Nectarine Cheesecake Bars with Ginger Cookie Crust

I think it's safe to say that anything cheesecake will be consumed by me upon immediate exposure. I've never met a cheesecake I didn't like.  And these bars with the ever-so-subtle taste of nectarines is definitely in that category.  Besides, it's practically health food because it contains 3 whole nectarines and ginger cookies.  And ginger cookies are good for you because I said so.  Say hello to Dr. Disarro! Really though, the moment I got these nectarines from Door to Door Organics I ... continue reading...

Pasta with Leeks, Radicchio, and Bacon

My favorite pasta starts with bacon.  Just as it should. I mean in all honesty I have yet to meet anyone who says, "Ew, bacon is just gross.  Totally nasty.  Zero flavor.  I hate that stuff."  I think that's saying something since most people say that about almost any food for any given reason. But bacon man.  It's where it's at. It also has one of my most frequently underused ingredients that I just happen to adore:  leeks.  Leeks are sweet and savory and delicate and all things good ... continue reading...

Lemon Poppyseed Cream Cheese Cookies

Here's what I believe when it comes to cookies: They must be at max 4-bites-big.  I'm not saying that I don't love larger cookies, but you can eat more of them when they're smaller.  And the smaller ones have fewer calories.  So what if eating more small ones equals one bigger one?  At least it feels like you got more out of the deal! They absolutely must have a crunchy outside.  Let's be honest here, no one likes a soggy cookie.  And if you're the 0.0001% of ... continue reading...

Perfect Summer Dinner

The perfect summer dinner is the thing that my parents always made growing up:  BBQ chicken and pasta salad. Sometimes it was on the grill and other times it was in the oven, but as long as it was getting in my tummy I didn't care.  Still don't! Great, now dinner plans are going to be thrown out the window.  All I want now is some BBQ chicken! ... continue reading...

Spicy Roasted Tomato Hummus

When it comes to food for me the more spice the better.  Or the more butter.  I love 'em equally. You guys probably know by now that I love garlic, but let me still tell you this little story.  Sit back, relax, grab some ultimate strawberry lemonade and get ready for storytime!   When we were kids we would take weekend trips to Albuquerque, NM just to get away and see the mountains.  It was a quick 5-hour trip from Lubbock, and we always had a blast:  we'd stop in Clovis, NM for ... continue reading...

The Newest Member

The newest member of our household is now a white scooter that I like to call Mathilda. Why Mathilda?  Who knows...and I don't even have a good explanation for adding the 'H' in there either.  I just know it's the only name for the scooter that I thought of when we got it. Let it be known that the first time we took Mathilda out and about we went with our neighbor who rode on his Harley.  And he drove us right past a Harley Davidson block party.  We obviously felt very cool as we tooted ... continue reading...

My Very Own Daddy

My Daddy is the best in the world.  It's true. When I was a kid he gave up picking Tina Turner up from the airport to come watch me do 3 forward rolls at a gymnastics showing.   He made to almost every single volleyball, basketball, soccer game AND every local golf tournament I ever played in.   He taught me to have fun, to be sarcastic in a loving way, and to be respectful to authority.   He taught us what it looks like to be a completely loving husband who ... continue reading...

Surprise Chives!

I know I’ve mentioned it on here before but once upon a time I tried to grow my own herbs.  I planted them from seeds.  I watered them, kept the dogs away, and made sure they were in a part of the yard where they would get enough sun.  I lovingly watched them sprout and begin to grow into fragrant teenage plants, dreaming of the day that harvest would inevitably come and I would have fresh basil pesto, dried thyme and rosemary, parsley (which, by the way, I grew because I hate paying for parsley ... continue reading...

Double Fudge Mint Chocolate Chip Cupcakes

You guys remember when I told you about the snowcone shack I worked at when I was in high school/college? What?  No one remembers that?!  It was ONLY my first job ever, where I made some incredible lifelong friends, and where I started to learn about loving food in a restaurant setting.   It was no mere snowcone shop.  It was a haven.  From what?  Who knows...but it was.   Anyway, my beautiful friend Ashley sent me a recipe the other day to try out and HOLY YUM you're going to ... continue reading...

Balsamic Orzo with Grilled Corn and Blueberries

If it seems like you haven't had your fill of grilled corn recipes this summer, grab an umbrella 'cause it's raining hot smoky corn all up in this place. Have I told you guys how much I love orzo pasta?  It's one of those things that Giada DeLaurentiis raves about all the time, but I can distinctly remember thinking, "Woman, who wants to eat pasta shaped like rice?  Just eat the rice!"  But I'm not too cool to admit when I'm wrong.  The orzo love affair is in full bloom, almost to the ... continue reading...
