Kit Kat Cups || Heather's Dish

I should be writing this post, but you know what?  I’m so not paying attention because I’ve got chocolate in one hand, tea in the other, and I’m kind of watching a video with two of my favorite things.

Babies.  And dogs.  MY HEART AND MY UTERUS ARE ABOUT TO EXPLODE.

Kit Kat Cups || Heather's Dish

That’s a weird way to segway into talking about chocolate, right? I mean surely that’s not normal? I just feel like you guys need to know what’s happening in my mind when I make these recipes, and about what’s going on in life when I sit down to write about them.

I always picture us hanging in our sweats on the couch.  If it’s morning, we’ll have coffee (or something) and at night we’ll have some wine or maybe some sleepytime tea.  We’ll probably laugh about how crazy life is and how we probably have some crazy quirk in common. I always picture how I’d share how much fun I’ve had that day and how little sleep I really get at night (homegirl has GOT TO GET TO BED EARLIER). I figure you’ll probably tell me the same thing, since we can all ALWAYS use a little more rest.

By the way, I kind of hate the phrase, “I’ll sleep when I’m dead.” I need sleep to enjoy life right now – I see nothing wrong with getting a little while I’m living too!

Anyway.

Besides our yummy beverages of choice I figure we’ll probably also pull out some chocolate at some point.  I actually really just enjoy eating chocolate chips, letting them melt in my mouth one at a time, but for you?  I’ll pull out the good homemade stuff.  The chocolate that I stuff things like buttery Ritz crackers into and call them Kit Kat cups, even though nary a Kit Kat bar is to be found.  We’ll probably laugh about the fact that they are addictive and we just can’t stop ourselves from eating them.

I’ll maybe share that yes, there have been times I’ve eaten a whole batch of chocolatey something so that I won’t be tempted to eat it later.  Reason and chocolate never really had much in common anyway, you know?

Anyway, this is my mind right now: babies.uterus.puppies.heart.chocolate.coffee.wine.tea.laughter.repeat.

What about you?

Kit Kat Cups || Heather's DishKIT KAT CUPS

  • 2 cups milk chocolate chips
  • 15-20 Ritz crackers
  • 1 tsp coconut or canola oil (coconut tends to work best for me)

Put the chocolate chips and oil into the bowl of a double boiler placed over simmering water (not touching the water though). Stir occasionally until the chocolate starts to melt and then stir until smooth. While the chocolate is melting place muffin cup liners into a muffin pan.  Once the chocolate is melted, cover the bottom of each muffin cup (about 15-20 cups) with melted chocolate. Press a Ritz cracker on top of the melted chocolate until you see it come up around the edges. Pour a layer of melted chocolate on top of the Ritz and spread it to the edges, so that the Ritz is covered in chocolate. Place the pan in the fridge for about 20 minutes to harden. Voila!

This would also be good with peanutbutter spread on the ritz cracker too, especially with peanuts in it as well.

Bet you could make these with peanut butter. Make peanut butter Ritz Crackers and process same as above. Might need a little more chocolate as you will be using two Ritz crackers (sandwich style). Going to try both. Thanks.

3 ingredients–cannot beat that. Well, I guess you can.. with 1 or with 2. But I am cool with 3. That vid with the laughing babies was awesome.
