Cha-Cha-Cha-Changes

Happy Hump Day everyone!  I hope y'alls mornings are going fabulously :) Last night's dinner was at Fazoli's again since we were in a huge hurry and it was right across the street from the church the concert was at!  I had the baked spaghetti: It was OK, but covered in WAY too much cheese!  If I'd known that I would have just ordered the regular spaghetti.  I still ate it all though.  That and a couple of breadsticks!  Woohoo for carbo-loading!  We got to the concert and sat in the second to ... continue reading...

Too Full for School

Hey guys!  How are y'all?  I feel a massive weight lifted off of my shoulders:  I made a doctor's appointment today to have my knee checked out.  Come lunchtime on Thursday I should have an inkling of what's going on in there! Today I've eat 2 bowls of food that have kept me positively stuffed all.day.long!  First my quinoa cereal this morning, and then at lunch I had a makeshift mole bowl with some leftovers from last night: The base is about 1/3 cup brown rice, 2 Tbsp black beans (that's ... continue reading...

Birthday Dinners and Concerts

Marnin' :)  How are y'all this fine Tuesday morning?  Other than being a bit sleepy I'm doing really well! Last night's dinner was a blast!  I was so excited to try something new with the chicken mole bowls.  But first I had to play with my food...that's what bloggers do, right?!  Plus you don't get perfect avocados like this just any day of the year, so I had to do a portrait of it :) I used 3 of those guys for a chopped guacamole salad (super easy - recipes are all at the end).  And the ... continue reading...

Smoked Cheese, Please!

Howdy ;)  Hope y'alls Monday is going well thus far!  I know mine's been really reeeeeeally slow, but it's still a welcome break from our busy season!  I'm glad to hear y'all are liking the review of French Women Don't Get Fat too!  It's one of my favorite books and has a way of continually teaching me to love myself and treat my body with respect :) Lunch today was a weird combo, but I loved it nonetheless!  I had a couple of pieces each of smoked cheddar and smoked gouda.  Both cheeses were ... continue reading...

French Women Don't Get Fat Review

Good morning everyone!  Hope y'all had a fabulous weekend...I know I did!  Only problem is it went by too quickly, as always. Yesterday was SUCH a gorgeous day!  It was sunny and about 75 degrees when we got out of church, so we grabbed sandwiches at Quizno's and headed to a local park with friends to relax in the sun.  I got a Turkey Bacon Guacamole on wheat: Bacon.  I adore it, and there's no denying that.  But when you pair it with guacamole and fresh veggies, I really don't know if it gets ... continue reading...

100K

Happy Sunday everyone! This has been a great weekend so far, and I'm just sad that it's going to be over at the end of today :(  I love that all of you are so interested in a review of French Women Don't Get Fat and the "rules" that I've garnered from it, but this morning I'm in a bit of a hurry and I want to be able to spend some quality time on that one.  My plan is to do that tonight and post it tomorrow morning! Let's backtrack a bit to Friday night.  Nate was playing poker with a bunch of ... continue reading...

40 to 5

I lost.  :( Yes, it's true, I am of the "A" camp for the Great Toilet Paper Debate!  But to be fair, that's how my sister and I grew up.  When Nate and I were dating, I would go over to his house to hang out and would need to use the restroom sometimes.  Being the college boy that he was, rather than putting the toilet paper on the roll, he would just leave it on the counter next to the toilet.  Whenever I would use the restroom, I would put it on the way I had always put the toilet paper roll ... continue reading...

Sconehenge 2010

Happy Friday Morning y'all!  We'll get to the title in just a sec (along with a fun poll!)  But first, dinner last night! We had honey-mustard glazed salmon, brown rice risotto cakes, and a big green salad!  Here's the non-colorful portion of the meal: The glaze for the salmon was super simple:  2 tsp dijon mustard, 2 tsp honey, 1 tsp olive oil.  Coat the salmon in that mixture then cook in a skillet over medium-low heat for about 3 minutes on each side.  SO GOOD! The risotto took a LITTLE ... continue reading...

The Cruelest Game

Hey guys!  How's your day?  I know I'm enjoying a fabulous warm day in Colorado! Today for lunch I decided to try my hand at low & slow potatoes IN THE OFFICE!!! What a yummy lunch it was too...I just used the toaster oven when no one else was using it and baked away!  Honestly, these were the best low & slow potatoes I've had.  Just look at that sweetness oozing out: Served with bbq sauce it was a great meal :)  During my break I walked for about an hour (knee pain again, ... continue reading...

The Calm After the Storm

Happy Thursday everyone!  I hope yours is going as well as mine is thus far :) Last night's dinner was a little something I made up called Roasted Shrimp, Tomato, and Ricotta Pasta: First of all, let me iterate that I love pasta.  Adore it.  Would eat it for just about every meal if my husband would let me!  Here's the recipe: 2 cartons of cherry or plum tomatoes 4-5 cloves garlic, left whole and in their skins 2 Tbsp olive oil, divided 40-50 small raw shrimp, deveined and tails removed, ... continue reading...

Summer Texan

Hey guys!  How's it going?  So that snow from this morning?  GONE. No more!  Colorado is quite crazy :) My stomach was grumbling a little before lunch today, so I finally gave in and made a bag of that 100-calorie popcorn with seasoned salt again.  Twice in one week MUST be a record for me! As suspected the snack didn't really hold me over, so I figured I might as well make lunch.  Today I had some leftover chili from a while back that I had frozen.  I thawed it out over a huge handful of baby ... continue reading...

French Chocolate Heaven

Y'all.  I don't know why I don't live in France. I mean, forget the whole I-don't-speak-French thing, the fact that I've only lived in Texas and Colorado my whole life, the lack of job opportunities (not that I've looked...or have I?).  Or even the fact that I could NOT bring myself to load the puppies up in a crate for a 17-hour plane ride over.  A move like that would take only one form of inspiration:  chocolate. And not just any chocolate, but chocolate with all sorts of delicate and ... continue reading...
