Twice-Baked BBQ Ranch Sweet Potatoes

There is a new thing happening in my life these days.  A thing I've never seen, a thing I've never dreamed of, a thing I'd only ever heard of in what I thought were tall tales.   It's called pollen.  And OMG.   Our cars are neon yellow. There's a fine mist in the air.  My eyes are watering like I just finished watching The Notebook 86 times.  For the love of flowers, stop this pollen madness! OH AND ALSO I happened to notice that they have a pollen count thingimajig ... continue reading...

Rich & Chewy Chocolate Almond Cookies

Rich & Chewy Chocolate Almond Cookies [Gluten-Free] || Heather's Dish

So you know how I told y'all on Monday that I was going to start eating less sugar and fewer simple carbs?  And then I told y'all that all I could keep down all weekend was pasta?   Well, I kinda sorta lied.  'Cause I ate these too.   Now before a massive riot ensues, hear me out:  these cookies are practically health food and therefore a little sugar won't hurt, right?  You've got whatever's good for you in almonds, whatever's good for you in cocoa powder, and an egg ... continue reading...

Skinny Avocado Margaritas

Skinny Avocado Margaritas || Heather's Dish

One of my fondest memories from the time that we lived in Colorado is from last summer (2012) with my girlfriends Amanda and Abbey.  Amanda and her husband were in the process of packing to move to Missouri, something that was truly bittersweet for all of us.  The three of us girls and our husbands were all part of the group of 5 leadership couples within the church that we were in Colorado to help plant.  When the church shut down there was a great deal of hurt, and the 6 of us became really ... continue reading...

State of Motherhood Address

Last week (before the Great Sickness of 2013) we had Weston’s 12 month doctor’s appointment, which officially marked his passing into toddlerhood.  I can’t believe my little guy is walking, climbing stairs, reaching doorknobs and getting into dirt all the time.  It really does seem like just yesterday we were feeding him every 3 hours and celebrating over him lifting his head off the floor during tummy time. And now?  Now my baby is 24-1/2 pounds and 32.5 inches long.  Y’all, he’s tripled his ... continue reading...

Guinness Mac & Cheese, Dessert Grilled Cheese, Spinach Artichoke Grilled Cheese, and a Savory Cheesecake

What a title, right?!  I figured I'd try to group the cheesiest of all of last month's ChefMom articles together since we all need a little comfort food from time to time.  If I had to pick a favorite I'd say the two grilled cheese recipes are a stretchy-pants night waiting to happen, and I mean that in the BEST way possible.  Enjoy! Guinness Mac and Cheese Dessert Grilled Cheese Spinach Artichoke Grilled Cheese Roasted Red Pepper and Garlic Cheesecake ... continue reading...

What I Love About…Reluctant Entertainer

By nature I'm a pretty introverted person, but thankfully I have no problem pulling out of that natural inclination to be around people that I love.  However, when it comes to entertaining I tend to be a pretty anxious person - I love being around our friends and family, but I always come from a place of wanting everything to be perfect.  And if it's not perfect?  Let's just say there's a potential major freakout on the horizon.  Seriously...it can be pretty sad.  Luckily Nate loves me well ... continue reading...

Out of Chaos

[[quote from Gungor's "Beautiful Things"]] Y'all.  I am sick.  I've had a cold for the past week and then woke up yesterday with stomach issues that basically paralyzed me for most of the day.  Today's not looking much better, but I am so thankful for the above line from Gungor's "Beautiful Things" that we sang in church recently - it perfectly fits life these days.  Just another way that God is reminding me to give it all up and trust Him.  So when I'm sick and can't bring myself to sit and ... continue reading...

What I’ve Been Reading Lately

A few days ago we all sat down for a little coffee date and I told you guys that I've tried to start reading a lot more lately.  When I was younger I would just feast on books for hours, losing myself in different worlds, learning new things, and growing in ways that only reading books can do.  As college came and went, so did my reading for the pure enjoyment of it, something that I regret deeply.  I feel like there are so many years where creativity was lost on me, and there's a peace that I ... continue reading...

Budget-Friendly Chicken and Chorizo Paella

Budget-Friendly Chicken and Chorizo Paella || Heather's Dish

So here's the deal - this isn't really paella.  I feel kind of like a fraud for calling it that, but it sounds so much better and fancier than "rice casserole."   You know it's true - I have nothing against rice casseroles, and paella is actually that in its own right.  I digress though, and we'll just settle on this being a paella despite the lack of shorter grain rice and the fact that it's made in a Dutch oven and not a real paella pan.  And saffron?  Y'all, I'm all for keeping the ... continue reading...

Cinnamon Sugar Pie Crust Cookies

Cinnamon Sugar Pie Crust Cookies || Heather's Dish

Some of my favorite first memories around food come from the time between Thanksgiving and Christmas when my sister and I would step into the kitchen with our mother to make plates of goodies for teachers, neighbors, friends and co-workers.  We would bake and boil and cut and clean and about 8 hours later find ourselves covered in chocolate and sweetened condensed milk and powdered sugar.   I remember the small things, like how much of a pain it was to shape the pecan cookies into ... continue reading...
