One year ago today Weston Jay was born after 41.5 weeks of pregnancy, 11 hours of labor, and 15 minutes of surgery via C-section. He is the most amazing baby, and is turning into the sweetest, funniest, smartest and strongest little boy we could ever imagine. I still look at him after all of these months and tear up, so thankful for every second we get to spend with him. Being a mother to Weston has made me FEEL so much - I realize even more how much I love his daddy, how much I love my ... continue reading...
Healthy Baby Cheesecake Bites
HOLY. GOODNESS. You guys. I am not proud of this at all, but I literally at every single one of these yesterday as a snack. Yes, you read that right: a SNACK. It was only supposed to be one because, well, obviously I need to taste the things I'm posting on here. But true to being me I couldn't just stop at one cheesecake. Before I knew it they were all piled on my plate and they were gone. I think I blacked out... I guess I'm hoping that by ... continue reading...
A Meetup of Influential Women
Today on the Influence Network we're doing a fun little get-to-know-you thing, and I figured why not get involved! I mean, it's not like you guys know every detail of my life (or do you?), so what's 3 more things to share with the world? ONE My eyeliner? It's tattooed on. I've shared this before, but I secretly feel like it makes me the most hard-core person in the world. I've always wanted to get a really amazing tattoo, but nothing has ever really stuck with me long enough to want it ... continue reading...
Slow Cooker Coconut Curry Lentils
Weston has a new development. It's called fake crying. I'm not going to lie, it's kind of hilarious and I try to hide my laughter every time he does it, but I can't guarantee the success of said hiding. What usually happens is he'll reach out to try and touch the TV screen or try to pull on the fireplace screen. I will discipline him by being stern and removing him from the area, and then when we get to the "other" destination he'll make this completely sad face and burst out with a few ... continue reading...
Broiled Tomato and Cream Cheese Sandwich
I just have to put this out there: these sandwiches are so not me. They scream of fancy tea parties, beautiful women dressed to the 9's with lace gloves and gorgeous hats. I can just picture the delicate teacups and saucers, the lumps of sugar and the perfectly thin slices of lemon floating gently atop the perfectly brewed tea. The colors are both stunningly bright and neutral at the same time; the tomatoes are perfectly sweet and savory, and the cream cheese adds the perfect ... continue reading...
Bailey’s Milk Chocolate Cookies + More Treats Galore!
Apparently I was really feeling the cookies & cake for February's ChefMom recipes! Thank goodness Nate's office enjoys (or at least pretends to enjoy) the crazy bombardment of sweet treats - I think I'd weigh a million pounds if that wasn't the case! I hope y'all enjoy these yummy cookie recipes - the Bailey's one is perfect for St. Patrick's Day! Bailey's and milk chocolate cookies Vegan sweet potato cookies Painted heart sugar cookies Chocolate covered cherry pound ... continue reading...
What I Love About…The Vintage Mixer
Have you guys ever read The Vintage Mixer? While I love a LOT of blogs I have to admit that Becky's is one of my favorites for many reasons, but a BIG one being that I just never know what to expect. She has such a wide variety of delicious food that it's always exciting to see her new posts pop up in my reader. I always try to guess what it is before, and she surprises me every time! But first let's talk about how I came to find her blog (and Becky I don't think I've ever even shared this ... continue reading...
3-Ingredient Avocado Fudge
Well WHOA waddaya know, another chocolate recipe with a short ingredient list! I tried to come up with an excuse for why, but let's just face it: there are times a girl just needs some stinking chocolate. This was one such week for me apparently, and I just have to say that I'm glad I now have these in my repertoire because they take almost no time and it means I don't gorge myself on store-bought candy instead. Let's call a spade a spade though: chocolate in pretty much any form is ... continue reading...
Kit Kat Cups
I should be writing this post, but you know what? I'm so not paying attention because I've got chocolate in one hand, tea in the other, and I'm kind of watching a video with two of my favorite things. Babies. And dogs. MY HEART AND MY UTERUS ARE ABOUT TO EXPLODE. That's a weird way to segway into talking about chocolate, right? I mean surely that's not normal? I just feel like you guys need to know what's happening in my mind when I make these recipes, and about what's going ... continue reading...
The Mommy Within
I love being a mom. You guys probably already know this from my constant chit-chat about how sweet our boy is, how much fun he is, and so on, but I just can't even begin to describe how much I love being a mother. My sister and I are 4.5 years apart, and I don't really remember her as a baby all that well. I was too busy playing sports and working in high school to babysit, and continued that trend in college. When Nate and I got married I figured that two kids was ... continue reading...
Garlicky Cauliflower, Kale and Avocado Puree with Caramelized Mushrooms
Y'all. This is good - like really, really good. And TOTALLY something that you can eat a LOT of without feeling guilty by any means! I mean, I used a bit of butter to caramelize my mushrooms, but you can make it completely vegan by just switching the fat you use. GOOD. SO SO SO VERY GOOD. But I gotta be honest here: as good as this dish is, I keep looking at these photos and just kind of craving a big fat salty steak. I don' t know why; I didn't want a steak when I was eating it. I think ... continue reading...
Starbucks Knock-Off Chai Tea Latte
I want to be real with you guys: I am having some serious margarita cravings lately (I blame Jessica, Deb, and my true-blue Texas roots). Sure, it's still wintery and there are snow storms and ice storms and cold winds galore, but all I see is that warm (nay, HOT) weather is right around the corner. It's almost time for daylight galore and sipping margs on the back porch. Oh, and y'all? Don't even get me started on grilling. I seriously cannot wait to whip out the grill and move all of my ... continue reading...
