Blog Love: Almond Cookies with Chocolate Filling

Someone please tell me I’m not the only one who cooks off of my iPhone?

See, the way I figure it is that as a new mom and with VERY limited access to computers, pens and paper, my phone is kind of the best thing I have in terms of communication these days.  Funny, because isn’t that what phones are supposed to be anyway?  Regardless, here I am blogging, tweeting, Facebooking, and the like from the palm of my right hand.  Speaking of which, I’m sorry if I’ve emailed you, commented on your blog, or otherwise have said something totally weird…let’s just chalk that up to either sleeplessness or autocorrect.  Mmmmmmk?

Regardless, I have a running tab on both my Pinterest boards and the notepad on my phone with links to recipes that I read and subsequently drool over during our midnight feedings.  And then I decide at the very last minute that I need to make them.  And y’all?  When I saw these fabulous Almond Cookies with Chocolate Filling from With Style & Grace, I knew I had to make them.  KNEW.

See, my sister (sorry Salah!) left some almond flour at our house during the time that Weston was born and I decided that rather than send it back (I promise I’ll pay you back Salah…) and pay for shipping I would just honor the fact that it was residing in our pantry and make something with it.  The problem is that unlike my sister I am not gluten intolerant and therefore have absolutely no real experience in having to make gluten-free treats, thus rendering almond flour a big fat mystery.

And then I saw this recipe.  And then I made it.  And then I wished that there were more almond flour in our house.

Y’all.

These were INCREDIBLE!  Super simple, delicious, chewy, nutty, chocolatey (well, maybe not chocolatey for the ones I put strawberry jam in…).  Plus there’s no added fat to them other than what’s in the almond meal and chocolate.  Who wouldn’t want that?  I mean, that practically means you can have a whole batch for a meal.  Right?

Right.

Just click here for the amazing recipe and be prepared to have your mind blown!

No ianything in the kitchen for me or I risk dropping it on the floor or covering it with flour. And I got my first iphone this year and don’t know how to use it for anything but phone. But these cookies are fabulous! I really have to make them for my boys….

I borrow my husband’s iPad to use in the kitchen all.the.time. Except I don’t have a cute newborn as an excuse…mine is just sheer laziness. 🙂 These cookies look amazing. I have yet to conquer my almond-flour baking fears.

No you are not the only one who cooks off your phone (very old droid non-iphone phone, I do it all the time! It’s easier then dragging out the printer and hooking it up to the laptop, or dragging the laptop into the kitchen.
And congrats on Weston! I have had multiple miscarriages and it always makes me so happy to see someone else who has gone through a miscarriage go on to have a happy, healthy baby! Much love to you and your little family 🙂
