CAKE. Who doesn't love a great slice of cake for breakfast in the morning? Or for a mid-morning or afternoon snack? Or as the main course for lunch or dinner? Come on guys, I know I can't be the only one. What if I told you that cake had a nice little bourbon glaze going on that penetrates the cake itself and tastes incredibly sinful? That's what I thought! You guys know that I'm a butter-lovin' woman, but there are times that a cake just needs a little applesauce instead ... continue reading...
Grilled Cheese with Ham, Fig, and Arugula
I just had a brain fart on how to spell 'arugula.' My birthday is in 2 weeks. I'm getting old. I tell you what, I have been dreaming of grilled cheese for some time now. Really GOOD grilled cheese with awesome bread, griddled with real butter, on awesome bread. And maybe a little meat because, well, Nate doesn't count it as a meal unless there's meat in there. He'd probably ask where the rest of the dinner was if it was just grilled cheese. I think it's a man ... continue reading...
Roasted Cauliflower and Butternut Squash with Goat Cheese Polenta
And that, my friends, is what you call a title. Yesterday when I was dreaming up what I wanted for dinner my mind kept returning again and again to a recipe that I tried 4 years ago from Eating Well magazine. I remember it very clearly: it was right after I mocked my sister for being an old woman and having a boatload of healthy recipe magazines at her college apartment. And then I stole the magazine. Clearly I am a good big sister. I have to say though, there are some ... continue reading...
Cheesy Baked Spinach and Sausage Pasta
I love trying new noodles. Is anyone else with me on this? There's something about a new noodle shape that I find akin to a new pair of shoes. OK, that's taking a little too far - new shoes are pretty awesome. Maybe closer to trying a new hair product? Exciting and full of promise, but if you don't like it the world won't end and you can always go buy something different at the store later anyway. Yes, that sounds more like it. Although for me, pasta is going to be good ... continue reading...
The Truth
The truth is that I would love more than anything if y'all would enter this giveaway by a company I fully support and love! Oh, and please ignore my awkwardness. Yowzers :) The truth is that last night we got in so late from a photo shoot that it was hard for me to keep my eyes open on the drive back from Denver. Good thing for icy cold water. And Broncos fireworks going off when they scored as we drove by. The truth is that I didn't cook anything last night, this morning, or ... continue reading...
Simple Plumberry Oatmeal
If you guys hadn't heard by now I kind of don't like oatmeal. Except for when I love it. And crave it. And this weekend? I craved it. Here's the thing though...I didn't make it. Instead I made eggs and bacon and cranberry-orange muffins. And dreamt of oatmeal the whole time I was eating them (even though the other three things were pretty stinking tasty themselves). I really don't know if it's the cooler weather looming in our future, the chilly mornings, or just ... continue reading...
In Remembrance
September 11, 2001. I was a senior in high school. I was at early morning volleyball practice, waiting to get my ankle taped, when I watched the first plane hit the World Trade Center. At first I was in shock and didn't really know how to react. I had no connection to New York, the World Trade Center, or anything in the Northeast. And then I saw the second plane hit the second tower. My temper flared and tears formed in my eyes. I still had to sit and get my ankle ... continue reading...

Baked Chile Rellenos
I don't know about y'all, but it took me a long time to love chile rellenos. If I'm being honest, it's likely because I was a total brat and refused to eat peppers or onions for the first 15 years of my life. And all I have to say to that is it's time to play catch-up! Well, you know what I mean. I'm not eating them for breakfast. Yet. The thing with chile rellenos is that they are SO versatile. You can make them with beans and cheese, just veggies, meat, or just cheese. ... continue reading...
Today Would Have Been the Day
I've been scared of today since February. Today was the day that I might've given birth, the due date of our child. And then in February, when that was all taken away, I knew that today would be hard. Tough. Perhaps unmanageable. I can't think of a word to describe how I feel in it's totality. Heartbroken. Angry. Hurt. Terrified. Lonely. And one of the worst, even though I know there's no justification in it: I can't shake the feeling that somehow I failed. Failure. ... continue reading...

Lemon-Baked Salmon with Roasted Potatoes
Once upon a time I ate some salmon that had been pre-frozen. And after said incident I got very very very sick and didn't eat salmon again for months. We won't go into the details of said sickness, but let's just say it was NOT pretty. Not pretty at all. The thing is I don't blame the pre-frozen state of the salmon. I blame the actual salmon itself for being "bad" and treating my gastrointestinal tract like, well, like crap. But the saddest part of the whole ordeal is that ... continue reading...
