Sight for Sore Eyes

Good morning everyone! Hope your weekends are AMAZING 🙂  I know mine has been a lot of fun, but nothing beat yesterday when I saw my husband walk through the door!  He was camping with a bunch of guys from our church for the past few days, and I missed him!  Boy, was he a sight for sore eyes 🙂

I love that guy, even if he DID lose Friday’s Marriage Ref Friday battle 🙂  Thanks for voting everyone!

So I’m going to be honest…for some reason this weekend I didn’t take a lot of pictures of my food.  I didn’t really eat great, but I was also just super lazy.  Friday for breakfast I snagged this heavenly croissant from the kitchen at work:

Flaky, doughy, heaven. All I have to say is thank goodness there was only one!  I also had an amazing cookie (’twas cookie Friday after all!) from the same box a little later.  It was oatmeal raisin with TONS of raisins…just the way I like ’em 😉

So here’s where I stopped taking pictures (oops), but for lunch I had a coffee cup with some corn, lentils, sliced steak (~2 oz), and salsa with some chips.  When I got home I did a WillPower & Grace workout, then proceeded to eat the leftover mac ‘n’ cheese with broccoli that I had Thursday night.  Saturday morning I tried to make a homemade frappuccino (I’ve been obsessed lately) and it was a MAJOR fail, so I went to Starbucks and got one with a spinach feta wrap.  Much better, although I don’t think I’ll be getting one of those again since I doubt my wallet can sustain that habit for long!

After eating I decided to take the dogs to the dog park by our house, which has a rather hilly 5-mile loop.  We did the whole thing, and I successfully wore the puppers out.  Sad story though: Keira sliced one of her pads open on a rock!  I had to carry all 50 lbs of her back to the car.  It wasn’t hard, but my heart was hurting for her!  When we got home they both got baths and I cleaned up her paw, after which they promptly fell asleep.  Mission accomplished 😉

Lunch was a little different, but I really liked it! A couple days ago I made Angela’s In a Jiffy Spelt Burgers, and had some left over.  I also found some pizza dough in our fridge and, since we didn’t have any bread, I decided to make little dough pockets for the patties!  You just roll out the dough to about 1/4″ thick, place the patties on it, and then cut a circle that is 1″ larger than the patty around it.  Fold it all up in the middle, place on a baking sheet, sprinkle some garlic salt on the dough, and bake at 400 for 15 minutes.

When it’s done you’ll have a little sandwich pocket of delicious goodness 🙂

I made three, ate one, and then had another half a little later.  When Nate got home he was VERY tired, so we ended up just ordering pizza (again, no picture), and I had a Breckenridge Vanilla Porter:

Honestly this beer is GREAT on tap, but I don’t think I’ll buy it out of a bottle again.  I always think it will taste good from a bottle and am always sorely disappointed 🙁  I had about 2/3 of it before I just gave up and threw it out.

Today we’re going to church, where I’ll be taking my birth control hanging out with the kiddos (I’m kidding :)) and then just cleaning, relaxing, and writing the rest of the day!  I can’t wait to spend some time with my awesome hubby!

What do you do when your significant other is out of town?  Do you just carry on like normal, or do you have some habits that change? I usually watch WAY more TV than I should and try to stay home as much as possible.  I also sleep with the light because I’m chicken like that 🙂

    I actually get a lot done when my Hubby is away. I try to get a lot of my chores done when he is away so I can spend time with him when he gets back.

    I usually watch a ton of chick flicks, mess the house (which I clean right before he walks through the door) and sleep.

    I usually take the time to deep clean the house when my hubby is away and catch up on the shows that I have TIVOed that he does not like…like Brothers and Sisters! 🙂

    I try to see girlfriends and stay as busy as possible when my husband is away. It’s definitely not the same, though! Also, my pup sliced her paw pad in May – it didn’t seem like a big deal but she was limping and licking it so we brought her to the vet. Turns out she needed stitches and had to be off her feet for 21 days. UGH. Longest 3 weeks ever – I hope your pup heals quickly and doesn’t need stitches!

    Cool idea with the burger pocket. I think than lean cabinet offers inspire the best creations!

    Unfortunately, I’ve been the one out of town lately. I love all that I’ve been doing, but I can’t wait to get back and see my boy.

    That spelt burger pocket looks awesome! Sad to say that I lived off of Lean Pockets in college. That looks much tastier and healthier.

    You’re so cute with how much you missed your hubby! I totally get it though – whenever my bf is away I miss him like crazy! And I end up eating a lot more sweets and a lot less meat when he is away 😉

    No worries on the picture taking–its nice not to photo food all the time and just enjoy it!

    Yes–my routine is totally different when the boy isn’t around. I watch more tv and am just a bit lazier.

    Love that sandwich pocket idea! I’m a total weenie when Billy is out of town. I go to bed super early when he’s gone. When he’s here, we stay up much laughing and chatting. 🙂

    When my Hubs is gone I sleep with the lights on too!!! I also usually keep the television on at a low volume just because the silence creeps me out (which means that I’m sleeping on the couch because we don’t have a TV in the bedroom).

    Haha. I just heard a radio show talking about people’s quirky habits when their SO is out of town. One lady confessed to eating a WHOLE PAN of Hamburger Helper. I usually sleep with the light on too and treat myself to some movies that he hates (think: Devil Wears Prada, A Walk to Remember). I also get pedicures 🙂

    I’m temporarily living away from my hubby, which is super hard! My habits are the same basically. I try to get out of the house as much as possible so I don’t get too upset about not having Ryan around. I do watch plenty of tv but I would do that if he was here too.

    Honestly Ryan and I have never really been away from each other. I think we should though so we can appreciate being alone and then appreciate them when they come back 😉

    When I am the only when in the house I sleep with the hall light on. I love the Idea for the dough wrapped burgers! I am going to try this next time I make Lentil Burgers.

    I hear ya…sometimes you just need a BREAK from all the picture taking! That little sandwich pocket looks good. Mmm. And when the bf is out of town, my routine doesn’t change TOO much, but I definitely miss him. Esp if he’s off doing something fun and I’m not!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
