CAKE.
Who doesn’t love a great slice of cake for breakfast in the morning? Or for a mid-morning or afternoon snack? Or as the main course for lunch or dinner? Come on guys, I know I can’t be the only one. What if I told you that cake had a nice little bourbon glaze going on that penetrates the cake itself and tastes incredibly sinful?
That’s what I thought!
You guys know that I’m a butter-lovin’ woman, but there are times that a cake just needs a little applesauce instead of the fat from butter or oil. Hey, don’t fret – we’re going to make up for it in sugar and butter in the glaze. I wouldn’t leave you hanging like that!
The great part about having applesauce in – ahem – an applesauce cake is that it tastes faintly of apples and is easier to pull together than washing, peeling, coring, and chopping tons of apples. Although I will say that if you happen to have an abundance of homemade applesauce it can only make this better. Trust me. Anything that’s mom’s recipe will be better. It’s the magic of all things mom!
So guys, today I want you to strap on your apron, grab your favorite bottle of bourbon, and get cracking on this cake. Your breakfast tomorrow will thank you!
APPLESAUCE CAKE WITH BOURBON BROWN SUGAR GLAZE
- 1 1/4 cup applesauce
- 2 cups sugar
- 1/4 cup milk
- 1 Tbsp vanilla
- 4 eggs, whisked lightly
- 3 cups flour
- 1 Tbsp baking powder
- 1 Tbsp cinnamon
- 1 tsp salt
- 1 stick (8 Tbsp) butter
- 3/4 cup brown sugar
- 2 Tbsp bourbon
Preheat oven to 350. In a large bowl whisk together the applesauce, sugar, milk, vanilla, and eggs until smooth. Sift into the wet mixture the flour, baking powder, cinnamon, and salt. Whisk together until just mixed. Grease a 9×13 pan. Pour the cake batter into the prepared pan. Bake at 350 for 30-45 minutes, or until the cake is just barely wiggly in the middle and a toothpick comes out mostly clean (it will continue to bake when you take it out). While the cake is baking melt the butter and brown sugar in a small saucepan. When the mixture starts to bubble add the bourbon and cook for one more minute. As soon as the cake is done remove from the oven and poke all over with a toothpick. Pour the hot brown sugar mixture all over the cake, being sure it covers all of the cake. Let cool 5 minutes before serving, but feel free to serve warm!
You know, I say that…your breakfast, lunch, dinner, and all snacks will thank you – especially for the bourbon since it’s Monday!
