Good morning guys! Sorry for being MIA yesterday, but it was such a great day outside that it would have been silly for me to sit near my computer!
Friday night we had our friends Robbie & Stefanie over for dinner and some quality time in the hot tub!
Bunker was there too…he was kind of a pain, barking and acting out all.night.long. If you look closely you can see the crazy glint in his eyes!
We decided to make quesadillas and/or nachos! I went with a quesadilla with zucchini, yellow squash, and Mexican rice. The squash was easy: slice really thin and saute over medium heat for 3-5 minutes.
Nate took care of the chicken for the nachos the others decided to have:
Basically dinner was the quesadilla served with some awesome guacamole:
And I might or might not have had a margarita to go with this!
It was really good! I think the mix was On the Border, and it was sugar free, so I didn’t feel super bad drinking it 🙂 After dinner we all went out and sat in the hot tub with a fire in the fire pit. It was so great to just relax with Robbie & Stef…they’ve been some of our best friends ever, and we always know it’s going to be a good time when we hang out!
Nate let me sleep in until 10:00 Saturday morning!!! I haven’t slept in that late in a SO long, and it was really nice to fully rest. He also was amazing and cleaned the kitchen from Friday night. He’s such a sweetheart 🙂 AND he took me on a date to IHOP! I was so excited, I think the last time I ate at IHOP was maybe 2 or 3 years ago. We started with some coffee:
I think Nate was shocked and awed at how incredible it was 🙂
We played with the syrup bottles too. I remember when my dad used to take us there I would get so excited about having the array of syrups to choose from 🙂
Apparently Nate loves the syrups too!
We each got one of their specials, which were all centered around new flavors of hash browns. I got the ham, mushroom, and Cheddar with no ham, extra mushrooms, and scrambled eggs:
And Nate got the bacon and Jack cheese ones with scrambled eggs (I was so jealous of the bacon!!! Also, he only ate about 1/4 of the sour cream they dolloped on top):
And then we each had a little stack of pancakes that came with the meal too:
You better believe I ate ALL of that food! It was so good, and I figured that we don’t eat there very often, so I just went for it. I was full, but it definitely lasted me the rest of the day! We stopped at the Habitat for Humanity store on the way home to see if they (perhaps) had any sort of cinder blocks or brick for cheap. We’re planning on building a little shelter for our smoker because come spring and summer we are going to be entertaining as much as possible! The plan is to get the backyard looking good beforehand so we can actually follow through 🙂 I also got to talk to my parents today, who I miss so much, and then we started in on the cleaning. We took a desk and the old TV over to Amy’s (she needs furniture for her basement), and then got started with the new filing system and cleaning up the office. It was hard, but once we got started we just kept plowing right along! We did stop for a few minutes to make coconut butter HEAB-style:
It totally works! I can’t wait to play with it 🙂 The thing is I guess I didn’t buy enough coconut, so I’m going to have to go get some more soon so I can fill up the jar the rest of the way! I also made some pita pizzas for dinner:
Mine has marinara that I added shredded zucchini and yellow squash to. Basically I just grated them on the cheese grater, squeezed out the water, and sauteed (no oil) for a few minutes, then added the sauce. Topped with cheese and I was mmmmmmm-ing my way through! Dessert was this over-the-top tasting bowl of awesome:
It’s Angela’s Fudgsicle Soft Serve!!! Y’all, there are no words to describe this. Nate said it tasted like a banana split in his mouth…that’s how good it is! It’s a frozen banana, a glug (as Angela says) of milk – I used nonfat cow’s milk, and 1 heaping Tbsp of cocoa powder. I processed it for about 3 minutes, then let it sit in the freezer for about 30 minutes, then processed again. AWESOME. I will likely be making this many more times!
I hope y’alls weekends have been going well so far! Mine has been truly amazing and very restful. There are times I forget that my knee is even injured! Woohoo!
What’s one of your favorite memories from college? You can answer this even if you’re still IN college! I was remembering today how my good friend and roommate, Kristin, and I used to go to IHOP. She would order pancakes with extra butter and seriously put a whole scoop of butter on each cake. Then she would drown it in syrup…literally, it looked like pancake soup! She’s probably one of my favorite people ever, and I just thought it was hilarious because she ate so well the rest of the time, but IHOP was definitely a splurge 🙂

I have great memories of a pancake place in college as well. It was called the Original Pancake House, and they had the best pancakes I have ever had. mmm.

mmm IHOP I havent been there in SO liong, but when my grandfather was alive we would go there every sunday and he was this little old man and order the HUGE strawberry pancakes with whipped cream and eat 3/4 of them and take the rest home…every single sunday it was the same routine! haha
best memory of college, ohh there are So many I cannot pick just one! but I would have to say, moving in with my 4 best friends into our big house from living 2 years on campus…setting up the house, decorating, that was the best!

My favorite memory is one semester when I lived in the sorority house we had a hello kitty water cooler that we always filled with beer and chugged out of it. (I have photographic evidence of this) haha.

We used to love going to IHOP – it was cheap and really good.
My favorite college memory was justifying getting a brownie sundae from the ice cream shop in the bottom of the dorms by making myself walking down the 7 flights of stairs to get it and walking back up it with the ice cream.

Aww- fun college times! I was going to say ‘just chilling on our huge front porch with friends’, but your story reminded me of the diner we used to go to.
It was called Abe’s and was ALWAYS an adventure. It was in a ‘ghetto’ area of town and always had the most random mix- one table would have a man in a purple pimp suit & cane, the next tables sorority girls, then an old couple, cops at another, drunk bar guys, a number of sketchy looking people that you weren’t sure if they were homeless or not- you name it. Good times 🙂

I wish today was as pretty as yesterday! My favorite memories of college involve Dunkin’ Donuts. We’d go there all hours of the day/night to study and hang out. So much fun!

My favorite memory was when I was living with Caitlin when I went to CP and we went and got Taco Bell (our fav) and then we’d take it home sit on our separate couches (she always got the big couch and I got the small one) and would eat it while cracking each other up and our neighbors would come over and ask us what was so funny because they could hear us laughing super loud haha

I love IHOP but haven’t been in years, and I hear they do have really good coffee.
Glad your coconut butter turned out so well. It’d be great over some fudgesicle soft-serve. It would harden like Magic Shell.

I just tried that dessert and I couldn’t believe I waited so long to try this! how amazing! I have so many memories from college, but I remember on Sundays we would sit at the cafeteria from breakfast to lunch just watching people talking about stories from the night before. enjoy your sunday!
