Blog Love – Mud Hen Bars

You know when you find a recipe that you just HAVE to make and so you go out that same day and buy all of the ingredients?

That’s what Maria’s Mud Hen Bars recipe did to me.  You guys know I’m a sucker for beating egg whites into oblivion until they form that creamy, silky, shiny thing known as meringue.  True story…it makes me feel like I accomplished something that day.

 

You know, like, “What did you do today?”

 

“Oh, I slept in, didn’t do laundry, my kitchen is a wreck and my dogs are hanging out outside for a bath that they might not get…but I beat egg whites for a meringue goshdarnit.”

 

It’s impressive, I know.

I will say though, as much fun as meringue is to make is sure is hard to cut!  I don’t know how Maria got her squares so perfectly cut, but I say the messier the better.

 

You know things usually taste better when they’re messy right?  Oh, and you can eat more because, well, you just don’t know if that piece of meringue went with this bar or that and you don’t want it to go to waste.  Heaven forbid it ever have to go with a bar that it wasn’t cut with!

So the verdict?  These bars were every bit as good as I had hoped.  The cookie crust was crispy but gooey on the top from the marshmallows and chocolate, and the meringue?

 

Well, I think we know how I feel about that.  My heart started a-fluttering when I started to write that word.

 

Meringue.  Happy shivers down my spine!

    Not that I know a thing about meringue but maybe if you add it in for the last 5 min of baking, then cut it into squares right away before it cools & hardens….I’ll let you know when I give these a try. Because they are totes calling my name! 🙂

    I made my first meringue at the weekend – I tried my mum’s recipe for lemon meringue pie. Didn’t quite turn out as I remember it, but the meringue was pretty good on it’s own!
