A Little Place Called Aspen

Two weekends ago my amazing husband surprised me with a little trip to Glenwood Springs and Aspen.   He's incredible.  It's true. While we were in Glenwood Springs we spent time at the hot springs pool (stinky, warm, comforting, and WAY too expensive), ate dinner at a great little Italian place, and watched Lord of the Rings (that's how we know he really loves me).  It was so fun and relaxing! The next day we drove to Aspen, about 40 miles away.  The town itself was nice; I kept ... continue reading...

Spinach Feta Biscuits

Confession time guys: I am decidedly addicted to the Spinach Feta Wrap from Starbucks. I never thought I'd hear myself saying that.  In fact after working at Starbucks from 2 years I scoffed at the thought of them carrying breakfast items.  I scoffed the scoffers.  There was NO WAY that they would be able to get those sandwiches out on time and have a warm, toasty, delicious breakfast in my hand in less than 5 minutes.  NO. WAY. And then you know what I did?  I tried one.  I got the ... continue reading...

Pound Cupcakes with Strawberry Buttercream

When I was growing up I was one of the coolest kids I knew. Not because I was actually cool.  It was because out of everyone I knew we were the only family in the world who had a strawberry patch in our very own backyard.  It's true; try not to get too jealous. In all seriousness this strawberry patch was a miraculous answer to the crazy-hot dog days of summer.  The berries that grew didn't have that perfectly uniform strawberry-ness to them that the ones in the store had.  They were ... continue reading...

Oikos Giveaway

Giveaway time! Stonyfield has done it again!  They've come up with an amazing new flavor - Super Fruit with raspberry, pomegranate, and acai.  Here's what they have to say about this incredible new flavor:   "The pomegranate is an ancient fruit commonly found in Greek mythology, and today it’s celebrated around the world for the sweet and slightly tart juice found in the edible part of the fruit. Staying true to its authentic Greek yogurt recipe, Oikos Organic combines the best part ... continue reading...

Deconstructed Warm Bruschetta

If I'm being honest I have to tell you that I don't really like tomatoes. I DO love salsa, fresh guacamole with tomatoes in it, tomato sauce, pico de gallo, and sometimes I like them chopped up in salads.  Sometimes.  And only if there's bacon in said salad.   Oh, and I do love bruschetta.  It's so simple and delicious and brings the true flavors of the ingredients to life. Also, don't judge me...I used basil-in-a-tube.  As much as I love basil and as much as I wish I could grow ... continue reading...

Sweet Cherry Preserves

Do you ever buy - oh I don't know - a pound of cherries and then leave them at the bottom of the fruit drawer and forget about them?  Not that I've done that...um.  Hmmm. OK fine, I did that.  But then along came this amazing recipe from The Cilantropist for Sweet Cherry Preserves.  My cherries were saved! A few days ago I asked on Twitter who had any ideas for pitting cherries without a cherry pitter and got some cool answers, but there's one that I used and it worked like a charm.  Teri ... continue reading...

Peanut Butter Banana-Baked Granola

Sometimes I like to take a break from the butter and sugar and focus on making quasi-healthy food. HOLD THE PHONE.   Did I just say that out loud?  I don't even know who I am anymore!   But in all seriousness, sometimes it's just as fun to come up with recipes that not only taste good and make you smile, but that nourish my body as well.  Makes me feel...oh, what's the word...happy.  Excited.  Self-aware in the good way. Now if you've been reading for a while you know ... continue reading...

Vegetable Enchilada Ravioli

Confused? When I told Nate that I was making this for dinner last night he looked at me with nothing but pure, unadulterated fear in his eyes.  He didn't know what to do, what to expect.   It was touch-and-go there for a few minutes guys.  But I promise, as crazy as these sound they're delicious and you WILL love them.  Promise. Remember a few weeks ago when I faced my fears and made wontons for the first time?  And they came out delicious and heavenly and I am now craving mini ... continue reading...
