Rich & Chewy Chocolate Almond Cookies [Gluten-Free] || Heather's Dish

So you know how I told y’all on Monday that I was going to start eating less sugar and fewer simple carbs?  And then I told y’all that all I could keep down all weekend was pasta?

 

Well, I kinda sorta lied.  ‘Cause I ate these too.

 

Now before a massive riot ensues, hear me out:  these cookies are practically health food and therefore a little sugar won’t hurt, right?  You’ve got whatever’s good for you in almonds, whatever’s good for you in cocoa powder, and an egg white.  So there’s a little sugar…but it really does all balance out!

 

In all honesty these are the richest, chewiest most wonderful chocolate cookies I’ve had in a while.  The only thing that could make them better would be a pile of chocolate chips inside of ’em too – but I said I was eating less sugar so…you know.  🙂  Really though, they come together in about 3 minutes and bake off in no time.  You can have hot chocolate cookies in 20 minutes flat – getcha some!

Rich & Chewy Chocolate Almond Cookies [Gluten-Free] || Heather's Dish

RICH & CHEWY CHOCOLATE ALMOND COOKIES

Makes 16 cookies

  • 2 cups almond meal
  • 1/2 cup granulated sugar
  • 2 egg whites
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 2 Tbsp cocoa powder

Preheat oven to 350 and line a baking sheet with parchment paper or a Silpat.  In a bowl stir together the almond flour, cocoa powder, sugar and salt to combine.  Stir in the egg  and vanilla extract; it will take a little elbow grease, but eventually it will form a thick dough.  Drop the dough by the tablespoon onto the prepared baking sheet.  Bake at 350 for 15 minutes.  Let cool completely before removing from the pan (otherwise they’ll stick!).

    Wow what a great cookie , I used turbinado sugar which gave them a nice flavor, I also used a stand mixer it helped a lot.

      I added mine after they had cooled completely and right before serving – otherwise the sugar will fade into the cookie and it’ll all become sticky!

      I’m so sorry Indre 🙁 I literally just made these last weekend the same way as they’re listed here and they turned out great again. Maybe try to underbake them?

    Just made these and they were fantastic! Used brown sugar and added a cup of sweetened shredded coconut. So good.

    Question: How do they bake on a greased surface? I found them hard to peel off the
    parchment. Real problem since they were so great; we wanted every little bit!

      Hey Mia! Truth be told I haven’t made them on a greased surface before so I can’t attest to how they would bake on one. I have done them on a silicone baking mat (Silpat brand) and they worked great there, although I did use a very flat and sturdy spatula to get them off. Sorry I couldn’t be more of a help!!!

    Thanks for this awesome recipe! I make these but substitute Xylitol for sugar and add 2 scoops of vanilla protein powder. They taste better to me this way 🙂

    I just made these and they’re amazing! They taste like a chewy brownie. I threw in some almond extract and subbed about 3/4 of the called for sugar with coconut palm sugar and the rest with regular white sugar. Will definitely make again!

    These are absolutely perfect. I have all the ingredients (and I’ve been meaning to use up some almond flour I bought at Trader Joe’s). Plus, my neighbor is gluten free and I love giving her new GF sweets! She’s been so deprived for many years!
