So. Weaning Wes from the swing hasn't been super easy or fun - suffice to say he's not pleased. BUT yesterday he slept in his crib for a solid hour and woke up happy, so I'll take that as a small victory! I'm sure it'll just keep getting better, but I have to say that the crying the first few times was almost more than I could take. Fingers crossed we're at a turning point! Yesterday his exersaucer arrived! I put it together, cleaned it off and put him in it and so far he really seems to ... continue reading...
Flourless Emergency Chocolate Mug Cake
The emergency chocolate cake. Kind of dry. Kind of only good if you add chocolate chips. Kind of overdone. Until now. I just feel the need to get this out in the open: I love chocolate, but I'm not a chocoholic - it's true. But what that should really tell you (besides the fact that I've totally failed you guys in the chocolate arena) is that when I crave chocolate that means it's GOTTOHAPPENRIGHTTHISVERYSECONDORIMAYJUSTDIE. It's a very serious thing when I crave ... continue reading...
KIND of the Best Snack Ever
A few weeks ago I was lucky enough to receive a massive supply of KIND bars and granola. Talk about excited, I could hardly contain myself as I dug into the collection and greedily hoarded the best flavors (i.e. ALLOFTHEM) so that I could have them all to myself. And even though I totally ended up sharing them with Nate, I have to say that I ate probably the majority of them within about a week. They're so delicious that I was having one for a snack and another for dessert - a dessert that I ... continue reading...
Blog Love: Chicken Taco Pasta
Y'ALL. You want to know what's for dinner tonight? Because it SHOULD be this. HOLY TACO PASTA. First of all, I just have to say that Bev's blog cracks me up. Everything she writes is TOTALLY stuff that has gone through my head and she's basically living in my brain and then saying it all oh-so-accurately on her blog. Really. Read it. I think you'll find she's in your brain too! Second, the moment I saw this chicken taco pasta on her blog I just about lost it. It's ... continue reading...
Smoked Salmon Tacos
It's official. I have literally had the absolute best salmon of my entire life. Like I could totally eat hundreds of pounds of the stuff and not even think twice about it! It's all about the smoke by the way. We kind of have this absurd obsession with our smoker this summer - pork ribs, cheese (SMOKEDCHEESEWILLMAKEYOURENTIRELIFE), and the amazing salmon that I've been getting from the incredible folks at Copper River. But you know what? Don't have a smoker? Here's a great way ... continue reading...
Frozen Yogurt Granita with Fresh Mango Sauce
I'm SOOOOOO that girl who stares longingly at incredible ice cream dishes on blogs, vowing constantly to head to the store and buy an ice cream maker. And then I never do. I like to think that ice cream is kind of a legacy in my family - my Grandma and Papa love it, my dad loves it, and my Grandpa could eat bowl after bowl after bowl. And yet I can't ever seem to get it together, buy an ice cream maker and make gobs of the stuff on my own. Nate always says that ... continue reading...
Rise & Shine Quinoa
You guys know a while ago when I posted about my new favorite way to eat oatmeal? Yeah, it's pretty delicious and completely filling... BUT... I kind of found myself in an oatmeal rut that I just couldn't get out of. I tried smoothies for a few days, which I love, but figured out that I'd rather have them as a snack these days. Then this past week I was reading the newest edition of Cooking Light and saw the huge spread of quinoa recipes for under 250 ... continue reading...
Family Friday
Let me be the billionth person in the world to say it: HOW IS IT FRIDAY ALREADY?! Seems like just yesterday we were about to welcome Monday and now the week is almost over. Time flies when you're having fun though, right? This week has been a little adjustment period for us since we got back from our trip to California. Wes's sleeping habits are on the fritz again and he's waking up 2-3 times a night. I'm super tired from that and my inability to go to sleep at a decent hour in the ... continue reading...
Banana Pecan Coconut Cream Rice Pudding
Back in the day my mom used to make rice pudding for dessert all the time, and even though the name totally freaked me out I still loved it. Chock full of plump raisins, nuts and cinnamon it was pretty much the quintessential comfort dessert. 'Specially when there was a mound of vanilla ice cream on top - Lord help me if I can't get enough vanilla ice cream. That's where life is y'all! Truth be told, I had never really made rice pudding from scratch before this. Is it just me or does ... continue reading...
Gluten-Free Blueberry Cobbler
Cobbler. It's a summertime staple if I've ever seen one, and it just so happens to be pretty much in my prestigious Top 5 Favorite Dessert Recipes of All Time. That, in case y'all didn't know, is pretty much what every dessert should aim for. It's like the Oscars of dessertland. Obviously. But while we're on that subject, can anyone confirm that I'm NOT the only person in the world who hoards frozen blueberries in their freezer? You'd think that after becoming a ... continue reading...
How to Dry Fruit Without a Dehydrator
Y'all. I am so tired. Tired from our trip to California. Tired because I can't seem to get to sleep at a decent hour these days. Tired because I'm going 100% in my workouts and my body is exhausted. Tired because I haven't taken the time to just sit, alone with God, and pray and LISTEN to him. There's nothing wrong per se, I just feel spiritually exhausted in that I'm not giving myself the time to just rest in his loving arms. That ... continue reading...
What to Expect When Flying with a Baby
Last week on Thursday I embarked on a whole new aspect of motherhood that freaked me out: flying solo with a baby. Looking back on it now I can totally see what things I should have done differently, figured out what worked best for us as a mommy-baby team and can clearly see the things that totally didn't work at all. Overall we had a great trip - we were flying out to Northern California to see my grandmother - and I am so thankful for the advice that I got from all of you on flying with a ... continue reading...
