A while back I posted the above shot on Instagram, and to be honest I can’t stop thinking about it. See, I’m kind of a sucker for oven-roasted anything, but I really really love stuffing that’s baked on top of meat or veggies.
Random, right?
But really, it’s just so good. The stuffing that’s directly touching the meat/veggies is soft and almost creamy, and the stuffing on top is crunchy and toasted. There’s some kind of chicken recipe that’s similar to this that my mom used to make, and every time she did we just went nuts over it. IT’S JUST SO GOOD!
When I saw this recipe on Brenda’s blog in November I knew that it would become one that’s on rotation in our house consistently. It’s so simple, easy to throw together, and I’ve found that it’s really simple to make, refrigerate, and then bake off when it’s time to eat…perfect for anyone who just wants something warm and comforting on the table without a lot of prep!
Also, have you ever read A Farmgirl’s Dabbles? I absolutely love Brenda’s simple recipes, fun stories, and absolutely mouth-watering photography! I have a lot of favorite blogs, but I have to say hers is one of the ones I geek out about when she posts something new 🙂
