My friends. This past weekend straight wore.me.out. We took a short trip to Dallas to celebrate Weston's first birthday with our family and friends, and while I can definitely say that we were blessed beyond belief to see them all it was quite the doozy for mom, dad and baby. I mean toddler. YIKES! The drive down on Friday was fine for the most part, with Wes only getting fussy the last little bit of the trip. Soon we were there and surrounded by people who ... continue reading...
BBQ Pulled Pork Calzones, Eggplant Lasagna, BLAST Wraps and Swedish Meatball Burgers
What a title, right? Clearly we've been eating well lately with all of these yummy suppers I've done for ChefMom. It's so hard to choose a favorite, so I encourage making 'em for dinner 4 nights a week! :) Enjoy! BBQ pulled pork calzones Eggplant lasagna BLAST wraps (bacon, lettuce, avocado, salmon, tomato) Swedish meatball burgers ... continue reading...
What I Love About…Traded Dreams
Today I am so excited to talk about one of my favorite blogs of all time, Traded Dreams. This blog is relatively new to me since I have really only been reading since right before Christmas, but Lauren has captured my heart with her words. I've shared with you guys about a billion times how much it means to me to be a mommy, but I really don't know if I could ever capture that as eloquently as Lauren does. She too has felt the pain of losing a child, as well as a struggle with infertility. ... continue reading...
Avocado Deviled Eggs
It started off simple enough. Perfectly hard-boiled eggs (this method is fool-proof!). The realization that I haven't yet had a deviled egg this year. See? Simple. And then I discovered the perfectly ripe half of an avocado in the fridge (yes, the fridge). Here's the deal: I don't really like mayonnaise, and while I typically don't use a lot in my deviled eggs anyway I figured any excuse to not use it is good enough for me! Now I realize that ... continue reading...
12 Months Old!
My dearest Weston, Every mom says this, but I really can't believe that you're a year old. 365 days of beautiful memories all culminated on your first birthday this past Friday. My sweet boy, you've grown so much over the past year and it seems like pure insanity to believe that you're anything but an infant still! And yet here you are, laughing and goofing off and learning all the time. Always on the move, always figuring out new things, and always ALWAYS at the center of your mommy ... continue reading...
My StitchFix Experience (#3)
Oh shopping. Such a love-hate relationship! I am completely that woman who mothers at home in workout clothes and only really wears real-people clothes when I go out in public. Not really because I care what other people see me in (per se) but more because I want to smell nice instead of sweaty. Is that normal? I really really hope so... HOWEVER when I step back and look at my clothes lately I can't say I'm really all that impressed. ... continue reading...
Salsa Ranch Pinwheels
In case I haven't bored you guys to tears with this enough, I am a Texan through and through. Sure, I don't live there at the moment. Sure, it's been a few years since I had a Texas license plate (GAH I kind of teared up over that!). And sure, my son is *technically* not a Texan by birth, although he is by bloodline (thank goodness). I have absolutely nothing against other states or areas of the country; I just happen to be partial to Texas. Probably because it's the best :)In that, I am a ... continue reading...
Jump on the XTrain
Y'all, I have something to admit: I am a Cathe Friedrich junkie. Yes, it's true - I absolutely love her workouts. I remember when I first discovered her on FitTV (when it still existed) and could not believe how such a tiny and sweet little woman could kill my muscles so badly. It was love at first workout! There was one point where it hurt to wash my hair for almost a week; granted there's a little user error there since I didn't pare down the weight when I needed to, but by the end of ... continue reading...
Life Lately, Again
I remember the last time I wrote a "life lately" post I told you guys that we had moved from Colorado to Arkansas...kind of a big surprise, right? I promise this time around I won't spring a cross-country move on you guys; more than anything I just want to share snippets of life and thoughts and dreams! Life lately: Has been filled with the loss of loved ones. As y'all know my grandmother passed away a few weeks ago, and then just a week ago Nate's grandfather passed away. It's all been ... continue reading...
Ranch Roasted Fingerling Potatoes with Buffalo Yogurt Dipping Sauce
First of all, can we all just agree that fingerling potatoes are just about the cutest things in the food world ever? I love when I open a big bag of them to find a couple of teeny tiny little cuties hanging out in there - if they didn't have to be cooked I'd probably just eat them raw! Back to this post though - in case y'all haven't noticed, I've got spring fever (aka "Pre-Summer Fever") something fierce. If I'm not making something that directly reminds me of summer, I'm probably making ... continue reading...
Greek Shrimp Orzo Salad, Chili-Roasted Vegetables and Bacon Cream Cheese Biscuits
While I may be a little biased and like pretty much every recipe I post, I have to admit that these three are some of my absolute favorites. The shrimp salad is a staple for quick dinners and lunches around our house, the vegetables are AMAZIIIIIIIIIIING, and bacon biscuits? Yeah, like that could be bad ;) I hope you guys enjoy these as much as we do! Greek shrimp orzo salad Chili-roasted root vegetables with poblano pesto Bacon and cream cheese biscuits ... continue reading...
Blog Love: Candy’s Baked Pork Chops and Stuffing
A while back I posted the above shot on Instagram, and to be honest I can't stop thinking about it. See, I'm kind of a sucker for oven-roasted anything, but I really really love stuffing that's baked on top of meat or veggies. Random, right? But really, it's just so good. The stuffing that's directly touching the meat/veggies is soft and almost creamy, and the stuffing on top is crunchy and toasted. There's some kind of chicken recipe that's similar to this that my ... continue reading...
