We have a lot to catch up on! I'm going to be honest here, I held on you guys for a while. I didn't feel comfortable sharing the news yet and honestly I was still hurting from our miscarriage to the point where we were only OK with telling really close family and friends. The thing is, even if the same thing had happened I would have shared that again, but I wasn't ready. Not yet. That being said here we are and I feel the desire to share with you guys all that has been going ... continue reading...
Creamy Mushroom Stroganoff
First of all, thank you so much for all of your kind words and love that you gave me yesterday for my birthday and for our big news! I'll be posting later today with more details :) But for now, let's talk options. Well, first let's talk about how mushroom and/or beef stroganoff was always one of those dishes growing up that we'd have on a Sunday morning after church and that I dreaded every time. I didn't like egg noodles. I swore up and down and sideways that I didn't like ... continue reading...
Birthday News!
I never thought that my 27th year on this earth would be one of the hardest, most difficult ones ever, but I also never dreamed that I would feel so incredibly loved and happy either. This year (literally starting with September 28, 2010 - my birthday) my Papa passed away, I dealt with trials of self-doubt that I'd never experienced before, we lost our first baby to miscarriage, and my Grandpa passed away. That was all within the first 7 months, and since then I've been dealing with the ... continue reading...
Eggplant Parmesan Lasagna
Let's have a show of hands: who actually REALLY loves eggplant? For me it was one of those grow-to-love kind of things. Previously - and by previously I mean pre-college - I only liked it in eggplant parmesan. Think about it: eggplant slices covered in seasoned breadcrumbs to hide the flavor and fried to hide the texture and covered in cheese and sauce to further distract you from the fact that you're eating eggplant. Hey, sounds good to me! Seriously though...it does sound ... continue reading...
Cinnamon Sugar Roasted Apples
I don't know about you, but when I think about apples I think applesauce. Always. Why is it that my mind is in this rut when it comes to cooking with apples anyway? I mean, I blame it on my mom making the best homemade applesauce from the apples that grew in our garden. I was pretty spoiled in eating that stuff, so when coming up with ways to cook them I always lean to applesauce. This time around though I decided it has to be different. I have to step out of the applesauce ... continue reading...

Southern Style BBQ Shrimp
It's no surprise I'm a Texas girl, and 'round these parts (these parts being Texas and our house here in Colorado) a good BBQ brisket is king. That doesn't mean I'm not going to try other forms of BBQ, other sauces, and other meats/seafood though! I think the saying goes something like, "'Tis better to have eaten BBQ anything than no BBQ at all." I mean, I'm paraphrasing here, but you guys get the gist! The other day I got the KC Masterpiece Southern Style Barbecue Sauce and ... continue reading...
Double Chocolate M&M Cookie Bars
I wasn't actually going to share this recipe today. Then I tasted it. I tasted it and life turned into a technicolor M&M dream and I knew then and there I had to share this with someone. See, M&M cookies are never something that's been a favorite of mine mainly because I don't love M&Ms or other milk chocolate candies like them. I mean, if worse comes to worse and I need some chocolate I'm not going to turn it down, but if I have the chance to be snotty about it and ask for a ... continue reading...
Herb and Wine Baked Halibut
If I were to tell you that it's only been in the past couple months that I've come to love lemon and seafood - would you still love me? I mean, it could just be a hypothetical question - but still. Would you love me? Alas I cannot tell a lie, it's true. I like lemons (lemon bars are my favorite dessert ever) and I like seafood, but the flavor combo never meshed well together until lately. I suppose it's comforting knowing that we're always growing but goshdarnit it would have been nice to ... continue reading...
Poached Pears with Chocolate Sauce
I'm going to go out on a limb here and admit that I still like canned pears better than fresh ones. That is unless you're boiling said pears in wine and sugar. Then those are better. I know, I know - who really likes canned food better than fresh? See, the thing is we grew up having canned pears occasionally for a side with lunch or dinner and I like them! Simple. And I do recall that, as Nate reminded me last night, fresh pears can feel funny on your teeth. Sometimes the texture is ... continue reading...
A New Favorite Thing
Sarah's Sea Salt is one of those things that I didn't really know what to do with at first. My mother-in-law loves to add it to oils for dipping and has tried most all of the flavors, but for whatever reason I was still at a loss. I don't know why - I love flavored oil and bread! Lately I've been using this to season chicken, potatoes, and any manner of vegetables we have in the house. Or just open it up and smell it. You know, whatever. And I have to say, it's ... continue reading...
Farfalle with Lemon Ricotta Cream Sauce
This weekend Ina Garten made crispy chocolate chip cookies and Nate declared his unadulterated dislike for her yet again. This weekend I also watched Ina Garten make a pasta dish with a lemon cream sauce and I declared my everlasting love yet again. She roasts chicken on the bone. She makes a cream sauce with cream. She fresh squeezes lemons, limes, oranges, and any other manner of citrus for her recipes. She only uses room temperature everything when required. Me? I figure that's ... continue reading...
