cup cottage cheese (if you don’t love that then try Greek yogurt or your favorite protein powder)
- 1/2 cup fresh pineapple chunks
Combine all ingredients in a high-speed blender and blend until smooth. Enjoy!

This smoothie looks fantastic! I’m always throwing random stuff into my Vitamix and hoping it turns out. I have come to the conclusion that smoothies can handle almost anything 😉
