BUT…
I kind of found myself in an oatmeal rut that I just couldn’t get out of. I tried smoothies for a few days, which I love, but figured out that I’d rather have them as a snack these days.
Then this past week I was reading the newest edition of Cooking Light and saw the huge spread of quinoa recipes for under 250 calories. Now the calories part wasn’t the thing that struck me, but rather the Rise & Shine that really got me excited. I could have a hot breakfast (nevermind that it’s 100 degrees outside)! Without it being oatmeal! I could try something new – what a novel idea!
So I did it. I tried it. And it was DELICIOUS.
The only changes I made were dried cranberries in lieu of blueberries since I used up all of my blueberries on cobbler. Still, delicious!

i make berry breakfast quinoa and cook the quinoa in milk with strawberries. They kinda fall apart and make it pretty and pink. then top with bananas, blueberries, peanut butter, agave, etc. so good! i also tried it with whole wheat couscous this week and it was just as good!
