Cousin Carrie’s Perfect Pork Loin

Some of you are going to think I'm crazy, but that's OK.  Make this and my lunacy will suddenly disappear! Now I've said it before and I'll say it again:  I truly hate mayonnaise.  I don't like the texture, I don't like the smell, I don't like the taste.  The first time I heard about this dish from Nate's cousin Carrie I thought I was going to gag...good thing I'd already tasted it and LOVED it!  If I hadn't you can bet there's no way I'd ever make it again.   It's a lot like that ... continue reading...

A Sad Story

SOOOOOO sad story time:  yesterday was Thanksgiving, and while there were many thanks given we ended up staying home all day because Nate was incredibly sick.  Like nausea-vomiting-achiness-fatigue sick.  According to him, he's never felt that terrible before so we ended up staying home and I "took care of him" meaning that I hovered and probably asked him too many times what I could do to help him.  The good news is that he's feeling 100x better today after a long night's sleep and a ton of ... continue reading...

A Thanksgiving Prayer

IF THE ONLY PRAYER YOU EVER SAY IN YOUR WHOLE LIFE IS "THANK YOU" THAT WOULD SUFFICE. -Meister Eckhart God, thank you for the enormous blessings in my life.  Thank you for my amazing family who loves and supports me no matter what - always has and always will.  I never doubt their love for us!  Thank you for the puppies that bring joy to our lives every day, who unabashedly love us even when we're cranky and tired.  Thank you for our beautiful home, that we have a roof over our heads ... continue reading...

Baked Mustard Chicken

I know what you're thinking.   Why on earth am I posting a chicken recipe the day before most of the nation gorges themselves on turkey and sides?  Aren't we going to eat enough protein tomorrow to last us the rest of the year?   Well, yes.  But the answer is because I want to, because this chicken dish is RI-DIC-U-LOUS in how easy it is, and the flavor is off the charts.  Capiche? P.S. I just feel like I need to confess that tomorrow I'm making mashed potatoes (Pioneer ... continue reading...

Buttery Brown Sugar Pecan Cookies

I didn't always love pecans.  No sirree, I hated the things.  I didn't like the dryness in my mouth after eating them, I didn't like cracking the shells (because let's face it - the shells sometimes look too much like the actual nut and, well, it's not that easy to chew.  Trust me), and I didn't like the flavor.  This story is old news though - you guys know already that my love affair with pecans began when I first tried them toasted and always ALWAYS in Mom's pecan pie. Another thing that ... continue reading...

Creamy Butternut Squash Macaroni & Cheese

This past Friday I watched Friends for the first time in months.  It was the one with the Unagi.  We know this can only lead to good things. Nate is shocked that when Friends first came out I wasn't allowed to watch it, but I have to say that I'm thankful that my parents only let us watch things like Full House and all the of the fabulous shows on Friday nights.  Oh, and Fresh Prince, which I am convinced I will always know the theme song too.  I picture a 70-something-year-old me rapping ... continue reading...

My Go-To Pregnancy Products

Since becoming pregnant I've heard and seen a LOT about products to make things easier and healthier for the mommy to be, and I have to say that there are not very many that I use or have been consistent in using.  Here are just a few of the things that I've been using since finding out that I was with child and what I think about them: Vitamins/Supplements There are a LOT of options when it comes to vitamins and supplements for moms to be and quite honestly I would prefer to get my ... continue reading...

Butterball Winners!

Wow, you guys are seriously a huge wealth of Thanksgiving tips!  I loved every tip - especially things like "Don't be afraid to ask for help in the kitchen."  Yeah, someone (ahem, me) can be a little too - uh - proud sometimes.  Definitely needed that reminder!   So without further ado, here are the two winners of the Butterball turkey coupons: Thank you so much to everyone again for participating.  Amy and Kathy, please email me at heathersdish [at] gmail [dot] com with your ... continue reading...

Cranberry Orange Coffee Cake Loaf

I don't know about y'all, but cranberry orange is one of those flavor combinations that wakes me up better than a 6-mile run in the morning. Just so we're clear here, I am NOT running while pregnant.  I wasn't doing it a ton before, so it didn't make sense to try to keep training after I found out.  Which is precisely why I need cranberry orange coffee cake - no caffeine, no running - what's a girl to do?   All I have to say is thank the Lord for orange zest with its bright color ... continue reading...

My Favorite Thanksgiving Tips

Ah Thanksgiving.  I remember back in the day when holidays were stress-free and I didn't have to do anything except beg my parents to watch the Macy's Thanksgiving Day Parade and fall asleep to the football games later in the day.  There was no cooking, no cleaning, no parties or planning around different family events.  And no work.  Most definitely no work. Now though?  Turns out 28 can be a hard age to be when you live away from family, have a blog, and a ton of friends that you want to ... continue reading...

Baked Beans with Bacon and Chard

Chard.  The name alone instills fear in my heart of hearty greens gone slimy, a weird earthy taste, and a stomach begging for a nacho or two.   Just one nacho.  PLEEEEEEEEEEEASE!   However I've never been a woman who is afraid to admit she's wrong.  Unless it's admitting that to my husband of course.  He doesn't need to know the one time a year it happens!  Really though, I was wrong about chard.  I may not love it sauteed or raw, but toss it in some baked beans with bacon ... continue reading...

Brown Butter Vanilla Cupcakes with Lemon Frosting

Butter makes it better.  Brown butter makes it best.  It's science. When I made these cupcakes it was in the middle of a massive sugar craving and, well, I think I made too many.  We've been eating cupcakes for breakfast lunch and dinner all week.   OK that might be an exaggeration...but even if it weren't I wouldn't be complaining.  Everyone knows you can only have cupcakes for breakfast when you're a grown-up!   Anyway, last night while obsessively watching New Girl ... continue reading...
