Salted Banana, Peanut Butter and Chocolate Toast

Salted banana, peanut butter and chocolate toast is a great afternoon pick-me-up that won't let you down. Choose your favorite bread, toast it perfectly, then layer on the toppings!

I'm sure this post is going against all the things that people say food bloggers should stop doing, namely creating "recipes" for something that's hardly a recipe at all. But you know what? I don't care. I'm not saying I'm the first person to ever enjoy this particular snack, but if it gives someone else inspiration for a delicious little pick-me-up then it's all worth it.   Just call me an outlaw. I'm OK with it.   Seriously though, toast has been a thing for me lately and ... continue reading...

29 Weeks

29 weeks pregnant

HOW FAR ALONG ARE YOU? 29 weeks today! We're in the third trimester, which is mind-blowing to me.   GENERALLY FEELING:  Really really really tired and really really really pregnant. Chasing a toddler around this time is definitely making pregnancy a lot harder than working an office job was the first time around. It's just much more physically exhausting, not to mention emotionally challenging too. I wouldn't trade it for the world, but it's not something I ever thought about in the ... continue reading...

Mustard-Roasted Sablefish Spinach Salad

Mustard-Roasted Sablefish Spinach Salad is a nutrient-dense and flavorful lunch or dinner.

Y'all, this happened when I was pregnant with Weston. An obsession that came out of nowhere, an unreasonable craving for all things...SALAD. Mind you I'm not complaining, and I'm sure my waistline will be pretty psyched after baby dude #2 comes. BUT. I can't find great salad ingredients anywhere because, for the most part, everything is out of season.   Le sigh.   However, it's really not stopping me when it comes to getting my veggies in. I can eat - and I wish I was ... continue reading...

Honey-Sweetened Applesauce

Honey-Sweetened Applesauce is a delicious snack or condiment that you can feel good about eating. Use local honey to up the immunity during allergy season.

Applesauce. I love the stuff, especially when it's homemade and deliciously spiced with ground cinnamon and nutmeg. My mom used to make it all the time with fresh apples from the trees we kept in our garden, and on weekends we'd serve it on top of hot pancakes or waffles with a dusting of powdered sugar.   It's memories like that that make me realize how important food is in the makeup of very sweet memories. When I think of homemade applesauce I think of chilly fall or spring ... continue reading...

It Was Me All Along

It Was Me All Along

I've been thinking a lot about New Year's resolutions lately; what a novel idea, right? The older I get the more my resolutions evolve from the typical "lose weight" to "eat healthier" to "take care of yourself."   I've been a fan of Andie's blog from the beginning; her honest, beautiful writing hooked me immediately, and her recipes are top-notch. When she announced a book deal I cheered her on silently from behind my computer screen, and then followed her writing journey intently. I ... continue reading...

Better Together

It was pouring rain outside the moment I knew I wanted to spend the rest of my life with Nate.   It was also the absolute worst day of my 20-year-old life to that point. Pouring rain, fights with friends, bad grades and more - all came to a head on that one day. On my way home from the gym I hit a pothole in the rain and my tire blew up. I called him.   And he came to help.   It was then that I realized I could count on him to love me and take care of me, and ... continue reading...

Spicy Garlic Collard Greens

Spicy Garlic Collard Greens are a healthy, beautiful and easy way to get more greens in your diet.

Want to know a secret? I'd never had collard greens until I was well into my 20s.   But that's not the half of it.   Y'all, the first time I ever had collard greens? Was when I was living in Colorado. Yes, I admit, my first introduction to this Southern staple was in what can only be called a West-Coast state. And if only to add insult to...insult (?) I'm here to present collard greens without pork. I KNOW. I'm a huge fan of them with ham, bacon, or really any other ... continue reading...

A New Rhythm: Date Night In

A New Rhythm: Date Night In

I remember the days when I scoffed at people who said married life with kids was hard. I mean really, how hard could it be? You have a kid, you get a babysitter, you go out and still live a normal life. Right? Turns out the ever-present "they" were right: it's hard. Really really hard. And, while completely worth it, you'd be crazy to think that date nights and romantic evenings won't change when a child comes in and turns life inside out. Even on the nights that we have a babysitter it's ... continue reading...

27 Weeks

27 weeks pregnant

HOW FAR ALONG ARE YOU?  27 weeks and 1 day - can you believe we'll be in the 3rd trimester next week?!   GENERALLY FEELING: All the emotions, all the time. And tired. Lots of exhaustion. I think that's probably a sign of the past couple of weeks wearing on me (holidays, losing my uncle, stress) plus the fact that this time around I'm chasing a sweet little toddler too. It's been a much more physically exhausting pregnancy for that very reason, which is a good one, but still not ... continue reading...

Soft Boiled Eggs

Soft Boiled Eggs are the new trendy and fabulous way to eat eggs all day every day. Breakfast, brunch, lunch, snacks, dinner - got you covered.

I just realized I haven't updated you guys on something: I actually passed my 3-hour glucose test! To say I was in shock is an understatement. I am really excited, but am still planning on doing the lower-carb thing anyway because truth be told I could eat my weight in bread forever and ever amen.   Anyway, last time with Weston I had scrambled eggs for every.single.breakfast for the last 3 months of the pregnancy. Needless to say by the end I couldn't handle any more scrambled eggs, ... continue reading...

Just One More Day

Hello my sweet friends! I hope you guys had the best Christmas ever. It's been such a busy, emotionally-charged season for me and so I'm taking today as an extra day off from work. After a weekend celebrating my uncle Phil, spending time with family, dealing with unexpected snow, and toddler tantrums we're in need of a little more rest. But fear not! Because I have a pretty incredible and life-changing recipe coming your way soon. Hint: all you need are eggs. And love. Always ... continue reading...
