I kept a secret from you guys. I'm sorry. The secret is this: for several weeks I was OBSESSED with kale. And I didn't tell you. I didn't tell you that I made kale chips and ate them almost every day. Or that I sauteed it with garlic and olive oil and served an egg on top. Or that I stirred it into soups, processed it into sauces, or any of that. But I'm hoping that now, with this recipe, you'll be able to forgive me because I'm about to rock your kale world. Just thinking ... continue reading...
Week 6: So Much Fun!
Six weeks. WOW. I never thought that time could fly this fast, and that our little tiny baby would be this big! One of the coolest and most heart-melting things this week has been TONS of smiles and little baby giggles and chuckles whenever we dance and sing and interact with him. I know that last week was the beginning of the actual smiles, but there are so many more this week and my heart literally melts whenever I see him give us a big toothless grin! The funniest part is that try as I ... continue reading...
Greek Yogurt vs. Regular Yogurt: Is One Really More Nutritious?
I'm so excited to introduce y'all to Amanda Russell, a beautiful and talented trainer that has a fantastic YouTube channel with tons of great workouts and lifestyle advice. You can also check out her website where you'll find information ranging from beauty to fitness to relationships and everything in between. Today she's offered to write a great article about the differences between Greek yogurt (an obsession of mine) and regular yogurt. Enjoy! I LOVE Greek Yogurt! Yes, it’s ... continue reading...
Blog Love: Roasted Potatoes with Budget-Friendly Pesto
You guys. This is probably the most addictive thing I've made in a loooooooooooooong time. I mean, it's totally normal to just spoon pesto into your mouth, right? I sure hope so because I've kind of been doing that...all.week.long. Speaking of addictive, I just can't get enough of potatoes lately. When I was pregnant I wasn't eating them a lot because the starchiness wasn't stellar for my blood sugar (they're not bad, but I found I could eat more food if I stuck to non-starchy ... continue reading...
Amazing Grace
When you're pregnant everyone always says to read to your baby, let your baby listen to music, sing to your baby and talk to it too. I never really understood why it's suggested that you do all those things, or honestly where anyone would find the time. It seemed hard enough to find time to sleep and eat when I was pregnant and working a full-time job, but finding time to sit down and read/sing/talk to the baby seemed almost impossible. That being said, I made the time and every ... continue reading...
Fudgy Gluten-Free Brownies
I know I've told you guys about my reason for gluten-free baking lately. I had (notice the past tense here) gluten-free flours and wanted to use them up. So I did...and now I wish I had more. But I suppose I'll settle for regular ol' gluten-laden flour instead. These are seriously addictive and, I'll admit, a little crumbly because of the coconut flour. If you have another flour like brown rice flour then that might help, although I won't pretend to be an expert ... continue reading...
Baked Apple & Cheddar Grilled Cheese Sandwich
Sometimes I don't like to post recipes. OK that's a lie...I love to post recipes. But sometimes things that I make aren't really "recipes" per se - they're more of a method + a whimsy = delicious. That's sort of what we have here today - an idea gone rogue in my kitchen that ended up being a super-grown-up take on my favorite grilled cheese. I figure if I'm going to be a mom and responsible for another human and all that jazz, maybe kicking up the ol' palate would be a good ... continue reading...
Week 5: Growing Up Too Fast
Per the usual, I really can't believe that Weston is 5 weeks old now. 5 weeks! That's practically a teenager! This week has been full of ups and downs, but ultimately I have been falling more and more in love with our little guy every day. He's a handful and quite the stinker, but I think I already knew that going into this. I mean, I know his mom and dad after all... After last week's visit to the doctor it was obvious that he's been growing like crazy, but all of a sudden ... continue reading...
The Ultimate Slow-Cooker Shredded BBQ Beef
What I'm about to show you should be illegal because it's so easy. In fact, it may just BE illegally easy and here I am risking my life as I know it to share it with you guys. You're welcome. You know, in advance before I get locked away. Not that I'm dramatic or anything... In all seriousness though this is the easiest dinner I think I've ever made. You literally whisk the sauce together, pour it over the meat, let it cook in the crockpot all day and then shred and enjoy. ... continue reading...
Blog Love: Almond Cookies with Chocolate Filling
Someone please tell me I'm not the only one who cooks off of my iPhone? See, the way I figure it is that as a new mom and with VERY limited access to computers, pens and paper, my phone is kind of the best thing I have in terms of communication these days. Funny, because isn't that what phones are supposed to be anyway? Regardless, here I am blogging, tweeting, Facebooking, and the like from the palm of my right hand. Speaking of which, I'm sorry if I've emailed you, commented on your ... continue reading...
Simple Blackberry Sauce
As promised, the blackberry sauce has arrived! It's funny how my brain works these days: I'm in constant use-anything-and-everything-we-have-on-hand mode. Perhaps it's the cost of diapers? Or baby wipes? Or seeing the RIDICULOUS hospital bill (I will never go into things like finance or politics on the blog, but OMG. That's all I have to say about that bill). Or, since I made this sauce pre-Weston, it's possible that I was just in the height of nesting mode. Either way, I ... continue reading...
Creamy Ricotta Cheesecake
I have a confession to make: this cheesecake? It was wonderful - oh so wonderful - and I need to tell you guys that I haven't made it recently. No, this was a concoction whipped together in a frenzy during the last days of my pregnancy. In fact, I believe that I made this literally 2 days before I was induced. It was kind of a I'm-so-stressed-that-I-haven't-gone-into-labor-yet fix. I needed cheesecake. And I needed it RIGHT THEN. And you know what? Sometimes the best things ... continue reading...
