Mamma Mia, Here I Go Again

Goodness me I love this movie! I hope that video showed up OK for y’all…I think there’s only one song I’m not a huge fan of!

So, to start today’s post off right, I thought I’d show y’all an overexposed photo of my breakfast yesterday:  a Mama Pea KIND bar and a small Gala apple!

Honestly I’m not sure what happened there…when I was editing the photos it looked fine, and then I put it on here and it’s WAY too bright!  I’ll be checking in on that later, but for now I’m just excited I had a healthy breakfast 🙂  I had a small lunch that was a smoked pork quesodilla that was not photographed because I was too hungry to go out to my car and grab my camera.  Trust me, it was divine!  For dinner we went to The Med for their happy hour (which they have EVERY DAY) and had fun with photos:

Why is Nate so confused/upset?  Probably because he didn’t have any chocolate chip cookies in his hands 🙂  I kind of look like I have a block head here…don’t know why…

Not sure what Chrissy (my sister-in-law) was doing here, but I like the picture anyway!

Ok, enough of that…onward to food!  We had a HUGE array of tapas dishes to choose from, but since we were all a bit full from lunch we split a smattering of them.  We started off with prosciutto & melon:

And some gambas, which was tender shrimp with garlic chips, lime (zest & juice) and olive oil:

Drool.  Janet & Nate split the caprese dish…I love caprese stuff, but not when it’s just in it’s “raw” form like this.  Raw tomatoes kind of freak me out with their texture…

We also had some datiles, which were bacon-wrapped dates in a garlic sauce (insert photo of me drooling all over the keyboard here):

And the huevos rellenos (Harissa-scallion devlied eggs) were to.die.for.

I ordered some baba ghanouj because, well, I love it:

And then we split some margherita pizzas (aka “heaven”)

As you can see, it was quite the smorgasbord of amazing Mediterranean cuisine!  Afterwards we drove up Flagstaff Road in Boulder to the place where we did Daniel & Abbey’s engagement pictures last year:

And then you get to go home and play with some of the images you took that people smoking pot wouldn’t get out of:

We did a few more photos of us while we were up there, so I’ll photographically leave you with a little shot of me…it will probably burn my face into some book editor’s brain and cause them to give me a book deal 🙂

In all seriousness though, it was a great day and I was so glad to explore a little bit of Boulder that I haven’t seen in a while.  Getting out there and hiking around really brought me a lot of joy and made me thankful that we live in such a beautiful area!  When we got home we watched I Love You, Man…well, that is until we were rudely interrupted by a beer bottle exploding all over our kitchen! Turns out one of Nate’s homebrews had a little too much sugar and therefore too much carbonation.  Took a while to clean up, and we will now be storing all non-refrigerated beer in the garage 🙂

I know it might be a bit early, but does anyone have fun plans for Memorial Day next week? I think I’m going to come up to Boulder and watch the BolderBoulder race that some friends are running in, go hiking, and pick up some heartworm meds for the puppers.  And yes, that’s exciting for me 🙂

    We don't have any Memorial Day plans yet. My husband's birthday is a few days after it, sooo everything is up in the air at the moment. hehe

    Your pictures make me happy. The Rockies are so gorgeous in the summertime. I’ve always gone in the winter but now I’m thinking I might have to change that.

    No set plans for Memorial Day, but something will come up. 🙂

    Hi Heather. Just stumbled upon your blog and was thrilled to read about the Med. I was in Boulder last month! I also ate tapas at the Med including the Datiles (the best!) and the magherita pizza. (yum!) Your pictures are gorgeous and I just want to say I love where you live! Just how much is detalied in my Boulder posts!!

    What a beautiful weekend you had. I love Colorado and all of it’s splendor. We usually go through Colorado every other year on our way to NE to visit relatives and I am always in awe of the beauty there.

    For the holiday weekend we are planing on hanging out at home and cooking on the bar-b-que.

    So glad I’m not the only one to feel that way about tomatoes. I like them cooked, but not a big fan of a raw tomato and the bigger they are the worse I think they are. That pizza looks delish!

    I have had photos look different for me too when I post them. Let me know if you figure out why! I love all of yours. The food looks incredible! We have no plans as of yet for next weekend, but that is mostly because my husband is on crunch time for work…have fun on your trip!

    We’re leaving that Mon on our yearly camping trip to King’s Canyon in central Cali. I LOVE camping there. The sound of the river is SO loud, you have to yell if you’re more than 15 feet apart. Since I couldn’t hike last year, I am REALLY REALLY looking forward to that. Can’t wait to be among the trees for almost a whole week !! *sigh* I’m a total nature nerd and living in the suburbs of So Cal my whole life really makes me appriciate each time my husband and I can get away 😉 sorry for the novel HAHA Can you tell I’m excited ?!

    Yes! I have 4 different parties to go through over the course of Memorial Day weekend, AND I’m getting together with my 4 best girlfriends from college for an afternoon of lunch & Sex & The City movie 😀 I can’t wait!

Just two gals who crushed a 50 minute run today! Just two gals who crushed a 50 minute run today! 

As we move into goal setting for the new year, may I suggest starting with your physical health? Not to fit the bikini body mold that society normalizes, but to actually BE as healthy as possible. When everything hit the fan for me this year I dug into two things that have been integral to creating positive growth and a healthier mindset: 

1️⃣ my relationship with God
2️⃣ my physical health

What that’s looked like for me on the health front: holding fast to my commitment to whole food nutrition, grace for the days when I choose otherwise, pushing myself to lift heavier in workouts, and taking up running again. 

What’s happened as a result? When I push myself physically, when I choose to practice discipline to do what I know is best for my body, it makes it infinitely easier to choose that same healthy discipline in every other area of life. You want to dominate your goals? Start with your health!
Remember when I blogged about food? 😂 Gosh the Remember when I blogged about  food? 😂 Gosh the past few months have been nuts. I’m still over here figuring out how to eat well without sacrificing my life in the kitchen, and this is a bowl I couldn’t NOT share with y’all. The best thing is that everything is almost always on hand in my fridge, it’s packed with nutrition, and tastes AMAZING!

In the bowl:
-rice mixed with Trader Joe’s Zhoug sauce
-broiled shredded Brussels sprouts
-chickpeas
-baby  arugula
-grilled chicken breast
-Romesco sauce (from Trader  Joe’s but I usually make my own)
-a little  tzaziki sauce

This meal has been on repeat all week, only changing the rice for riced cauliflower and omitting the chickpeas on low carb days. YUM! I find that if I have a variety of roasted veggies, grilled chicken, and a few different sauces on hand I can almost always come up with a great bowl for almost any meal!

3 things you can do RIGHT NOW to improve your day: 3 things you can do RIGHT NOW to improve your day:

1️⃣ SMILE! Even if you don’t feel like it, smiling (even forcing it to the point of feeling weird) has actually been scientifically proven to improve mood, lower stress, and boost your immune system. I actually recommend doing it awkwardly around other people because it’ll make them smile too 😉

2️⃣ GRATITUDE! Right now, before you talk yourself out of it, say or write 3 things you’re thankful for. Big, small, or in between. In this moment I’m going to say sticky notes, my Le Creuset Dutch Oven, and the Hamilton soundtrack. BOOM!

3️⃣MOVE! Get up off your tush, right now, and move your body. Walk around your house, do some jumping jacks, lock yourself in the bathroom and do a little dance, whatever. This isn’t about looking cool, it’s about giving yourself a better day. 

Things are hard, ambiguity and uncertainty isn’t fun, but we can control ONE THING: ourselves. Praying that you choose to gift yourself a little bit of happiness today!
