Hey guys! How’s it hangin’? I really don’t know if the weather here could be any more perfect! I think the only thing that would make it better is if I could actually spend some time outside in it 🙂
Let’s talk about this for a moment: I love tamales. As in tamales and I are most definitely an item. As in we are exclusive. Thing is, Nate is not so much a tamale fan…apparently they’ve had quite the tumultuous relationship and are broken up. This puts a strain on mine and Nate’s relationship seeing as how tamales and I are still going strong. All that to say that, because of my dear husband, I haven’t had a tamale in about 2+ years. My dear friends, that changed today! Behold, the green chile cheese tamale!
One of the sweet ladies in our office got these at Whole Foods today, not realizing that they were mighty spicy, so she gave me her last one. Heaven! I love tamales (in case you didn’t catch that beforehand) and used to eat them all the time, especially cold out of the fridge. Don’t you dare judge me 🙂
That was my mid-morning snack, and lunch was quite the healthy happening as well. A low & slow sweet potato and a cup of Ramen!
I maintain that the nutrients and lack of bad stuff in the potato even out the lack of good stuff in the Ramen. It’s called balanced eating, right? 🙂
[Side note: I know some of you are cringing right now, but I’m just going to throw this out there: I LOVE RAMEN. I haven’t had any in at least a year, so I figured this one day wouldn’t hurt anything!]
This afternoon I walked slowly to the park and did core work for about 20 minutes in the grass and then walked back. The sunshine was glorious and just made me wish it were summer already! Plus the creek is rising, which means that a lot of the snow is melting in the mountains. Nate and I have big plans this summer to climb a 14-er (which is a 14,000 foot mountain), go camping, hike a couple times a week, and ride our bikes everywhere. Can’t wait! It also reminded me of our fabulous trip to Tortola last year, which was incredible! Wish we were going back again this year too 😉
What’s the best vacation you’ve ever had? Or, if you’re like me and can’t pick just one, what are a couple of your favorites? Obviously I loved Tortola (you know, seeing as how I just called it fabulous and all!) My family and I used to drive out to California every year to visit my family in the Bay Area. I looked forward to that 24-hour drive every time! We also took an amazing trip to Puebla, Mexico, which was such a fun adventure!

I love tamales too!! SO good!!! My best vacation is a toss up between two. My Hawaiian honeymoon was amazing!! But I went on a mother/daughter trip to Paris that was awesome too. Both were different and great for different reasons.

I haven’t really been on too many exciting vacations, but I’ll say that I love Disney. Anything that makes me feel like a kid again is awesome! So glad you’re enjoying your tamales. I love seeing people enjoying the things they love 😀

Before I had to stop eating gluten, ramen was my number one food for when I felt sick! I loved that stuff. I remember being appalled at when my husband told me he couldn’t eat ramen because he is allergic to MSG 😀
My favorite trip was our honeymoon to Hawaii. I still long to go back there and hope that we will again one day.

My favourites are SF many years ago, Paris in 2008, Turkey in 2009 and Athens 2009. Can’t choose one, most of my travels have been amazing and I’m a lucky duck to have had the opportunity to travel so much 🙂

I’m moving to Boulder in the summer and cannot wait! Summer in Boulder is the best!!!!! Tubing down the creek is so fun, I highly recommend it!

My best vacation was HANDS DOWN my trip to Mexico last month. I was with my cousin/best friend, the weather was perfect, the resort was AMAZING, and we had some of the best nights out on the town. Ohh how I wish I could re-live that glorious week 😛
And girl – I’m right there with you on the Ramen noodles. LOVE them! Although I can honestly say I haven’t had a bowl in years…

Ok. I have been reading your blog for about a month and thought I would reply. Vacation wise my husband & I have traveled to many great places is the past couple years…Paris…Scotland…London…Napa Valley…NY City…Pheonix and many more. I must say that last year we ventured to the Canadian Rockies. We hiked for 5 days in some of the most beautiful, breath taking places I have EVER laid my eyes on. There were many worship songs going thru my mind as I saw mountains, beautiful falls, glaciers, and lakes that were sooo blue.
I must say that when scripture talks of people looking at creation and KNOWING there is a creator…….what a witness God’s creation can be!

The town in Indiana I went to college in had a lot of Latino immigrants, therefore we had delicious Latino restaurants. We LOVED going to Universal Tamal for 12 tamales for $10. I need to find good tamales in Denver!

I’ve been lucky to travel a bit and my favorite vacations have been London and the Mexican Riviera. Amazing spots along the coast! SF is always great. Montana’s Glacier National Park is breathtaking. I would love to go to Napa Valley someday.
